BLACK BEAN AND ZUCCHINI TORTILLA CASSEROLE



Black Bean and Zucchini Tortilla Casserole image

This southwestern-style casserole makes for a nice change-of-pace holiday main dish, but this is also easy enough to make for weeknight meals.

1 1/2 tbsp extra-virgin olive oil
1 cup chopped onion
1 medium green bell pepper (diced)
1 28 oz can crushed or pureed tomatoes
1 -2 small fresh hot chile peppers (seeded and minced, or 1 (4 oz) can chopped mild green chiles)
2 tsp chili powder (or more, to taste)
1 tsp dried oregano
1 tsp ground cumin
1 16-20 oz can black beans, drained and rinsed
1 medium zucchini (quartered lengthwise and thinly sliced)
12 corn tortillas (torn or cut into several pieces)
8 oz cheddar-style nondairy cheese (Daiya is great with this!)
vegan sour cream (homemade or purchased or Cashew Cream for garnish, optional)

Steps:

  • Preheat the oven to 400°F.
  • Heat the oil in a large saucepan. Sauté the onion until translucent. Add the green pepper and continue to sauté until it has softened and the onions are golden.
  • Stir in the crushed tomatoes and seasonings, black beans, and zucchini. Bring to a simmer, then simmer gently for 5 minutes.
  • Layer as follows in a lightly oiled 9 x 13 inch or 2-quart round casserole dish: half of the tortillas, half of the tomato-black bean mixture, and half of the cheese. Repeat.
  • Bake for 15 to 20 minutes, or until the cheese is bubbly. Let stand for 5 to 10 minutes, then cut into squares or wedges to serve.

One 16- to 20-ounce can black beans or 2 1/2 cups cooked black beans (from about 1 cup dried)
1 medium zucchini, quartered lengthwise and thinly sliced
1 small fresh hot chile pepper, seeded and minced, or one 4-ounce can chopped mild green chilies
12 6-inch corn tortillas, torn or cut into several pieces
8 ounces grated Cheddar cheese or Cheddar-style nondairy cheese

1 tablespoon vegetable oil
1 onion, chopped
4 cups tortilla chips
6 large eggs
1 (15 ounce) can black beans, rinsed and drained
2 cups chipotle salsa
½ cup crumbled queso fresco
¼ cup diced red onion
1 avocado, sliced
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in a large skillet over medium-high heat until it shimmers. Add chopped onion and cook until it softens slightly, about 5 minutes. Add tortilla chips. Add eggs to the pan and stir around with the chips until almost set, 3 to 4 minutes. Pour in black beans and salsa. Stir to combine and heat through, about 5 minutes.
  • Top chilaquiles with queso fresco, red onion, avocado, and cilantro. Serve immediately.

This is a favorite side dish that I like to serve with grilled chicken or pork chops. You can also add a can of niblet corn to this.

1 teaspoon oil
1 onion, chopped
1/2 bell pepper, chopped
2 zucchini, sliced
1 (4 ounce) can black olives, sliced
1 (15 ounce) can black beans, drained
1 (10 ounce) can Rotel Tomatoes
1 teaspoon garlic powder
1 teaspoon chili powder
2 teaspoons cumin
1/4 teaspoon pepper
1 teaspoon salt
1/2 teaspoon oregano

Steps:

  • Saute onions & bell peppers in oil until tender.
  • Add Rotel tomatoes, mix well and cook for about 5 minutes.
  • Add black beans, zucchini and remaining ingredients, mix well and cook for about 15-20 minutes on low heat.
  • Top with shredded cheddar or monterrey jack cheese if desired.
