SWISS, BROCCOLI, AND SALMON PIE
This is my favorite savory salmon pie; impressive enough to serve guests but tastes like comfort-food. It's quite different from other salmon pies and even my non-salmon-eater-husband likes it. :-)

Steps:
- In a medium bowl mix celery, scallions, dill, pepper, mayo and 1/2 the swiss cheese. Set aside.
- Bake bottom pastry only, at 425* for about 10 minutes or until just barely lightly browned. Reduce oven temp to 375*.
- Flake half the salmon into lighlty browned pie shell. Layer the broccoli over the salmon then layer the sliced eggs over the broccoli. Pour 1/2 the mayo mixture over the eggs.
- Top with remaining salmon, then remaining mayo mixture, then reserved swiss cheese.
- Cover with top pastry and brush with egg wash. Bake at 375* for 30 minutes or until golden brown. This pie can be made ahead and frozen.

BROCCOLI SALMON QUICHE
I made this recipe up, because we eat a lot of salmon during the year. I also have a garden during the summer. My family likes this and it use up the leftover salmon. You can freeze this.

- Preheat oven to 350°F
- Prepare bottom of 9-inch deep dish by spraying with non-stick cooking spray. Line with pie pastry.
- Cover bottom of dish with broccoli flowerets, chunks of canned salmon, and sprinkle with cheese and chives; set aside. In medium bowl, beat eggs, whipping cream, cayenne, and dill until thoroughly combined. Bake in preheated oven for 1 hour, or until crust and eggs are lightly browned and quiche is puffy in center.

JEAN'S CRUSTLESS SALMON BROCCOLI QUICHE
This recipe comes from my mom-in-law's neighbor, Jean. I think it may fall into the "impossible pie" category. The original recipe called for Bisquick but I used The Master Mix (recipe #45055). Serve with a green salad for brunch, lunch or supper. Leftovers keep well in the fridge for several days.

Steps:
- Preheat oven to 400°F.
- Grease a 10-inch pie plate.
- In a frying pan, saute onion and broccoli in olive oil until slightly softened.
- In a large mixing bowl, beat together eggs, milk, Bisquick or Master Mix, dill weed, salt and pepper.
- Add salmon and cheese to egg mixture. Stir well.
- Add onions and broccoli to mixture. Stir well.
- Pour all into pie plate.
- Bake for 30 to 40 minutes or until a knife inserted into the quiche comes out clean. If the quiche is browning too quickly, cover with foil.

- Heat the oven to 425 degrees. In a small bowl, whisk 3 tablespoons sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside.
- Place the broccoli florets and 1 1/2-inch scallion segments on a sheet pan. Drizzle with 1 tablespoon olive oil and the remaining 1 tablespoon sesame oil. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper, toss well and roast for 5 minutes.
- While the broccoli and scallions roast, place the salmon fillets on a plate and pat dry with paper towels. Brush all over with olive oil and sprinkle with salt and pepper.
- Toss the broccoli and scallions and move to the edges of the pan, clearing spaces in the center for the salmon fillets. Place the salmon fillets, evenly spaced, on the center of the pan. Brush the fillets generously with the glaze.
- Return the pan to the oven and roast until the salmon is cooked through but still slightly rare in the center, about 12 minutes.
- Squeeze the lime over the broccoli and sprinkle with salt. Scatter the sliced scallions and sesame seeds over the salmon, and serve hot.
IMPOSSIBLE BROCCOLI PIE
This is delicious and very filling! This is the first recipe I made on my own, and has been a favourite of mine ever since! A classic that is guaranteed to be delicious.

- Thaw broccoli crowns in a 9" pie plate, layer with onions and then cheese.
- In a large bowl, combine eggs, milk, Bisquix and pepper, beat together well.
- Pour mixture over broccoli in a spiral motion (otherwise it may take too long to cook in the middle).
- Bake for 25-35 minutes at 400F (a knife poked into the middle should come out clean).

FISH AND BROCCOLI PIE
We eat this almost every week. Ommit the cheese for a lighter sauce. I use a blender to make the breadcrumbs. Serve with Lemon and Dill Potatoes - Recipe #159786 and peas.

Steps:
- Poach the fish in the milk for approximately 15 minutes or until cooked.
- Remove the fish from the liquid and flake into a baking dish reserving the liquid for the sauce.
- Boil the broccoli for 3 minutes, you don't want it too soft.
- Drain and stir into the fish.
- Mix a little milk or water into the cornflour and add to the reserved liquid.
- Cook until the sauce thickens, stirring constantly. Add more milk if too thick.
- Stir in the cheese until melted.
- Add salt and pepper to taste.
- Pour the sauce over the fish and broccoli.
- Cover with the breadcrumbs.
- Cook at 170c for 30 - 45 minutes or until the breadcrumbs are brown.
