Blackberries lend a pleasing sweet and tart flavor, and pretty color, to this nonalcoholic highball - and orgeat (a rich, almondy syrup) gives it some depth. Topped off with sparkling coconut water, it's bright and refreshing.

3/4 oz. lime juice
3/4 oz. lemon juice
1 oz. orgeat
4 or 5 blackberries (plus a few for garnish)
Sparkling coconut water
Sprig of rosemary

Steps:

  • Vigorously shake citrus juices, orgeat and blackberries with ice. Strain into a Collins glass filled with crushed ice. Top with sparkling coconut water. Garnish with blackberries and a sprig of rosemary.

Easy blackberry cobbler. My father-in-law grows huge blackberries and always has tons. I tried a number of recipes and none really hit the spot. So created this one and it worked so well that my fiance said it was the best she had ever had. Serve warm with heavy or whipped cream.

½ cup white sugar
2 tablespoons cornstarch
6 cups fresh blackberries
¼ cup melted butter
2 ½ cups all-purpose flour
1 ½ cups white sugar
1 tablespoon baking powder
1 teaspoon salt
2 cups milk
1 tablespoon vanilla extract
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish. Whisk 1/2 cup sugar with the cornstarch in a small bowl; set aside.
  • Place the blackberries into a mixing bowl, and drizzle with 1/4 cup of melted butter. Sprinkle with the cornstarch mixture, and toss to evenly coat. Spread the berries into the prepared baking dish. In a separate bowl, whisk together the flour, 1 1/2 cup sugar, baking powder, and salt until evenly blended. Stir in the milk, vanilla extract, and 1/4 cup melted butter until combined but still slightly lumpy. Pour the batter over the berries.
  • Bake in the preheated oven until the berries are tender and the crust is golden brown, 55 minutes to an hour.

½ cup butter
2 cups self-rising flour
2 cups white sugar
2 cups milk
3 ½ cups blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
  • In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.
  • Drop blackberries into batter; if more crust is desired add less blackberries. Bake in preheated oven for one hour or until golden brown.

2 tablespoons sugar, or more to taste
1 teaspoon lemon juice

Steps:

  • Combine blackberries, sugar, and lemon juice in the bowl of a small food processor. Blend until smooth and sugar has dissolved, 15 to 20 seconds. Adjust sugar if desired, and blend again.
  • Strain mixture using a fine mesh strainer to remove seeds. Refrigerate until ready to use.

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. 1 cup sugar
1 cup Gold Medal™ All-Purpose Flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter, melted
Cream, whipped cream or ice cream, if desired

Steps:

  • In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.
  • In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 8-inch square pan. Spoon blackberry mixture over batter.

3 cups fresh or frozen blackberries
1 cup sugar
1/4 teaspoon ground cinnamon
3 tablespoons cornstarch
1 cup cold water
1 tablespoon butter
BISCUIT TOPPING:
1-1/2 cups all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1/2 cup 2% milk
Whipped topping or vanilla ice cream, optional

Steps:

  • In a large saucepan, combine the blackberries, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into a greased 8-in. square baking dish. Dot with butter., For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture., Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown.
