SPICY GARLIC & DILL PICKLED BEANS RECIPE



Spicy Garlic & Dill Pickled Beans Recipe image

4½ lbs. green beans, washed, trimmed and cut into jar-length pieces
3 Tbsp. pickling salt
3 cups water
3 cups white vinegar
6 cloves of garlic
1½ tsp. dried chilli flakes (divided) OR 6 fresh or dried chilli peppers
6 fresh heads of dill seed

Steps:

  • Prepare your canner and jars.
  • Wash and trim vine ends off beans. Remove strings from string bean varieties. Cut beans into jar-length pieces, being sure to leave enough room for a ½ inch of headspace between the top of the beans and the top of the jar.
  • In a saucepan, bring salt, water and vinegar to a boil over medium high heat. Heat, stirring until salt has completely dissolved.
  • Remove jars from the canner and place one clove of garlic, ¼ teaspoon of dried chilli flakes OR one whole chilli pepper and one head of dill in each hot jar.
  • Pack each jar full of beans until you can't pack any more in. Then, cover with hot vinegar brine, leaving a ½ inch of headspace at the top.
  • Jostle jars gently to allow any trapped air bubbles to escape. Wipe rims, place lids on top and screw bands down to fingertip tight.
  • Process jars in a boiling hot water bath for 10 minutes. Then remove canner lid and wait another five minutes before removing jars. Allow to cool completely before storing in a cool dark place.

1 tablespoon olive oil
1 large onion, chopped
2 celery ribs, chopped
1 large carrot, finely chopped
1 poblano pepper, seeded and chopped
3 garlic cloves, minced
1 carton (32 ounces) reduced-sodium chicken broth
1 can (28 ounces) crushed tomatoes
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
1/4 cup tomato paste
2 cans (15 ounces each) cannellini beans, rinsed and drained
1/4 cup vodka
2 tablespoons Worcestershire sauce
1/2 teaspoon sugar
2 tablespoons lemon juice
1 tablespoon prepared horseradish
1/2 teaspoon pepper
Minced fresh parsley, celery ribs, lemon wedges and hot pepper sauce, optional

Steps:

  • In a Dutch oven, heat oil over medium-high heat. Add onion, celery, carrot and poblano pepper; cook and stir 4-5 minutes or until crisp-tender. Add garlic; cook 1 minute longer., Stir in broth, tomatoes and tomato paste. Bring to a boil. Reduce heat; simmer, covered, 15 minutes. Add beans, vodka, Worcestershire sauce and sugar; return to a boil. Reduce heat; simmer, uncovered, 25-30 minutes or until vegetables are tender, stirring occasionally., Stir in lemon juice, horseradish and pepper. If desired, sprinkle servings with parsley and serve with celery ribs, lemon wedges and pepper sauce.

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 tablespoon extra-virgin olive oil
5 large portobello mushrooms, diced
1 large yellow onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 banana pepper, seeded and diced
3 cloves garlic, minced
2 (28 ounce) cans crushed tomatoes
1 (16 ounce) can fire-roasted diced tomatoes
6 ounces bottled Bloody Mary mix
½ (6 ounce) can tomato paste
½ tablespoon chili powder
2 teaspoons salt
2 teaspoons dried oregano
1 teaspoon white sugar
1 teaspoon ground black pepper
1 ½ teaspoons ground cumin
¼ teaspoon cayenne pepper

Steps:

  • Combine black beans, kidney beans, and pinto beans in a large bowl and cover with fresh water; soak for at least 15 minutes.
  • Heat olive oil in a large pot over medium-low heat. Add mushrooms, onion, bell peppers, and banana pepper. Cook until they sweat their juices and are slightly tender, 5 to 7 minutes. Add garlic; cook 2 to 3 minutes more.
  • Drain beans and add to the pot with the vegetables. Add crushed tomatoes, diced tomatoes, Bloody Mary mix, and tomato paste. Add chili powder, salt, oregano, sugar, black pepper, cumin, and cayenne pepper.
  • Simmer over medium-low to medium heat, uncovered, until as thick as desired, about 1 1/2 hours.

1 teaspoon salt
1 teaspoon celery seed
1/2 teaspoon dill seed
1/2 cup sugar
1/2 cup apple cider vinegar
1/2 cup water
1/2 cup vodka (pepper or citrus)
1 tablespoon grated fresh horseradish
1 lemon, just the zest cut in strips
6 garlic cloves, left whole
1 teaspoon peppercorn
2 jalapenos, sliced lengthwise into quarters
1 1/2 lbs green beans, washed n trimmed to fit into wide mouth pint jars
1/2 large sweet onion, cut into 1/2 inch slices

Steps:

  • Bring a large pot of water with the 1 teaspoon salt to a boil over medium heat. Add the beans and onion slices. Cook until the beans begin to turn bright green and are just tender, about 3 to 4 minutes. Remove from heat and drain. Rinse and drain well.
  • In a small saucepan, over high heat, bring the first 7 ingredients to a boil, then turn off the heat, stirring until dissolved. Remove from heat.
  • Distribute the grated fresh horseradish, lemon zest, garlic cloves, whole peppercorns, jalapenos slices among the jars.
  • Pack beans and onions in sterilized jars then cover with the vinegar mixture.
  • Fill to within 1 inch of the top. The beans should be covered and there should still be 1/2 inch of airspace left in the top of each jar.
  • Put the lids and rings on.
  • Put the lids on each jar and seal them by putting a ring on and screwing it down snugly (but not with all your might, just "snug").
  • Using the jar tongs, put the pint jars in the canner and keep them covered with at least 1 inch of water. Keep the water boiling.
  • Boil them for.
  • 5 minutes for 0-1,000 ft.,.
  • 10 minutes 1,001-6,000 ft.,.
  • 15 minutes above 6,000 ft.
  • Lift the jars out of the water and let them cool without touching or bumping them in a draft-free place overnight.
  • Then remove the rings if you like. Once the jars are cool, you can check that they are sealed verifying that the lid has been sucked down. Just press in the center, gently, with your finger. If it pops up and down (often making a popping sound), it is not sealed. If you put the jar in the refrigerator right away, you can still use it.
  • Give it a weeks time for the seasonings to be absorbed into the pickled beans.
  • Process in a hot water bath, remove and cool in a draft free spot for 24 hours.
  • You can also put them in sterilized jars and refrigerate instead of doing the canning process. Let flavors meld for 1 week. Just keep under refrigeration and eat within 1 month.

6 pounds tomatoes, heirloom preferred
2 cloves garlic, peeled
1/4 cup onion
1 jalapeno, seeded
1 tablespoon olive oil
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 tablespoons extra-hot horseradish
4 teaspoons celery salt
2 teaspoons dry mustard
1 teaspoon white pepper
2 teaspoons Worcestershire sauce
4 teaspoons pickled vegetable juice
Hot Pickled Green Beans, for garnish, recipe follows
Ice, for serving
12 ounces vodka (2 ounces per cocktail)
1 1/2 cups water
2 teaspoons sea salt, divided
1 tablespoon agave syrup
2 cups cider vinegar
1 tablespoon fresh lime juice, plus 1 lime, very thinly sliced
2 teaspoons whole black peppercorns
1 red chile, sliced in 8 long strips *see Cook's Note
6 cloves garlic, peeled, plus 2 tablespoons minced
1 1/2 pounds string beans, trimmed

Steps:

  • Preheat the oven to 350 degrees F.
  • Wash and dry the tomatoes and remove the stems. Put the tomatoes, garlic, onions and jalapeno in a large glass baking dish (9 by 13-inch). Drizzle the vegetables with olive oil and sprinkle with salt and pepper. Bake until just starting to brown, about 45 to 60 minutes. Remove from the oven, let cool and put through a food mill to remove the seeds and skin. Add the mixture to a medium bowl and puree with stick blender. Pour into a large glass container and refrigerate. When cool, add the seasonings and the pickled vegetable juice and stir well.
  • For service, add a few pickled green beans to each glass, fill with ice, and add 2 ounces vodka. Pour in the prepared tomato juice, stir and serve immediately.
  • *Cook's Note: Seeds-in for hot, seeds-out for medium-hot. If you cannot find a red chile, substitute 2 jalapenos. A red chile is a ripened jalapeno.
  • In a small saucepan, over high heat, bring the water to a boil, then turn off the heat and add 1 teaspoon salt and the agave, stirring until dissolved. Remove from heat and let cool.
  • In a glass bowl, add the vinegar, lime juice, lime slices, peppercorns, chile peppers, and whole and minced garlic. Stir in the cooled salt-agave water mixture.
  • Wash and trim the green beans. Bring a large pot of water to a boil over medium heat. Stir in the remaining 1 teaspoon of salt, then add the beans. Cook until the beans begin to turn bright green and are just tender, about 3 to 4 minutes. Remove from heat and drain. Rinse immediately with cold water and put them in an ice bath for 10 minutes. Drain well.
  • If you are canning, prepare the jar(s) according to processing directions, add the beans and then cover with the vinegar chile pepper mixture. Process in a canning pot for 3 minutes, remove and cool.
  • You can also put them in sterilized jars and refrigerate instead of doing the canning process. Just keep under refrigeration and eat within 1 month. Whichever method suits you best, allow these to marinate for 48 hours before eating.

2 lbs green beans, bush (round slim bean not flat)
2 1/2 cups vinegar
2 1/2 cups water
1/4 cup canning salt
1 cayenne pepper (per jar) or 1 jalapeno pepper, with seeds no stems (per jar)
4 garlic cloves, peeled
4 heads fresh dill
2 canning jars, one quart (sterilized)

Steps:

  • Trim ends of green beans. Set lids of jars to boil in water in a small pan. Combine vinegar and water and salt in a large saucepot. Bring to a boil.
  • Pack beans lengthwise into hot jars, Add 1/4 teaspoon cayenne pepper, or the jalapenos slices, 2 cloves garlic and 2 heads of dill to each quart.
  • Ladle the boiling vinegar solution over beans. leaving 1/4 inch headspace. Place caps (still hot from the boiling water) on jars. Invert jars till cool.
  • You can place them in a hot water bath for 10 minutes, if desired. Store in a cool dry place for 4-6 weeks before opening.
  • After opening keep refrigerated. These are delicious! and non FAT!

These snappy, spicy, garlicky beans are tasty on a relish tray, nestled alongside a hot dog, or used as a stirrer for a Bloody Mary. A blend of crushed red pepper and cayenne creates a well-rounded heat.

2 cups apple cider vinegar
2 cups water
2 tablespoons pickling salt
6 cloves garlic, crushed
3 teaspoons dill seed
1 ½ teaspoons crushed red pepper
¾ teaspoon cayenne pepper
2 pounds fresh green beans, trimmed

Steps:

  • Submerge 3 pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine vinegar, water, and pickling salt in a saucepan and bring to a boil.
  • Working with one jar at a time, remove empty jars from canning pot and add 1/3 of crushed red and cayenne peppers to each. Pack green beans into jars, leaving 1/2 inch for headspace.
  • Slowly pour hot brine over beans, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Slip in additional beans if space allows; check headspace again and add more brine if necessary to bring to 1/2 inch from top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.
