BASIL-AND-BLACK-PEPPER-BRINED CHICKEN
Cooking the chicken on the stove top beforehand takes all the guesswork out of grilling bone-in pieces. The brine, which does double duty as an overnight bath and a cooking liquid, infuses it with flavor and ensures it stays juicy. - In a medium stockpot, combine 6 cups water, sugar, 1/4 cup coarse salt, and crushed peppercorns; bring to a boil. Remove from heat; add 2 cups basil leaves. Let cool completely; cover and refrigerate 30 minutes. Add chicken; refrigerate, covered, overnight.
- Bring chicken to a boil in liquid. Skim well; reduce heat and vigorously simmer until just cooked through and a thermometer inserted in thickest part of each piece (avoiding bones) reads 165 degrees, about 15 minutes. Transfer chicken to a wire rack set in a rimmed baking sheet; let dry, 45 minutes to 1 hour. (Chicken can be made ahead and refrigerated in an airtight container up to 1 day; bring to room temperature before grilling.)
- In a small saucepan, melt butter over medium, then add remaining 1/4 cup basil and ground pepper. Prepare grill for direct and indirect cooking; lightly brush grates with oil. Grill chicken over direct heat, turning occasionally, 5 minutes. Brush with basil butter and continue grilling until charred in spots and heated through, about 10 minutes more. (If flare-ups occur, or chicken is nicely colored before it's heated through, move to indirect heat.) Remove from heat and brush with more butter. Serve, garnished with basil sprigs and sprinkled with flaky salt.

- Heat 1-1/2 cups milk, peas, carrots, chicken and soup to boiling in 3-quart saucepan.
- Stir Bisquick mix, 1/3 cup milk and black pepper until soft dough forms.
- Drop dough by 8 spoonfuls onto chicken mixture.
- Cook uncovered over low heat 10 minutes.
- Cover and cook 10 minutes longer.
- Sprinkle with parsley.

CARDAMOM AND BLACK PEPPER CHICKEN
Always in search of recipes that feature cardamom, I found this on the Internet. My undersyaning is that it is a rendition of a dish popular in the UK and most likely invented there. The mariade is similar to a tandoori paste but with a creamy aromatic welll seasoned with cardamom, cinnamon and other spices. I have not tried it yet but wanted it here fore safekeeping and decided to share it as well.

- To make the marinade: Put the onion, ginger, garlic, salt, cayenne pepper, black pepper and 3 TBSP water into a blender. Blend to a smooth paste, pushing down with rubber spatula when needed.
- To marinate the chicken: Put the sliced chicken in a bowl. Add the marinade and mix well. Cover and refrigerate for 30 minutes or up to 3 hours.
- To make the dish: Pour the oil into a wide, nonstick pan set over medium-high heat. When the oil is hot, add the cinnamon and cardamom. Stir for 10 seconds. Put in the onion and fry, stirring at the same time, for 6 to 7 minutes, or until the onion turns a reddish-brown color. Add the cumin and coriander. Stir once. Add the yogurt, 1 TBSP at a time, and stir until it is absorbed. Add the tomato and stir for 1 minute. Reduce the heat to medium, add the chicken, together with its marinade, and cook, stirring, for 3 to 4 minutes, or until the chicken pieces turn white. Add 3/4 cup water, the salt, and garam masala. Stir and bring to a simmer. Reduce heat to low and cook, uncovered for 2 to 3 minutes, stirring now and then.

EASIEST BLACK PEPPER CHICKEN
I like this recipe because it is so easy to cook and tastes so well. It is something that comes out of my endless experimentation with what I call as fusion cooking.

- Take a big bowl and put the yogurt.
- Add coarse pastes of onion and garlic.
- Add the deskinned chicken.
- (Drumsticks or breast pieces) Put the cling foil and leave to marinate overnight in the fridge.
- Heat oil in the skillet and allow the same to become medium hot. Dont allow it to start smoking.
- Add cloves, green cardamoms, cinnamon and bay leaves.
- Wait for 3-4 seconds as you see these ingredients crackling and giving out the aroma.
- Empty the bowl with all its ingredients in the oil.
- Saute on high flame for 3-4 minutes.
- Add 1/2 cup of water and salt. Close the lid, lower the fire and allow to cook for 15 minutes till chicken is tender.
- Open the lid and finally add the freshly ground black pepper powder and cover for 2 minutes on medium fire.
- When done garnish with tomatoes, fresh coriander or parsley.
- Serve warm with pita bread, tortillas,Indian bread or rice.

Shirataki Noodles are a traditional Japanese noodle with almost no digestible carbs. They're nearly all fiber. They're sold in wetpacks with a nasty smelling liquid - drain, rinse and boil them for about 2 minutes and they're ready to eat. I haven't figured out the Weight Watchers points on this one yet - as soon as I do, I'll edit the recipe.

- Prepare noodles according to package directions.
- Heat non-stick 12-inch skillet with 2-inch sides over medium high heat. Add butter and oil. Add peppers and onions and chicken and cook until soft and onions are lightly browned.
- Add mushrooms, cook 1- 2 minutes. Pour in sauce, mix well.
- Reduce heat. Cover and simmer gently 5 minutes.
- Spray a non-stick pan with oil, add noodles and stir-fry 1 minute until hot and dry.

- Heat coconut oil in large skillet set over medium heat; cook Cauliettes, garlic, cumin, paprika, coriander, salt, cinnamon and pepper for about 5 minutes or until well coated and Cauliettes start to soften. Stir in water; cook for 3 to 5 minutes or until no liquid remains and Cauliettes are tender. Stir in lemon juice. Remove from heat and let cool completely.
- Toss together cooled Cauliettes, chickpeas, red pepper, red onion, orange juice, apricots, almonds and 2 tbsp cilantro. Cover and refrigerate for about 30 minutes or until chilled. Sprinkle with remaining cilantro, pomegranate seeds and mint.

Steps:
- Heat oil in wok. Add onions, peppers, garlic, ginger, and green beans. Stirfry until crisp tender and remove from wok, leaving as much oil as possible behind. Keep warm.
- Add chicken to oil in wok, and stirfry until done through. Push chicken up the sides of the work, and add sauce. Heat sauce, and as it thickens, stir in chicken.
- Add veggies back to chicken in wok. Add black pepper. Stir to combine and reheat veggies if needed. Serve immediately over hot rice.
