CHERRY DELIGHT RECIPE

2 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
3/4 cup butter, (melted)
2 (8-ounce) blocks cream cheese, (softened)
1/4 cup sour cream
1 (8-ounce) tub Cool Whip, (thawed overnight in the fridge)
1 cup confectioner's sugar
2 teaspoons vanilla extract
1 (21-ounce) can cherry pie filling

Steps:

  • Preheat oven to 350°F. Spray a 9X13 inch baking dish with nonstick cooking spray; set aside.
  • In a large bowl, mix graham cracker crumbs, melted butter, granulated sugar. Press into prepared baking dish. Bake in preheated oven until crust edges are golden, 12 to 14 minutes. Cool completely, on a wire rack, about about 45 minutes.
  • In a large mixing bowl, cream together cream cheese, and sour cream with an electric mixer until evenly combined.
  • Add the confectioner's sugar and vanilla and beat for 2 minutes.
  • Gently fold in the Cool whip until well combined. Do not overmix!
  • Spread cream cheese mixture over completely cooled crust. Refrigerate for a minimum of 4 hours, or better, overnight.
  • Spread cherry pie filling over top of cream cheese layer just before serving. Cut into squares and serve!

1 ¼ cups all-purpose flour
⅓ cup packed brown sugar
½ cup butter or margarine
2 eggs
1 ¼ cups packed brown sugar
1 tablespoon all-purpose flour
½ teaspoon baking powder
⅛ teaspoon salt
1 cup flaked coconut
½ cup chopped walnuts
½ cup maraschino cherries, chopped
1 cup confectioners' sugar
2 tablespoons butter
½ teaspoon vanilla extract
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.
  • Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.
  • Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

6 graham crackers
1 cup heavy cream plus 1 Tablespoon sugar (or 2 cups ready made whipped cream (Cool Whip))
2 cups mini marshmallows
3 cups pie cherry filling or 1 can pie cherry filling

Steps:

  • Place graham crackers into a zip top bag.
  • Crush graham crackers with a rolling pin or with your hands
  • In a separate bowl, place heavy cream and beat until soft peaks form. Mix in sugar.
  • If using ready made whipped cream, add whipped cream into a bowl
  • Mix in marshmallows
  • In a 8 inch square baking dish, sprinkle half the graham crackers
  • Put marshmallow mixture over graham crackers. Spread gently so graham crackers are covered.
  • Poor cherry pie filling over top of marshmallow mixture. Spread evenly
  • Sprinkle remaining graham crackers over top.
  • Cover and refrigerate until ready to serve.

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

I would like to dedicate this recipe to my special ladies group of "SCARLET FLOOZIES" we belong to the OFFICIAL RED HAT SOCIETY CLUB. This is my original recipe and a combination of a cookie and a bread recipe,that I have in my recipe box.. Then I added my little touches and came up with this sweet little red (hat)cherry cookie, on my second baking attempt. I believe it is perfected....and now a sweet little bit of heaven! My ladies enjoyed it! They even asked for the recipe!

5 - egg whites.. ..( i use powdered egg whites)
1/4 teaspoon(s) salt
1-3/4 cup(s) sugar
2 cup(s) chopped pecans
1 cup(s) candied cherries.......cut cherries in half
10 tablespoon(s) melted butter
1-1/2 teaspoon(s) vanilla
1-3/4 cup(s) sifted... cake flour..... (see # 5 note below!)

Steps:

  • Pre-heat oven to 350F. Line a 9x13 baking pan with buttered wax paper or parchment paper. Beat egg whites until foamy. Gradually add sugar and beat until whites form stiff peaks. again.Add salt and beat.
  • Combine pecans, cherries melted butter and vanilla...and fold into whites, slowly and alternately with the combined flour.
  • Spread into the baking pan, and smooth the top with a wet spatula. Bake till dry...about 35 minutes. Cool in pan. Remove,the cookie block, and cut into strips. **Be sure the waxed papr is removed from bottom of cookie. Then into little squares.
  • Arrange on a pretty serving plate... Enjoy with company. These freeze well... if there is any left!....LOL
  • NOTE: Here is the recipe to make your own CAKE FLOUR, from regular white flour. In a bowl mix 6 cups flour and add 12 Tablespoons of corn starch. Mix well...then only use what your recipe calls for.

1/4 cup sugar ((I use slightly less than 1/4 cup))
1 (8 ounce) package cream cheese (softened)
1 (8 ounce) container Cool Whip (thawed)
3/4 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract
1 (21 ounce) can cherry pie filling ((or other favorite pie filling))

Steps:

  • Combine all crust ingredients and firmly press with fingers into a 9x9-inch pan or 9-inch pie dish.
  • Using a stand or hand-held electric mixer, whip softened cream cheese until fluffy. Stir in the Cool Whip, confectioners' sugar, lemon juice and vanilla with the cream cheese until smooth.
  • Spread cream cheese mixture over graham cracker crust.
  • Pour cherry pie filling over cream cheese mixture and spread in an even layer. Refrigerate until firm, at least 1 hour or overnight. I chill mine overnight for best results. The longer this dessert is refrigerated, the better it will set up.
  • Cut into squares and serve!

6 ounces semi-sweet chocolate chips (1 cup)

2 to 4 teaspoons maraschino cherry juice

Steps:

  • 1. Heat oven to 350°. Grease a 9 x 9 x 2-inch baking pan.2. Sift together flour, cocoa, and salt. Beat butter and brown sugar in a large bowl with electric mixer until fluffy. Beat in eggs and vanilla. On low speed, gradually beat in flour mixture. Spread half of the dough in prepared pan. Sprinkle evenly with white chocolate chips. Press into dough. Cover with remaining dough. Arrange cherries on top making 4 rows of 4, about 2 inches apart.3. Melt chocolate chips in condensed milk. Stir in enough cherry juice to make a creamy topping.
