Number Of Ingredients 10

2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon cayenne pepper
1 tablespoon pepper
2-1/2 teaspoons paprika
4 halibut fillets (4 ounces each)
2 tablespoons butter

Steps:

  • In a large shallow dish, combine the first 8 ingredients. Add fillets, 2 at a time, and turn to coat., In a large cast-iron skillet, cook fillets in butter over medium heat until fish flakes easily with a fork, 3-4 minutes on each side.

This is delicious, and I have made it many times since. We have used many types of fish as well as halibut, which I prefer.

Number Of Ingredients 9

¾ cup butter, softened
1 tablespoon lemon juice
1 ½ teaspoons onion powder
1 ½ teaspoons dried parsley
¾ teaspoon dried dill weed
¼ teaspoon white sugar
¼ teaspoon salt
¼ teaspoon ground black pepper
4 inch-thick halibut steaks

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir butter, lemon juice, onion powder, parsley, dill, sugar, salt, and pepper together in a bowl; spread evenly over the halibut steaks.
  • Cook on preheated grill until the fish flakes easily with a fork, 5 to 6 minutes per side.

CAJUN-STYLE BLACKENED HALIBUT

Number Of Ingredients 10

1 teaspoon salt
1 teaspoon minced fresh thyme
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/2 teaspoon sweet paprika
1/2 teaspoon ground black pepper
1/2 teaspoon fennel seeds, crushed
4 6-ounce halibut fillets
2 tablespoons olive oil
4 teaspoons butter

Steps:

  • Preheat oven to 400°F. Mix first 7 ingredients in small bowl. Place fillets on baking sheet. Brush on both sides with 1 tablespoon oil. Sprinkle top of each with seasoning.
  • Heat heavy large skillet (preferably cast-iron) over high heat until very hot. Add remaining 1 tablespoon oil; swirl to coat. Place fillets, seasoned side down, in skillet. Cook until very brown on bottom, 1 minute. Return fillets, browned side up, to baking sheet. Place in oven; bake until just opaque in center, about 8 minutes. Top each with 1 teaspoon butter.

My father discovered this Off the Boat Tartar Sauce on his fishing trip to Alaska. This sauce may be used as a dip or slathered over the halibut and encrusted on the top during grilling.

1 c mayonnaise
1 bunch green onions, chopped
2 tsp lemon pepper
4 halibut steaks
lemon juice, fresh
4 tsp blackening seasoning

Steps:

  • 1. In small bowl, combine mayonnaise, green onions, and lemon pepper. Squeeze lemon over each halibut steak and season with blackening seasoning or just top with 1/4 cup of tartar sauce, spread to cover one side.
  • 2. Preheat grill to medium high heat. Slightly grease grill. Place tartar encrusted halibut on grill. Grill for 10 minutes or until halibut flakes with fork. Serve with lemon wedges.

  • Heat a large nonstick skillet over medium-high heat for about 2-3 minutes. Traditionally, you would use a cast-iron skillet. But I use a nonstick hard-anodized aluminum skillet to minimize the risk of sticking.
  • Add the butter to the hot skillet and swirl to coat. Add the halibut fillets. Cook 4 minutes on each side, until the fillets turn from translucent into opaque and white (it’s fine to cut a small slit and peek).
