BLACK BEAN TORTILLA PINWHEELS

Black Bean Tortilla Pinwheels image

You should try these tasty little nuggets at your next party ~ they are great with Jalapeno's instead of olives, for those who don't care for them. Either way, they are a great finger food for any party. Serve them up with your favorite salsa... I made them last night, so all of the flavors had plenty of time to mesh. Enjoy!

1 - 8 oz softened, cream cheese
1 c sour cream
1 c shredded, monterey jack cheese
1/4 c diced red onion
1/4 c drained and chopped - green olives with pimento or have made with jalapeno slices in a jar - chopped in food processor

Steps:

  • 4. Trim ends and wrap each in plastic wrap and place back in refrigerator until chilled - I usually make these the night before.

1 medium onion, diced
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced

(Alternatively, add the beans to a medium pot and cover with hot water. Bring to a boil, and then boil for 2 minutes. Turn off the heat, cover the pot and allow the beans to sit for 1 hour. Drain the beans and rinse them with cold water before proceeding.)

Bring to a boil, reduce the heat to low, cover and simmer for 1 1/2 hours. Then add the chile powder, cumin and salt and stir. Cover and continue simmering until the liquid level is to your liking, about another hour. Taste for seasoning and add more of what it needs.
  • For the fixins: Serve in a bowl with sour cream, cilantro, lime wedges and diced bell peppers on the side.
