BLUEBERRY-MINT MOJITOS
Turns a summertime classic even more delicious with the addition of fresh blueberries.

- Combine the blueberries and sugar in a small container. Lightly smash the blueberries with a cocktail muddler or wooden spoon.
- Bring the water to a boil in a small pot and pour over the blueberries and sugar. Stir to dissolve the sugar. Once the sugar is dissolved, add the mint leaves to the container and place in the fridge to cool down. After 10 minutes, strain the syrup through a fine mesh strainer and return the strained syrup to the fridge until you begin mixing the cocktail.
- Combine the blueberries, mint, rum and simple syrup in a medium-sized pitcher. Cut 3 of the limes in half and squeeze them into the pitcher. Use a cocktail muddler or the end of a wooden spoon to lightly muddle the blueberries and mint into the other ingredients. Gently stir to evenly incorporate everything.
- Cut the last lime into 4 wedges. Line 4 large glasses with ice cubes, then pour an even amount of the cocktail mixture into each glass. Float 1/2 cup club soda on top of each glass and gently stir with a long spoon. Garnish each glass with the wedges of lime. Serve chilled.
BLUEBERRY MOJITO

- Muddle together the mint and sugar in a cocktail shaker. Add the blueberries and lightly muddle. Add the rum, lime juice and some ice to the shaker and shake vigorously. Fill two tall glasses with ice, then pour 3 ounces club soda into each. Divide the rum mixture evenly between the glasses and stir gently. Garnish with a lime wedge, a few blueberries and a sprig of mint, and serve.
FRESH BLUEBERRY MOJITOS
Blueberry mojitos are simple to make and only require a few simple, fresh ingredients. If you cannot find fresh, sweet blueberries, thawed frozen berries work as a substitute.

- Add blueberries, lime juice, sugar and eight mint leaves to a cocktail shaker. Use the end of a wooden spoon or cocktail muddler to bash (or muddle) the mint into the lime juice and sugar. This releases oils from the mint, breaks up the blueberries and helps the sugar dissolve into the lime juice.
- Add rum, stir well, and then pour into a glass filled with ice, leaving about an inch of room then top with club soda. Serve with extra blueberries, mint leaves, and a lime slice.

BLUEBERRY LAVENDER MOJITO (MINT OPTIONAL)
I recently had my first lavender mojito at a restaurant, so I went looking for a recipe, and I found something similar. The one I had used a lavender and rosewater infused simple syrup but this blueberry version is also quite good. I like that it says 0-15 mint leaves, since I actually prefer my mojitos w/o mint (more like a Caipirinha). We skipped the seltzer, doubled the lime, and used cubes instead of crushed ice. - In a tall glass, muddle mint leaves, simple syrup or lavender syrup, lime juice, blueberries, and rum. Muddle just enough to combine flavors, being careful not to over-muddle.
- Fill glass with crushed ice. Top with club soda and stir.
- Garnish with 3 blueberries on a toothpick. Serve with a straw.

I got this recipe from my good friend, who has a blueberry field. She, in turn, got it from the Blueberry Council. I have not personally tried the recipe, but with blueberry season just around the corner, it will certainly be on the "to do" list!!

- In a tall 16-ounce glass, muddle mint leaves, lime juice and sugar.
- Add 2 tablespoons of the blueberries and mash until juicy.
- Fill the glass three-quarters with ice. Add lemonade until the glass is two-thirds full. Add splash of soda, light rum and remaining blueberries; stir.
- Slowly pour dark rum into the drink so it floats on top.
- Garnish with a sprig of mint and slice of lime; serve immediately.
