Yield 2 cheese logs (1-1/4 cups).

Number Of Ingredients 8

1 package (8 ounces) cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup crumbled blue cheese
1 tablespoon butter
1-1/2 teaspoons curry powder
1/2 cup finely chopped pecans
2 tablespoons minced fresh parsley
Assorted crackers

Steps:

  • Beat cream cheese until smooth. Fold in cheddar and blue cheeses. Refrigerate, covered, at least 2 hours., In a small skillet, heat butter over medium heat. Add curry powder; saute 1-2 minutes. Stir in pecans; cook and stir 1 minute. Stir in parsley. Cool slightly. Roll cheese mixture into 2 logs, each about 5 in. long. Roll logs in pecan mixture; refrigerate. Serve with crackers.

BLUE CHEESE AND CHIVE BUTTER



Blue Cheese and Chive Butter image

Number Of Ingredients 5

2 sticks (1 cup) salted butter, softened
1/2 cup crumbled blue cheese
2 tablespoons chopped fresh chives
1/2 teaspoon red pepper flakes
Pinch ground black pepper

Steps:

  • Put the softened butter in the bowl of a stand mixer fitted with a paddle attachment. Whip the butter until it's fluffy. Add the blue cheese, chopped chives, red pepper flakes and ground pepper. Mix until totally combined, scraping the sides as needed.
  • Lay out a long piece of plastic wrap on top of a piece of aluminum foil and scoop the butter mixture in a long strip down the middle of it. Carefully pull one side of the plastic wrap and foil over the butter, squeezing it gently to form it into a log. Continue to roll the log of butter into a roll. When it's all rolled up, twist the ends (like a piece of candy) until they become very taut (this means the butter is pressing together inside the plastic and foil to form a cohesive roll). Place the roll of butter into the fridge so it will harden, at least 1 hour, or into the freezer if you need to speed along the process.

Grilled Filet with Blue Cheese Butter image

1 stick unsalted butter, slightly softened
1/4 cup crumbled Cabrales blue cheese
2 teaspoons finely chopped fresh thyme
Salt and freshly cracked black pepper
4 (1 1/2-inch thick) filet mignons
Canola oil, as needed
1 teaspoon coarsely cracked black pepper

Steps:

  • Preheat a grill to high heat.
  • Combine the butter, cheese, and thyme in a bowl and season with salt and pepper, to taste. Cover the bowl and refrigerate for 30 minutes.
  • Brush the steaks with some canola oil, then season them with salt and cracked black pepper. Grill until the meat chars on both sides and is cooked to a medium-rare doneness. Transfer the steaks to a platter, top them with some of the butter and let them rest for 5 minutes before serving.

Blue Cheese Cheese Log image

One of the best things about cheese it that it can easily be molded into log form -- and foods shaped like logs always mean that you're in for a good time. This version balances the nuttiness of Swiss and the pungency of blue with sweet dates and smoky bacon. If logs aren't your thing, you can always roll this into a ball; if you're absolutely no fun whatsoever, just serve it in a dip bowl.

5 slices thick-cut bacon
1/2 medium onion, chopped finely
Kosher salt
16 ounces cream cheese
1 cup crumbled blue cheese, preferably Stilton
1 cup shredded Swiss cheese
1/2 cup chopped dates
2 tablespoons port wine
3/4 cup finely chopped pecans
Serving suggestions: crackers and mini toasts

Steps:

  • Cut the bacon into 1/2-inch pieces and place in a cold skillet with 1/2 cup water. Turn the heat to high and cook, stirring occasionally, until the water has evaporated and the bacon bits are crispy. Pour the contents of the skillet into a bowl, reserving 2 tablespoons bacon grease in the skillet. Reduce the heat to medium, then add the onion and a pinch of salt and cook, stirring occasionally, until deep golden brown, 7 to 10 minutes. Turn off the heat and allow to cool completely.
  • Combine the cream cheese, blue cheese, Swiss cheese, chopped dates, port wine and onions in a food processor and pulse until smooth.
  • Lay two 18-inch pieces of plastic wrap side by side on the counter, overlapping by about 1 inch. Use a rubber spatula to scoop the cheese mixture into the center. Wet your hands slightly and shape into a rough log, then wrap firmly in plastic and roll a bit to firm up the shape. Twist the ends tightly closed and place in the refrigerator for at least 30 minutes.
  • Meanwhile, return the bacon and grease to the skillet over medium-low heat. Add the pecans and cook, stirring, until they become fragrant, then stir in a pinch of salt and remove from heat. Let cool completely.
  • Transfer the bacon/pecan mixture to a plate. Unwrap the cheese log and roll it in the bacon/pecan mixture to coat, pressing well to make the coating stick. Serve with crackers and mini toasts.

3 tablespoons white-wine vinegar
2 tablespoons dry white wine
1/3 cup heavy cream
Salt to taste, if desired
8 tablespoons butter, cut into 12 pieces

Steps:

  • Heat 1 tablespoon of butter in a saucepan and add the shallots. Cook briefly, stirring, and add the vinegar and wine. Cook until the liquid is almost totally reduced.
  • Add the heavy cream and salt and bring to the boil. Add the pieces of butter, a few at a time, stirring rapidly with a wire whisk.

This recipe is a holiday MUST! My mom has been making this for several years now, and it is TO DIE FOR! It's from Sept. 2000 Southern Living. The recipe makes 4 logs, so you almost have to serve 2 at a time...THEY ARE THAT GOOD! Then you can have 2 in the freezer for unexpected guests! Enjoy!

Number Of Ingredients 8

2 (8 ounce) packages cream cheese, softened
1 (8 ounce) package sharp cheddar cheese (get a block and cut it up into small pieces)
2 (4 ounce) packages blue cheese, crumbled
1/2 small onion, diced
1 1/2 tablespoons Worcestershire sauce
1/2 teaspoon crushed red pepper flakes
1 1/2 cups pecans, toasted and finely chopped, divided
1 1/2 cups fresh parsley, finely chopped, divided

Steps:

  • Place first 6 ingredients in food processor. Pulse 1-2 minutes. Scraping down sides twice.
  • Mix together cheese mixture, 1 cup of pecans and 1/2 cup parsley. Cover and chill for 1 hour.
  • Shape cheese mixture into 4 7"long logs using saran wrap or wax paper.
  • Combine remaining pecans and parsley on work space. Roll logs in pecan parsley mixture. Cover and chill. Serve with crackers!

4 tablespoons (1/2 stick) chilled butter
3 garlic cloves, chopped
1 large shallot, chopped
1 tablespoon chopped fresh thyme
3/4 cup low-salt beef broth
1/2 cup dry red wine
1/2 cup coarsely crumbled Maytag blue cheese (about 2 ounces)
1/4 cup panko (Japanese breadcrumbs)*
1 tablespoon chopped fresh parsley
4 1-inch-thick filet mignon steaks (each 6 to 8 ounces)

Steps:

  • Melt 1 tablespoon butter in heavy medium skillet over medium-high heat. Add garlic, shallot, and thyme. Sauté until shallot is tender, about 5 minutes. Add broth and wine. Boil until sauce is reduced to 1/2 cup, about 12 minutes. Set sauce aside.
  • Blend cheese, panko, and parsley in small bowl to coat cheese evenly with panko. (Sauce and cheese mixture can be made 1 day ahead. Cover separately and chill.)
  • Preheat broiler. Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to rimmed baking sheet; reserve skillet. Press cheese mixture onto top of steaks, dividing equally. Broil until cheese browns, about 2 minutes. Transfer steaks to plates.
  • Pour sauce into reserved skillet. Bring to boil, scraping up browned bits. Boil 2 minutes. Whisk in remaining 1 tablespoon butter. Season with salt and pepper. Spoon sauce around steaks and serve.
