BLACK WALNUT BROWNIES

- In a small bowl, beat sugar and oil until blended. Beat in eggs and vanilla. Combine the flour, cocoa and salt; gradually add to sugar mixture and mix well. Stir in walnuts. , Pour into a greased 8-in. square baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:
- In a heavy skillet, combine all ingredients except the butter.
- Cook over low heat and stir constantly.
- When it thickens, add butter.
- Mix until the butter melts.
- Don't beat it too hard!
- Pour mixture onto a greased cookie sheet or pie pans-- just make sure it will not stick.
- When completely cool, break into small pieces.
- A hammer may come in handy for the breaking!
- Folks have suggested putting it in a bag and breaking it with something heavy.
- Hammer again reccommended.
- These store well in a sealed container with wax paper between the layers.

- In a saucepan, cook sugar, corn syrup and water until sugar dissolves and mixture comes to a boil. Add butter; cook until mixture reaches 280° on a candy thermometer. Stir in walnuts; cook until 300° (hard crack stage). Remove from the heat and stir in baking soda., Spread immediately into a greased 15x10x1-in. pan. When cool, break into pieces.

Steps:
- In a large bowl, cream butter, white sugar, and brown sugar. Add eggs and beat until smooth. Sift together flour, baking soda, and salt. Stir dry ingredients into the creamed mixture until well blended. Stir in walnuts last. Shape dough into logs about 2 inches in diameter, wrap them in wax paper, and refrigerate until firm.
- Preheat oven to 350 degrees F (175 degrees C).
- Slice dough logs into 1/2 inch slices, and place on baking sheet. Bake in preheated oven for 8 to 10 minutes. Mmmm nuttylicious!
