I've tinkered and tinkered, and this is the very best blueberry cobbler recipe I've found. Cakey/biscuit topping with a slight crunch on top and ooey gooey delicious blueberries hidden on the bottom. It can also work with other fruit fillings. Works best with delicious fresh blueberries and is the perfect summer treat.... An amalgamation of mine and my grandmother's cobbler recipe.... I think it is the best! Serve plain or with whipped cream. Enjoy!

2 ½ cups fresh or frozen blueberries
1 teaspoon vanilla extract
½ lemon, juiced
1 cup white sugar, or to taste
½ teaspoon all-purpose flour
1 tablespoon butter, melted
1 ¾ cups all-purpose flour
4 teaspoons baking powder
6 tablespoons white sugar
5 tablespoons butter
1 cup milk
2 teaspoons sugar
1 pinch ground cinnamon

Steps:

  • Lightly grease an 8 inch square baking dish. Place the blueberries into the baking dish, and mix with vanilla and lemon juice. Sprinkle with 1 cup of sugar and 1/2 teaspoon of flour, then stir in the tablespoon of melted butter. Set aside.
  • In a medium bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Rub in the 5 tablespoons butter using your fingers, or cut in with a pastry blender until it is in small pieces. Make a well in the center, and quickly stir in the milk. Mix just until moistened. You should have a very thick batter, or very wet dough. You may need to add a splash more milk. Cover, and let batter rest for 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. A knife inserted into the topping should come out clean - of course there will be blueberry syrup on the knife. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

Steps:

  • Add flour, 1/2 cup sugar, salt, and baking powder to a mixing bowl; stir to combine.
  • Add in milk and butter; stir to combine.

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup sugar
3/4 cup milk
2 cups fresh blueberries
1/3 cup water
1/2 cup sugar

Steps:

  • Preheat oven to 350 degrees F.
  • Pour melted butter into a shallow 1 1/2 quart baking dish. In a mixing bowl combine flour, baking powder, salt, sugar and milk. Pour evenly over the butter. In a bowl combine berries, water and sugar. Spoon evenly over batter, but do not stir. Bake 40 to 45 minutes. Batter rises to become buttery top crust.

1 1/2 cup flour
1/2 teaspoon salt
5 tablespoons frozen butter, cubed
1/4 cup frozen shortening, cut into large chunks
5 tablespoons ice water
4 cups blueberries
4 tablespoons butter, diced
2 cups sugar

Steps:

  • Preheat oven to 450 degrees. Lightly grease an 8 x 8-inch baking pan.
  • In the work bowl of a food processor, combine the flour and salt. Quickly cut the butter and shortening into the dry mixture until the size of small peas. Dribble in the ice water a little at a time and process quickly to moisten the mixture until it starts to come together. This pastry can be made ahead of time and refrigerated between two sheets of waxed paper until ready to use.
  • Roll out the pastry into a large sheet, approximately 20 x 12. Lay into the prepared baking dish, gently tucking it into the corners and allowing the extra to hang over the sides.
  • Spread the blueberries evenly in the baking dish. Dot with the diced butter. Sprinkle with 1 1/2 cups of the sugar. Flip the overhanging pastry over the blueberries to make a top. If pieces break off, just set them on top. The cobbler should look rustic. Sprinkle the remaining 1/2 cup sugar over the pastry.
  • Place in preheated oven and immediately reduce heat to 425 degrees. Bake for 45 minutes, until dough is golden brown and berry juice bubbles up.
  • Serve with warm vanilla ice cream.

1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 sticks cold salted butter, cut into pieces
3/4 cup milk

Steps:

  • Preheat the oven to 425 degrees F.
  • For the blueberries: Place the blueberries in a large bowl and sprinkle in the sugar and lemon juice. Add the flour and stir to combine.
  • For the dough: In a separate bowl, combine the flour, sugar, baking powder and salt. Stir it around, then add the cold butter and use a pastry blender to cut the butter into the dry ingredients.
  • Whisk together the milk and egg in a small bowl, then drizzle it into the flour-butter mixture and stir until the dough just comes together. It should be lumpy and clumpy!
  • Pour the blueberries into a 9-by-13-inch baking dish and dot them with the butter, then tear off pinches of the dough and dot them all over the top. Sprinkle the top with extra sugar.
  • Cover lightly with foil and bake for 20 minutes, then remove the foil and bake until lightly browned, about 25 more minutes. Serve warm or at room temperature with a big scoop of vanilla ice cream.

1 cup dates, pitted
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup maple syrup
4 cups blueberries

Steps:

  • Combine first 5 ingredients, almonds through salt, in food processor and process until crumbly, not pasty. Set aside.
  • Combine blueberries and maple syrup.
  • Combine about 3/4 of the almond mixture into the blueberry mixture.
  • Put into serving bowl or pan and top with remaining almond mixture.

1 pint blueberries (fresh or frozen)
1 (14 ounce) can sweetened condensed milk (I prefer Eagle Brand)
2 teaspoons grated lemons, rind of
3/4 cup butter or 3/4 cup margarine (cold)
2 tablespoons butter or 2 tablespoons margarine (cold, in addition to above)
2 cups biscuit mix, divided (I prefer Jiffy)
1/2 cup brown sugar
1/2 cup chopped nuts (any will do, I prefer almonds)
vanilla ice cream (for topping) (optional)
blueberry sauce (for topping) (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Combine blueberries, condensed milk, and lemon peel in bowl.
  • In large bowl, cut 3/4 cup butter into 1 1/2 cups biscut mix until crumbly; add blueberry mixture.
  • Spread in greased 9-inch square baking pan.
  • In small bowl, combine remaining biscuit mix and brown sugar; cut in remaining butter until crumbly.
  • Add nuts, sprinkle over cobbler.
  • Bake 1 hour or until golden brown.
  • Serve warm with ice cream and blueberry sauce.

1 pint fresh blueberries (or frozen)
14 ounces sweetened condensed milk (you can use fat free)
2 teaspoons lemon zest
3/4 cup cold butter, plus
2 tablespoons cold butter
2 cups Bisquick, divided
1/2 cup brown sugar
1/2 cup nuts, chopped
vanilla ice cream
1 pint blueberries or 16 ounces frozen blueberries
1/2 cup sugar
1 tablespoon cornstarch
1/2 cup hot water
1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon

Steps:

  • Combine blueberries with sweetened condensed milk and lemon peel; set aside.
  • In a large bowl cut in 3/4 cups of butter into 1 1/2 cups of bisquick until crumbly. Stir in blueberry mixture and spread in the bottom of an 8 x 8 inch baking dish coated with nonstick cooking spray.
  • Cut remaining 2 tbsp of butter into remaining 1/2 cup of bisquik and 1/2 cup brown sugar until crumbly. Add nuts and then sprinkle mixture over top of cobbler.
  • Bake in preheated 325 degree oven for 1 hour and 10 minutes. Remove from oven and serve warm with ice cream and blueberry sauce.
  • FOR SAUCE:.
  • In a saucepan mix 1/2 cup of hot water with 1 tbsp cornstarch.
  • Whisk until all lumps are dissolved.
  • Add remaining ingredients and cook until thickened.
  • Serve warm over cobbler and ice cream.

This is a simple recipe that doesn't take more than a few minutes to prepare. The blueberries aren't too sweet, so you may want to add more sugar if you like super-sweet cobblers. I got the recipe for the crust somewhere, but i honestly don't remember where. I hope you enjoy this as much as my picky family did. The measurements are approximate for the filling, and i didn't use all of the crust mix, It rises some, so it's up to you whether you want to use it all

2 1/2 cups blueberries (I used fresh, though i'm sure frozen would work just as well)
1/3 cup sugar
1 tablespoon margarine
1 cup flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
1/2 cup evaporated milk
1/3 cup margarine (melted)

Steps:

  • Preheat oven to 325.
  • Grease a 9 inch cake pan with margarine or shortening (or wahtever you desire to cut down on clean up time). Put the blueberries in the cake pan, sprinkle with the 1/3 cup of sugar. Cut the TBS of margarine into small pieces and just dot the pieces on top of the blueberries. (you could also melt the margarine and toss the blueberries, sugar, and margarine together if you like).
  • In a bowl mix the flour, sugar, baking powder and salt. In a seperate bowl, melt margarine in microwave, add the egg and milk and mix well. Pour wet ingredients into the dry and mix until smooth. Pour desired amount of crust mix over the top of the blueberries. Bake at 325 for approximately 40 minutes until crust is done through and slightly golden.
