BLT BAKED BRIE

You know that feeling when all you want is cheese, but you *should* eat salad? Have we got the recipe for you.

1 lb round boule bread
4 tablespoons olive oil, divided
3/4 teaspoon italian seasoning
6 inches round wheel brie cheese (17 ounce)
1/2 cup balsamic vinegar
1 tablespoon sugar
2 tomatoes, diced
2 garlic cloves, minced
2 tablespoons diced basil
3 cups shredded romaine lettuce
8 sliced bacon, cooked and crumbled
3 scallions, green parts only, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Using a pointed serrated knife or other sharp knife, cut the top of the bread off, using the Brie wheel as a guide for the size of the circle.
  • Cut the top of the bread into rough cubes and place on a baking sheet. Pull more bread out of the center where the cheese wheel will be placed. Tear the bread into chunks and place on the baking sheet with the other cubes. Drizzle the cubed bread with 2 tablespoons olive oil and season with italian seasoning, salt and pepper. Toss to combine, then push to one side of the baking sheet, making room for the boule.
  • Carefully cut the skin off the top of the cheese, then nestle the cheese in the center of the boule. Place the boule on the baking sheet with the cubed bread and bake until cubes are toasted and cheese is melted, about 15 minutes.
  • In a small saucepan over medium heat, combine balsamic vinegar and sugar. Bring to a simmer and reduce by half to make a syrup. Remove from heat and let cool slightly.
  • In a medium bowl, combine the tomatoes, 2 tablespoons olive oil, garlic, basil, salt and pepper.
  • To finish, top the melted cheese with shredded lettuce. Use a slotted spoon and top the lettuce with the tomato mixture, then top with the chopped bacon. Drizzle over the balsamic reduction and sprinkle over scallions for garnish.

1/4 cup mayonnaise
5 slices bread, toasted
4 slices process American cheese
12 bacon strips, cooked and crumbled
2 tablespoons butter
2 tablespoons all-purpose flour

1/8 teaspoon pepper
1 cup 2% milk
4 large eggs
1 medium tomato, halved and sliced
1/2 cup shredded cheddar cheese
2 green onions, thinly sliced
Shredded lettuce

Steps:

  • Preheat oven to 325°. Spread mayonnaise on 1 side of each slice of toast and cut into small pieces. Arrange toast, mayonnaise side up, in a greased 8-in. square baking dish. Top with cheese slices and bacon., In a small saucepan, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, 2 minutes. Pour over bacon., In a large skillet, fry eggs over medium heat until they reach desired doneness; place over bacon. Top with tomato slices; sprinkle with cheddar cheese and onions. Bake, uncovered, 10 minutes. Cut in squares; serve with lettuce.

1 small onion, cut into thin wedges
2 teaspoons butter or 2 teaspoons margarine
1/3 cup tomato chutney or 1/3 cup mango chutney
1/2 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/8 teaspoon crushed red pepper flakes
8 ounces round brie cheese (about 4 inches in diameter)
assorted crackers or French bread, slices

Steps:

  • For caramelized onions, cook onion in hot butter or margarine in a small saucepan, covered, over low heat about 15 minutes or until tender and golden, stirring occasionally.
  • Meanwhile, stir together tomato preserves or mango chutney (cut up any large pieces of chutney), rosemary, and crushed red pepper in a small bowl.
  • Cut off a thin slice from the top of the Brie to remove the rind; discard.
  • Place the Brie in an ungreased 9-inch pie plate.
  • Top with tomato or chutney mixture, then with caramelized onions.
  • Bake, uncovered, in a 325F oven about 10 to 12 minutes or until Brie is softened and warmed but not runny.
  • Serve with breadsticks, crackers, or bread slices.

Different from most, this baked brie recipe is truly outstanding and never fails to get rave reviews. It is so good it is usually the focal point of our holiday buffet table.

8 ounces brie round
1 (8 ounce) can crescent roll dough
1/4 cup butter
1/2 cup brown sugar, approximately
1/2 cup sliced almonds, approximately

Steps:

  • Preheat oven to 375.
  • Unroll the crescent rolls leaving it in one continuous sheet of dough.
  • Wrap the wheel of brie in the crescent roll dough and seal the joining edges.
  • Place on lightly greased baking sheet and bake for 20 minutes.
  • While the brie is baking, melt butter in small saucepan and add enough brown sugar to make a paste.
  • Remove brie from oven and pour brown sugar paste onto the top.
  • Sprinkle with sliced almonds.
  • Return to oven and bake an additional 10 minutes.
  • Remove from oven and place on serving platter.
  • Let sit for 15 minutes before serving with a variety of crackers.

This is a fancy food that is not so hard to make. I used to serve this when i waitressed at fancy parties and now I serve it in my home. You can prepare this ahead to make life easy.

1 package brie round
1 sheet frozen puff pastry (I like Pepridge Farms)
2 teaspoons apricot preserves or 2 teaspoons peach preserves
1/4 cup almonds
1 tablespoon butter
2 tablespoons brown sugar
1 dash cinnamon
1 dash nutmeg
1 egg

Steps:

  • Take out the pastry to defrost, this will be the most time consuming step.
  • Once it is defrosted, roll the dough out to more of a round shape.
  • I do this right on the cookie sheet that I am going to cook it on.
  • I also like to have a layer of parchment paper so that it won't stick later.
  • Preheat the oven to 400.
  • Once the dough is rolled out, spread the preserves lightly on the entire surface.
  • You may not use all the preserves, it should be just a thin coating.
  • Cut the rind off the top of the brie only.
  • Place the brie in the center of the pastry.
  • Use a knife to break the almonds.
  • In a pan heat them with the butter for 3-5 minutes, stirring constantly.
  • Layer the brown sugar on top of the brie.
  • Place the nuts on top and finish off with the cinnamon and nutmeg.
  • Fold the pastry up around the brie, not pulling to make holes.
  • Squeeze the pastry together, using wet hands or extra preserves to help it stick.
  • Beat one egg with a little water to make an egg wash.
  • Brush the egg onto the pastry all over.
  • Place the brie in the oven for 20 minutes.
  • Check on it at this time, some ovens need a few extra minutes to give it a nice golden color.
  • Serve with crackers or without.
  • I have used this as a stand in for cheese and crackers and as a side dish for beef stew, and both times every bite disapeared.

1 large onion, chopped fine
2 tablespoons garlic, minced
8 ounces brie cheese, rind trimmed, cheese cubed
1 (8 ounce) package cream cheese, cubed
3/4 cup sour cream
2 teaspoons fresh lemon juice
2 teaspoons brown sugar
1 teaspoon Worcestershire sauce
28 ounces round sourdough loaf

Steps:

  • Preheat oven to 400 degrees F.
  • In small skillet, melt butter over medium heat.
  • Add onion & garlic. Saute until onion is golden brown, then set aside.
  • Microwave Brie & cream cheese in large bowl just until melted.
  • Whisk in onion mixture, sour cream & remaining ingredients [except for the loaf of bread!].
  • Season to taste with salt & pepper.
  • Cut off top of bread loaf, & scoop out center, leaving 3/4" thick shell of bread.
  • Spoon in cheese mixture.
  • Cover with bread lid, & wrap in foil.
  • Bake cheese-filled loaf until filling bubbles, about 1 hour.
  • Unwrap & place on platter.
  • Remove bread lid, & sprinkle sheese with paprika.
  • Serve with crackers and/or vegetables [broccoli/cauliflower florets, carrot & bell pepper sticks, etc.
