HAWAIIAN PIE
Joelle had us at pina colada - we love any kind of dessert with those flavors. This yummy no-bake pie does not disappoint. It's super easy to prepare and will be great for summer cookouts. Serve it cold for a great dessert after eating BBQ.

Steps:
- 1. In a bowl mix pineapple and sour cream with dry pudding mix; mixing well. Add coconut (save a couple of tablespoonfuls for garnish), vanilla, and Cool Whip (save a couple of tablespoonfuls for garnish).
- 2. Pour mixture into pie crust. Spread remaining Cool Whip in a small design (I make a little circle on top for garnish). Sprinkle remaining coconut on top. Place in the fridge for a couple of hours to set up.
- 3. In the hot summer months sometimes I freeze this pie and eat frozen... just a delicious. Enjoy!
HAUPIA AND PURPLE SWEET POTATO PIE
Like auntie used to make when we were visiting--broke da mouth! (Very yummy and reminds me of home). This recipe has a shortbread crust topped with a smooth, sweet layer of purple potatoes, and a rich coconut cream. Serve cold.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Mix flour and 1/3 cup white sugar together in a large bowl. Rub in butter with your fingers until mixture is sandy. Press into the greased baking pan.
- Bake crust in the preheated oven until golden brown around the edges, about 10 minutes.
- Beat 1/2 cup butter and 1/2 cup white sugar in a bowl with an electric mixer until creamy. Beat in eggs one at a time. Mix in mashed sweet potatoes, milk, and vanilla extract until batter is the consistency of pancake batter. Pour over the crust.
- Bake in the preheated oven until sweet potato layer is firm, about 30 minutes.
- Whisk water, 1/2 cup white sugar, and cornstarch together in a small bowl until smooth.
- Pour coconut milk into a 5-quart saucepan. Bring to a simmer over low heat, about 5 minutes. Pour in water mixture, whisking constantly until coconut milk thickens, 3 to 5 minutes. Stir in shredded coconut; cook and stir until mixture thickens, about 5 minutes more.
- Pour coconut mixture over sweet potato layer. Refrigerate until firm, 4 hours to overnight.

BLUE HAWAIIAN HAPPY HOUR PIE

Steps:
- Spray 9-inch glass pie plate with cooking spray. In food processor, place cookies. Cover; process, using quick on-and-off motions, until fine crumbs form. Add melted butter. Cover; process until well blended. Press crumb mixture in bottom and up side of pie plate; set aside.
- In large saucepan, mix remaining ingredients except whipped cream with whisk. Cook over medium heat, stirring constantly with whisk, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat. Pour filling into crust. Cool 20 minutes.
- Press plastic wrap on filling to prevent tough layer from forming on top. Refrigerate until firm, about 4 hours.
- To serve, cut chilled pie into slices. Top with whipped cream. Store remaining pie covered in refrigerator.

TWO MINUTE HAWAIIAN PIE
This pie actually does just take a few minutes to prepare. I could have made one in the time it took to post this recipe. My Nephew's wife gave me this recipe years ago and I used to make it all of the time. It's really delicious. I forgot I had it until I started looking for something to post. I hope you will enjoy it.
