GRILLED CHICKEN THIGHS WITH BLACKBERRY BBQ SAUCE

- In a small bowl, combine the coriander, paprika and salt. Pat the chicken thighs dry with paper towels, season on both sides with the spice mixture and place in a gallon-size zip-top bag. Refrigerate for several hours but preferably overnight.
- Prepare and preheat your lump charcoal grill to create two heat zones: high and low.
- Brush the chicken thighs with olive oil and place them skin-side down on the hot side of the grill. Cover and cook for 2 minutes. Uncover and move the chicken to the low side of the grill, skin-side up. Cover and cook until the thighs reach an internal temperature of 160 degrees F, 15 to 20 minutes. Pour half the Blackberry BBQ Sauce into a medium bowl and use it to baste the chicken occasionally during the final 10 minutes of cooking.
- Remove the chicken from the grill. Serve with the remaining sauce on the side.
- In a large saucepan, combine the blackberries, beer, vinegars, sugar, onion, garlic, habanero, chipotle powder, coffee, coriander and cumin. Cook over medium-low heat, stirring occasionally, for 2 hours. Carefully puree the sauce in a blender or food processor, then strain.
BLACKBERRY DUMPLINGS

- Mix blackberries, 1/3 cup sugar, the water and lemon juice in 3 1/2- or 4-quart slow cooker.
- Cover and cook on low heat setting 3 to 4 hours (or high heat setting 1 1/2 to 2 hours) or until mixture is boiling.
- Mix baking mix and 2 tablespoons sugar in small bowl. Stir in milk just until dry ingredients are moistened. Drop dough by 6 spoonfuls onto hot berry mixture. Sprinkle with cinnamon.
- Cover and cook on high heat setting 20 to 25 minutes or until toothpick inserted in center of dumplings comes out clean.
- To serve, spoon dumpling into dessert dish. Spoon berry mixture over dumpling. Top with whipping cream.

- Mix barbecue sauce, garlic powder, onion powder, coke, salt and pepper in large freezer bag.
- Add chicken.
- Freeze.
- When ready to serve thaw in fridge.
- Cook in oven or grill.
- In oven, place in pan sprayed with Pam.
- Cook at 350 for about 30 minutes.
- Baste with marinade during cooking.

- ASSEMBLY DIRECTIONS:.
- Pour salad dressing in a large bowl.
- Add the chicken parts to the dressing, coating well.
- Cover and chill about 4 hours, or overnight.
- Turn the chicken in the dressing occasionally.
- Combine parmesan cheese, dry bread crumbs, parsley flakes, paprika, salt and pepper in a shallow bowl. Roll chicken one piece at a time in the crumbs, then place chicken in a greased 9x13 baking pan or on a foil lined cookie sheet. Spoon excess dressing over the chicken.
- Bake at 350 degree oven for one hour, or until thickest piece is done.
- FREEZING AND COOKING DIRECTIONS:.
- Remove from oven and cool.
- Put baked chicken pieces into a freezer bag.
- Lable and freeze.
- TO SERVE:.
- Place chicken on a heavy foil lined cookie sheet. Warm in a 400 degree oven for 10 minutes or until warmed through.
