Easy Blackberry Cobbler image

You won't believe how fast and simple it is to make this Easy Blackberry Cobbler using just 6-ingredients! It is made with cinnamon rolls, frozen blackberries, spices and topped with buttercream frosting. It is the fall dessert your tastebuds need.

36 Ounces Fresh or Frozen Blackberries
12 Pillsbury Grand Cinnamon Rolls
10 Ounces Buttercream Frosting
½ Cup Sugar
3 Tablespoons Cornstarch
1 Tablespoon Cinnamon

Steps:

  • In a medium bowl, mix together the blackberries, cinnamon, sugar, and cornstarch. Set aside and let rest for 20 minutes.
  • Preheat the oven to 350 degrees and spray a 9x13 pan with nonstick spray.
  • Pour the blackberries into the pan and spread even.
  • Place the cinnamon rolls on top, in 4 rows of 3.
  • Bake for 48 minutes or until golden brown and blackberries are bubbling.
  • Allow to cool for 10 minutes.
  • Microwave the frosting for 20-30 seconds or until melted and pour over each cinnamon roll, covering the entire top of the cobbler.
  • Serve and enjoy!

3 cups fresh or frozen blackberries
1 cup sugar
1/4 teaspoon ground cinnamon
3 tablespoons cornstarch
1 cup cold water
1 tablespoon butter
BISCUIT TOPPING:
1-1/2 cups all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1/2 cup 2% milk
Whipped topping or vanilla ice cream, optional

Steps:

  • In a large saucepan, combine the blackberries, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into a greased 8-in. square baking dish. Dot with butter., For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture., Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream if desired.

1 cup sugar
1 cup Gold Medal™ All-Purpose Flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter, melted
Cream, whipped cream or ice cream, if desired

Steps:

  • In medium bowl, stir together blackberries and sugar. Let stand about 20 minutes or until fruit syrup forms. Heat oven to 375°F.
  • In large bowl, stir together flour, baking powder, salt and milk. Stir in melted butter until blended. Spread in ungreased 8-inch square pan. Spoon blackberry mixture over batter.

1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375°F
  • Toss berries, 1/3 cup sugar, cornstarch, lemon juice, and 1/2 teaspoon cinnamon in large bowl.
  • Let stand 10 minutes, tossing occasionally. Transfer to 9-inch deep-dish glass pie plate.
  • Bake until berries soften, about 15 minutes.
  • Meanwhile, combine baking mix and lemon peel in medium bowl.

My grandmother made this cobbler when I was a little girl I can still remember the fun we had first picking blackberries together in the hills. Blackberries are my favorite filling, but this cobbler can also be made with apples.

1 cup butter, divided
1 cup plus 2 tablespoons sugar, divided
1 cup water
1-1/2 cups self-rising flour
1/3 cup whole milk, room temperature
2 cups fresh or frozen blackberries
1/2 to 1 teaspoon ground cinnamon

Steps:

  • In a 10-in. round or oval baking dish, melt 1/2 cup butter; set aside. In a saucepan, heat 1 cup sugar and water until sugar is dissolved; set aside. , Place flour in a bowl; cut in remaining butter until mixture resembles fine crumbs. Add milk, stirring with a fork until dough leaves sides of bowl. , Turn out onto a floured surface; knead 3 or 4 times. Roll into an 11x9-in. rectangle.
