Chicken Nachos image

Super-simple but totally killer nachos! These are to die for with some guacamole, sour cream and salsa. If it's too spicy for you, just leave out the cayenne.

2 skinless, boneless chicken breast halves - chopped
2 tablespoons vegetable oil
1 teaspoon cayenne pepper, or to taste
1 (12 ounce) package corn tortilla chips, or as needed
1 (8 ounce) package shredded Mexican-style cheese blend
1 (7 ounce) can diced green chilies, drained

Steps:

  • In a medium bowl, stir together the chicken, vegetable oil, and cayenne pepper. Let stand for 15 minutes, or longer if desired.
  • Heat a skillet over medium-high heat. Add the chicken mixture, and fry until chicken is no longer pink. Remove from heat, and set aside.
  • Preheat the oven to 325 degrees F (165 degrees C). Spread a thin layer of tortilla chips in a 9x13 inch baking dish. Sprinkle 1/4 of the chicken, 1/4 of the chilies, and 1/4 of the cheese over the chips. Repeat layers ending with cheese on the top.
  • Bake for 15 to 20 minutes in the preheated oven, until the cheese is melted and everything is heated through. Serve with your favorite nacho toppings.

0.5 (15 ounce) can black beans, drained
0.5 (15 ounce) can cannellini beans, drained or 0.5 (15 ounce) can other white beans
1/4 cup finely diced white onion
1 small jalapeno pepper, minced
2 tablespoons finely chopped fresh cilantro
1 lime, juice of
1/4 teaspoon sea salt, to taste
1/8 teaspoon ground cumin
1/8 teaspoon chili powder
2 teaspoons grapeseed oil or 2 teaspoons canola oil
6 (6 inch) white corn tortillas
3/4 cup shredded monterey jack cheese

Steps:

  • Stir together the beans, onion, jalapeno, cilantro, 1 tablespoon lime juice, 1/8 teaspoon salt, cumin, and chili powder in a bowl; taste and adjust seasoning; set aside.
  • Preheat oven to 400°.
  • Whisk together the remaining 1 tablespoon lime juice, oil, and the remaining 1/8 teaspoon salt until well combined.
  • Run or brush the lime vinaigrette onto the entire surface of both sides of the tortillas, using all the vinaigrette.
  • Cut the tortillas into 4 wedges each.
  • Place the tortilla wedges in a single layer on a large baking sheet.
  • Bake until nearly crisp, about 12 minutes, rotating the tray halfway through the baking process.
  • Top each tortilla with 1/2 tablespoon of the cheese and bake until the cheese melts, about 5 minutes.
  • Remove from the oven and let stand for 5 minutes to crisp further.
  • Place the tortilla chips on a large platter.
  • Stir the prepared bean-salsa mixture, then top each chip with about 1 tablespoon of the mixture, and serve.

2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
4 vine ripe tomatoes, seeded and chopped
1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level
1 small white onion, chopped
1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking
Salt
1 tablespoon extra-virgin olive oil
1 pound ground sirloin
2 cloves garlic, chopped
1 small onion, chopped
1 jalapeno pepper, seeded and chopped
1 teaspoon salt
1 1/2 teaspoons dark chili powder
1 1/2 ground cumin, half a palmful
2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level
1 can black beans, 15 ounces, drained
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
Sour cream
Chopped scallions
Chopped black olives
Diced pimento
Sliced avocado, dressed with lemon juice
Hot pepper sauces

Steps:

  • Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
  • Combine salsa ingredients in a bowl and set aside for flavors to marry.
  • Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
  • In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
  • Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

Steps:

2 tablespoons safflower oil
1 small white onion, chopped
1 (15.5-ounce) can black beans, drained and rinsed
1/2 teaspoon cumin
1/4 teaspoon dried oregano
Salt, to taste
Freshly ground pepper, to taste
12 ounces tortilla chips
2 cups poached, shredded chicken
10 ounces Monterey Jack cheese, shredded
16 ounces salsa
1 avocado, coarsely chopped
Thinly sliced jalapeno, for garnish
Sour cream, for garnish

Steps:

  • Preheat oven to 350 degrees with rack in middle position.
  • In a 10-inch skillet over medium-high heat, heat 2 tablespoons safflower oil. Add onion and saute until translucent, about 3 minutes. Add black beans, cumin, and oregano. Season with salt and pepper, to taste. Remove from heat.
  • On a sheet pan or oven-safe platter, layer one-third the tortilla chips and top with one third the black beans, chicken, cheese, and salsa. Repeat layering twice more.
  • Transfer to oven and bake 18 to 20 minutes, until cheese is melted throughout. Remove from oven, top with avocado, jalapeno, and sour cream, and serve immediately.

175g yellow or blue tortilla chips
200g fresh tomato salsa
150g medium cheddar , grated
1 red pepper , quartered, cored and finely chopped
400g can black beans , drained
1 avocado , diced
soured cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Arrange the tortilla chips over two-thirds of the tray, spoon most of the salsa on top and scatter over half of the cheese.
  • Mix the remaining salsa with the red pepper and beans, and tip onto the empty third of the tray. Scatter over the rest of the cheese. Bake for 10-15 mins or until the cheese has melted. Scatter the avocado over the beans and add dollops of the soured cream to serve.
