This blood-red lemonade and Prosecco combo is sure to be your new favourite spooky tipple

Ingredients

200g raw beetroot , grated
juice 8 lemons
200g golden caster sugar
300ml Aperol
ice
750ml prosecco , chilled

Steps:

First, make the beetroot lemonade. In a bowl, stir together the beetroot, lemon juice and sugar. Steep in the fridge for at least 1 hr, stirring occasionally to dissolve the sugar. Pour the mixture through a sieve into a large jug to get rid of the pulp.
To make the cocktail, pour 25ml of the beetroot lemonade into each glass, followed by 50ml of Aperol and a few ice cubes. Top with Prosecco and serve.

4 ounces Scotch
3 ounces sweet vermouth
2 ounces cherry liqueur, such as Heering
2 ounces red beet juice
2 ounces lime juice
2 ounces pomegranate juice
1 lime wedge
2 tablespoons black sanding sugar
4 Maraschino cherries, such as Luxardo

Steps:

Fill a large cocktail shaker with ice. Add the Scotch, vermouth, cherry liqueur, beet juice, lime juice and pomegranate juice. Attach the shaker and lid and shake well until chilled.
Rub the lime wedge along the rims of 4 chilled coupe glasses. Pour the black sugar onto a shallow dish and dip the rims of the glasses into the sugar.
Strain the cocktail into each glass and garnish each with a cherry.
