Homemade Blue Cheese Dressing (Better Than Store-Bought) image

This easy homemade blue cheese dressing is extra creamy and perfect for tossing with salad or used as a dipping sauce. Depending on what you plan to use the blue cheese dressing for, you might consider adding a little milk or water. Without it, the dressing is thick, which makes it perfect for dipping. If you want it to be pourable like a salad dressing, a splash of milk or water is the key.

Number Of Ingredients 8

1/4 cup sour cream
1/4 cup mayonnaise, try our homemade mayonnaise recipe
2 ounces crumbled blue cheese
1 tablespoon minced parsley
1 tablespoon fresh lemon juice, optional
Pinch fine sea salt
Pinch fresh ground pepper
Milk, buttermilk or water to thin out the dressing, optional

Steps:

  • Combine the sour cream, mayonnaise, blue cheese, parsley, lemon juice, salt, and pepper in a small bowl and stir until well blended and creamy.
  • Use the back of a spoon to press some of the blue cheese crumbles into the sauce for even more flavor. The dressing will be thick, which makes it perfect for dips.
  • For a pourable dressing that's perfect for salads, stir in a tablespoon or two of milk, buttermilk or water. Taste then adjust with additional lemon juice, salt, and pepper.
  • Keep, tightly covered, in the refrigerator for one week.

1/2 cup sour cream
1/4 cup cider vinegar
4 teaspoons sugar
1/2 teaspoon ground mustard

1 cup (4 ounces) crumbled blue cheese

Steps:

  • In a bowl, combine the first seven ingredients. Stir in the blue cheese. Cover and chill at least 2 hours. Store in the refrigerator.

Grilled Romaine Salad with Blue Cheese and Basil image

"Basil is delicious but notoriously fickle," Alex says. To keep it looking and tasting its best, make sure it stays dry until just before you use it.

1 tablespoon fresh lemon juice
1 tablespoon sherry vinegar
1 teaspoon capers
Kosher salt
6 cloves garlic
1 tablespoon Worcestershire sauce
1/2 teaspoon hot sauce (such as Tabasco)
6 oil-packed anchovy fillets, plus 1/2 teaspoon of the oil
1/2 to 3/4 cup extra-virgin olive oil
3 romaine lettuce hearts, halved lengthwise
Extra-virgin olive oil, for tossing
Kosher salt
1 lemon, halved
20 fresh basil leaves
1 cup crumbled blue cheese

Steps:

  • Preheat a grill to medium. Make the dressing: In a blender, combine the lemon juice, vinegar, capers, 1 teaspoon salt and the garlic. Blend until smooth. Add the Worcestershire sauce, hot sauce, anchovies and their oil and 1/2 cup olive oil; blend until smooth. Taste for seasoning. Blend in up to 1/4 cup more olive oil, if needed. Set the dressing aside.
  • Make the salad: In a large bowl, toss 4 of the romaine halves with a little olive oil and season with salt. Put them in a single layer on the grill and cook 3 minutes per side (the romaine should feel slightly warm and tender). Transfer to a large platter. Spoon a little dressing on each.
  • Finely chop the rest of the romaine and add it to a medium bowl. Add the remaining dressing, a touch of lemon juice and the basil leaves. Toss to coat.
  • Top the grilled romaine with the romaine-basil mixture. Garnish with the blue cheese and serve immediately.

6 slices firm white sandwich bread
1/4 lb sliced bacon (about 5 slices)
6 tablespoons olive oil
1/4 cup finely chopped shallot
3 tablespoons Sherry vinegar
4 assorted medium heirloom tomatoes (2 lb total), cut into 1/4- to 1/3-inch-thick slices
30 small fresh basil leaves
1 1/2 oz blue cheese (preferably Maytag Blue), crumbled, at room temperature
Garnish: very small heirloom cherry or currant tomatoes
Special Equipment
a 3-inch round cookie cutter

Steps:

  • Cut 1 round from each bread slice with cookie cutter.
  • Cook bacon in a 10-inch heavy skillet over moderate heat until crisp, then transfer to paper towels to drain. Pour off bacon fat from skillet and reserve fat (do not clean skillet).
  • Heat 1 1/2 tablespoons oil in skillet over moderate heat until hot but not smoking, then toast 3 bread rounds, turning over once, until golden brown, about 3 minutes total. Transfer toasts to a rack to cool and season with salt and pepper. Toast remaining 3 bread rounds in 1 1/2 tablespoons more oil in same manner.
  • Cook shallot in 2 tablespoons reserved bacon fat and remaining 3 tablespoons oil in a small heavy saucepan over moderate heat, stirring, until softened, about 2 minutes. Add vinegar and simmer, whisking, until emulsified, about 1 minute. Season dressing with salt and pepper and keep warm, covered.
  • Crumble bacon. Arrange bread rounds on 6 plates and divide tomato slices among them, stacking slices and sprinkling some basil and bacon between slices. Sprinkle cheese and remaining basil and bacon over and around tomatoes. Spoon some of warm bacon dressing over and around tomatoes and season with salt and pepper.
