LEMON-BLUEBERRY POUND CAKE

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, cream the butter, cream cheese and sugar until blended. Add eggs and egg white, one at a time, beating well after each addition. Beat in lemon zest and vanilla., Toss blueberries with 2 tablespoons flour. In another bowl, mix the remaining flour with baking powder, baking soda and salt; add to creamed mixture alternately with yogurt, beating after each addition just until combined. Fold in blueberry mixture. , Transfer batter to prepared pan. Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to wire rack; cool completely., In a small bowl, mix confectioners' sugar and lemon juice until smooth. Drizzle over cake.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch Bundt pan.
- In a large bowl, stir together cake mix and sugar. Make a well in the center and pour in eggs, cream cheese, oil and vanilla. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in blueberries. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl, stir together cake mix, pudding mix and sugar. Make a well in the center and pour in water, oil, eggs and cream cheese. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Stir in the blueberries. Pour batter into prepared pan.
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
- Make Glaze: In a small bowl, combine confectioners' sugar with 2 tablespoons reserved juice from the blueberries. Drizzle over cooled cake.

i got this out of cooking light a few years back. it is my oldest sons first choice for a birthday cake! i have made it in a regular loaf pan with good results. i also double the batch to freeze for later.enjoy!!!

Steps:
- preheat oven to 350 degrees.
- beat 1rst 3 ingredients at medium speed till well blended (about 5 minutes).
- add eggs and egg white, 1 at a time, till each is well blended.
- save 2 tablespoons of flour and set aside.
- add remaining flour to batter with baking powder,soda, and salt.
- add yogurt and mix well.
- mix remaining flour with blueberries till coated.
- add blueberries and vanilla, mix by hand to incorporate berries without mashing.
- bake in a greased tube pan at 350 degrees for 70 miutes.
- cool for 10 minutes and remove from pan.
- in a small bowl mix lemon juice and powdered sugar till syrupy.
- drizzle over cake.

- 1. Preheat oven to 175C (155C fan-forced). Soften the extra 30g butter and use a small pastry brush to paint the inside of a bundt tin very thoroughly. Sprinkle in the extra flour and tap all over so it adheres to the buttered surface. Turn upside down and tap over sink or bin to remove excess. Place in the freezer for the time being.
- 2. Sift flour, baking powder and salt together into a bowl and set aside. Combine the butter, sugar and lemon zest in the bowl of a cake mixer fitted with the paddle attachment and beat on medium speed until well mixed. Add cream cheese (mixing it in when it is at room temperature ensures it will be soft; firmness would result in a lumpy cake) and beat until thoroughly combined. Add eggs, one at a time, and mix well, then add the sifted dry ingredients in three batches. Beat until just combined, making sure to scrape the bottom of the bowl regularly to ensure the batter is evenly mixed. Toss in the blueberries (if they have been frozen, mix a tablespoon of plain flour through to absorb some of the moisture) and fold in very gently with a rubber spatula.
- 3. Scrape the mixture into the prepared tin and place in the preheated oven for 50 to 55 minutes. A skewer inserted into the middle of the cake should come out clean when the cake is cooked.
- 4. Place on a cake rack for 15 minutes before inverting onto the rack or a plate to cool completely.
