SHERRY COBBLER

Sherry Cobbler image

Chill down with this old-school, low-alcohol sipper. The Sherry Cobbler is a classic, delicious alternative to the Mint Julep.

Provided by David Wondrich

Time 3m

Number Of Ingredients 4

3 ounces dry amontillado sherry
1/4 ounce simple syrup
1 orange half-wheel
Garnish: orange wheel

Steps:

  • Add the sherry, simple syrup, and orange half-wheel to a cocktail shaker and fill with ice. (Note: If using a sweeter sherry, reduce the amount of simple syrup.)
  • Shake brutally (this will muddle the orange), then strain into a highball glass filled with fresh crushed ice.
  • Garnish the drink with an additional orange wheel.

PEACH-ORANGE SHERRY GRANITAS

Peach-Orange Sherry Granitas image

Granitas are the ultimate easy, refreshing make-ahead dessert. You need little more than fruit, sugar and water for the most basic ones. This version adds an adult twist with some Manzanilla sherry, which adds a complexity of flavor without overshadowing the fruit base.

Provided by Food Network Kitchen

Categories     dessert

Time 5h25m

Yield 6 to 8 servings

Number Of Ingredients 6

3/4 cup sugar
4 wide strips orange zest, plus 2 tablespoons orange juice
2 wide strips lemon zest, plus 2 tablespoons lemon juice
1 1/2 pounds peaches, pitted and chopped (about 4 cups)
1/3 cup manzanilla sherry
Peach and/or orange slices, for garnish

Steps:

  • Bring the sugar, 1/2 cup water and the orange and lemon zest to a simmer in a saucepan, stirring until the sugar dissolves. Let cool, then strain into a blender. Add the peaches and orange and lemon juice. Blend until very smooth.
  • Pour into a 9-by-13-inch baking dish and stir in the sherry. Freeze until beginning to harden, 2 to 3 hours, then scrape with a fork. Continue to freeze, scraping occasionally, until frozen, about 3 more hours. Serve garnished with peach and/or orange slices.

SHERRY COBBLER

Sherry cobbler image

Create a classic sherry cocktail that dates back to the mid 1800s. Refreshing, long and fruity, we've used a blend of sherries for depth of flavour

Provided by Rich Woods

Categories     Cocktails, Drink

Time 10m

Number Of Ingredients 8

1 orange wedge
1 lemon wedge
1 piece of fresh ripe pineapple
35ml oloroso sherry
15ml sherry (we used Pedro Ximénez)
1 tsp sugar syrup or maraschino liqueur (optional)
ice
orange or lemon wheel, pineapple triangle

Steps:

  • Put the fruit in the bottom of a cocktail shaker and bruise it with a muddler or the end of a bar spoon to release some of the juice. Add the sherry and sugar syrup if using.
  • Fill the shaker with ice and shake hard. This will extract more juices from the fruit and dilute the drink.
  • Strain into a highball glass, filled with fresh ice and garnish with a slice of orange or lemon and a piece of pineapple.
