1 (15 ounce) can black-eyed peas
1 lb spicy sausage (I use Jimmy Dean)
1 (15 ounce) can tomatoes, petite diced
2 teaspoons rosemary
2 teaspoons oregano
1 small onion
1/2 green pepper
1 (8 ounce) box cornbread mix
1 egg (for cornbread)
1/3 cup milk (for cornbread)

Steps:

  • Brown sausage.
  • Add onion and green pepper, saute for 5 minutes.
  • Add undrained black eyed peas, and undrained tomatoes.
  • Add rosemary and oregano.
  • Start cornbread according to directions.
  • Simmered sausage mixture, covered for 20 minutes.

This is one of our favorite cool weather dishes - it's so good with cornbread! The recipe came from Bush's. It's one I never really tinker with, and that's unusual for me. The ingredients are just right in the original.

1/2 lb bulk pork sausage
1/2 cup green pepper, chopped
1/4 cup onion, chopped
1 cup canned tomato
1/4 teaspoon oregano
1/4 teaspoon rosemary
1/4 teaspoon black pepper
1 garlic clove, finely chopped
1 (15 7/8 ounce) can black-eyed peas (do not drain)
1 cup cheese, grated (cheddar, co-jack, etc.)

Steps:

  • Brown sausage in large skillet, crumbling with fork as it browns. Drain any accumulated fat.
  • Add green pepper & onion to skillet with sausage and cook for 5 minutes.
  • Add tomatoes & seasonings, stir well.
  • Pour in blackeyed peas with the liquid in the can. Cover & simmer for 15 minutes.
  • Serve hot with grated cheese on top.

1 can(s) backeye peas
1/2 c green pepper, chopped
1 clove garlic, finely chopped
1/4 tsp black pepper
1/4 tsp rosemary
1 pkg mahatma yellow rice
1/2 lb sausage
1/4 c onion, chopped
16 oz can stewed tomatoes
1/4 tsp oregano
tabasco to taste

Steps:

  • 1. Cook sausage in a large frying pan, crumbling as it cooks. Drain fat from pan. Add green pepper and onion. Cook 5 minutes, stirring vegetables into sausage. Add garlic & cook 1 minute. Add tomatoes and seasonings. Stir Well. Pour blackeye peas with liquid into pan. Cover & simmer while rice cooks.
  • 2. Prepare rice according to package directions. Spoon rice into bowls and top with blackeye pea mixture. Mix and eat.
  • 3. Pepper, rosemary & oregano may be replaced by Cajun seasoning. Personally, I like to fix the blackeye pea mixture at least a day ahead and reheat while the rice is cooking.
  • 4. The blackeye pea mixture is also good served without the rice and topped with cheese, served with a side of cornbread. If you don't like blackeye peas, try great northern or navy beans.

MEMA'S BLACK-EYED PEA DISH

A family-favorite way to eat those black-eyed peas at New Year's. Serve over rice or, even better, cornbread. I sometimes use Ro-tel for the diced tomatoes for an extra kick. Cook the day before to allow flavors to meld.

Steps:

  • Brown beef, onion, & pepper together; drain grease.
  • Add rest of ingredients and mix well.
  • Simmer on low for 30 minutes.
