Game day calls for something bold. I top potato chips with tomatoes, bacon and tangy blue cheese. I make two big pans, and they always disappear. -Bonnie Hawkins, Elkhorn, Wisconsin

1 package (8-1/2 ounces) kettle-cooked potato chips
2 medium tomatoes, seeded and chopped
8 bacon strips, cooked and crumbled
6 green onions, chopped
1 cup crumbled blue cheese

Steps:

  • Preheat broiler. In a 15x10x1-in. baking pan, arrange potato chips in an even layer. Top with remaining ingredients., Broil 4-5 in. from heat until cheese begins to melt, 2-3 minutes. Serve immediately.

1/2 cup butter or 1/2 cup margarine, softened
1 (4 ounce) package crumbled blue cheese, softened
1/2 cup finely chopped pecans or 1/2 cup walnuts
1 French baguette, sliced
fresh parsley

Steps:

  • Stir together softened butter and blue cheese until blended; stir in chopped nuts. Set mixture aside.
  • Place baguette slices in a single layer on baking sheets.
  • Bake at 350° for 3 to 5 minutes. Turn slices, and spread evenly with blue cheese mixture. Bake 5 more minutes. Garnish wit parsley, if desired.
  • Serve crisps immediately.

From "Soup to Nuts" which is a cookbook I bought at a library book sale some time ago. At least 4 hours chilling time is required before baking.

Number Of Ingredients 6

8 ounces blue cheese
4 ounces butter, unsalted, softened
1 egg
1 teaspoon ground pepper
1/4 cup pecans, finely chopped
1 3/4 cups flour

Steps:

  • Cream the bleu cheese and butter in a bowl.
  • Add the egg, pepper, pecans and flour; mix well.
  • Shape into two 1 1/2 inch diameter rolls and wrap in waxed paper.
  • Chill 4 hours to overnight.
  • Slice 1/4 inch thick rounds and place on an ungreased baking sheet.
  • Bake at 425 degrees F. for 10 minutes or until light brown.
