Provided by Erin Clarke / Well Plated

Categories     Breakfast

Time 40m

Number Of Ingredients 14

2/3 cup all-purpose flour
2/3 cup whole wheat flour
1/3 cup stone ground cornmeal (medium grind for a light, pleasant crunch)
1/3 cup old fashioned rolled oats
1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup buttermilk (at room temperature)
1/3 cup pure maple syrup

4 tablespoons unsalted butter (1/2 stick melted and cooled to room temperature)
1/4 cup unsweetened applesauce
3/4 cup blueberries (fresh or frozen; do not thaw)

Steps:

  • Place rack in center of oven and preheat to 400 degrees F. Spray a 12-cup regular sized muffin pan with cooking spray or line with paper muffin cups.
