BLT SALAD WITH AVOCADO DRESSING
Add some fun to lunchtime with a BLT in the form of a healthy salad! Easy, 5-minute recipe for a creamy avocado dressing included!

Steps:
- Prepare the salad: In a large serving bowl, toss all salad ingredients until combined. Set aside.
- Place all dressing ingredients in a food processor. Pulse several times until dressing is smooth and creamy, scraping down sides a few times.
- Place salad on individual serving plates and drizzle with avocado dressing. Serve immediately.
BLT SALAD WITH AVOCADO
Steps:
- In a medium bowl, combine the diced tomatoes with the mayonnaise, and season with a little salt and fresh cracked pepper. Set aside for about 10 minutes to let the tomatoes release their juices as this will be the "dressing" to your salad.
- To serve, divide the chopped lettuce and tomatoes onto 4 plates, then top each with diced avocado, chopped bacon and tomato mixture.

I love Tomatoes and I love Avacado's. This salad is delicious and best when Tomatoes are in Season. I am always looking for recipes to use my bumper crop of Tomatoes in the Summer and this one is so easy to pull together. You could add some Grilled Chicken for a main course.

- Put bacon in a large non-stick skillet and saute over low heat, turning often, until crisp. Transfer to papertowels to cool, then crumble or chop bacon.
- In a medium bowl, combine chopped tomatoes with 1/4 cup mayonnaise, 1/8 tsp salt and a pinch of pepper. Stir to combine and set aside for 10 minutes allowing the tomatoes to release their juiciness. This scrumptious and easy concoction is your dressing.
- To serve, divide the lettuce among 4 plates then top each with 1/4 of the tomato "dressing" then divide the avocado and bacon evenly among the plates. If you're feeling less fancy, toss everything together in a large salad bowl and serve.
