- For the tasso ham gravy: Heat the ghee in a saucepan over high heat. Once melted, add shallots and saute for 1 minute. Add ham and continue to cook until slightly caramelized.
- Whisk in flour. Cook until mixture is light brown. Add heavy cream and chicken stock. Bring to a boil. Lower heat. Simmer until sauce thickens enough to coat the back of a spoon, about 15 minutes. Season with salt and pepper. Keep warm.
- For the grits: Heat a large pot over medium heat. Add olive oil, tasso ham and shallots. Saute until the shallots are translucent.
- Deglaze pot with chicken stock. Add heavy cream and 1 1/2 cups water. Bring to a boil.
- Reduce heat to medium and add the grits. Stir to combine. Do not walk away from the grits, as they will easily stick to the pan and burn. Cook, stirring the grits constantly and adding an additional 1 1/2 cups water as necessary until al dente, 30 minutes to 1 hour.
- Season with salt and pepper. Remove from the heat and stir in the shredded cheese. Cover to keep warm.
- For the shrimp butter: Simmer the shrimp shells and butter in a saucepan on low heat for 10 minutes. Strain and discard shells.
- For the black dog: Heat ghee in a large nonstick skillet over medium-high heat. Add tasso ham, shallots and shrimp. Saute shrimp on one side for 1 minute, then flip. Add garlic and sautee. Squeeze lemon wedges through a strainer into the skillet. Add 4 ounces shrimp butter, followed by the tasso ham gravy and green onions.
- To assemble, place the bottom halves of your biscuits on 4 to 6 plates. Scoop 3/4 cup grits atop each biscuit. Using a spoon or tablespoon scoop, press a small dimple on top of each serving of grits. Use tongs to place shrimp on top of the grits, then pour gravy over the top of each dish. Lean biscuit tops on the side of the shrimp. Garnish with green onions.

My friend came to a party with this hummus and it was love at first bite. here it is...yeah I'm sure your's is great but this is way better. It is from the Black Dog Cafe in Martha's Vinyard.

Steps:
- Drain beans reserving liquid. Rinse.
- In a food processor or blender, pulse briefly.
- Add garlic, tahini, lemon juice, olive oil and seasonings, pulse until smooth.
- Add reserved liquid if it is too thick until desired consistancy.
- Before serving drizzle with a little olive oil.
- serve with red bell pepper slices, pita chips or bread, veggies, pretzels, whatever!

ROASTED GARLIC HUMMUS

- Preheat oven to 400 degrees.
- Cut 1/4 inch off the top of the bulb of garlic to expose the cloves beneath, but do not peel the garlic, you want to roast it in the skin. Place clove on a piece of aluminum foil, place butter on top, pour lemon juice over the garlic and sprinkle with kosher salt. Bring up all sides of aluminum foil and twist together to close. Cook for 60 minutes or until garlic cloves are soft and golden in color. Allow to cool.
- When the garlic is cool enough to touch, use a fork to remove the cloves and add them to the food processor. Next add garbanzo beans, tahini and lemon juice. Puree until smooth. Add 3 tablespoons of reserved garbanzo bean juice. Puree. If you would like a thinner dip, add a little more of the reserved juice.
- Transfer hummus to a bowl, stir in kosher salt.
- In a small saucepan heat olive oil over medium heat. When hot, add minced garlic and cook for 30-60 seconds or until fragrant but not browned. Pour garlic oil into hummus. Stir. Sprinkle with paprika. Serve.
- Scoop up with veggies, pita chips or a spoon and enjoy!

CREAMY ROASTED GARLIC HUMMUS
This is truly the perfect hummus, in my humble opinion. Roasting the garlic brings out its nutty and sweet flavor and cuts down on the sharpness. It's well worth the time! Try it, I don't think you'll be disappointed.

- Preheat oven to 375°F Cut off the very top of the garlic clove (about 1/4") so that the tops of most of the cloves are exposed slightly. Coat with a little olive oil and wrap securely in tin foil. Roast garlic in oven for 1 hour. Remove and allow to cool.
- Using your fingers, squeeze the soft, roasted garlic out of each clove into food processor. Rinse and drain cooked or canned chickpeas. Add them, and all other ingredients, to the food processor and blend until completely smooth.
- Scrape ingredients off sides of food processor to make sure it blends evenly. If you find that the hummus is too thick, you can add additional olive oil at this time. Add it very slowly, allowing the mixture to combine fully before adding more liquid.
- Serve at room temperature with crudites, warm pita or crackers.
- Optional: Sprinkle with chopped parsley or paprika before serving.

- Place all ingredients in food processor and blend until smooth, adding more lemon if necessary to obtain desired consistency. The blending can take as long as 3-4 minutes Be patient it comes out better!
- I have made this a lot lately and I have come to learn that I must follow the directions EXACTLY especially with the Tahini paste.
- Refrigerate for several hours. May be made a week ahead of time.
- Serve with Pita Bread or Pita Chips or your fingers. They all taste great with it!

- Add water to a pot about half full, and set the stove to medium heat. Try to use a large pot, the chickpeas tend to foam up during the boiling process and can easily overflow. Wait for the water to boil.
- When the pot of water is boiling, add in the chickpeas and baking soda and give it a stir and let it boil for 20-25 minutes with no lid. Keep an eye on the pot and do not leave the area, it may foam up and overflow when it starts to boil. If it starts to foam up, I like to blow on the foam, which shrinks it down a bit. Reduce the heat slightly to a gentle boil to prevent the foamy boil ups.
- Once the chickpeas have been boiling for 20-25 minutes and are all super soft, drain it and rinse it again with hot water to remove the baking soda.
