LEMON SPRITZ COOKIES

Steps:
- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Whisk the flour, baking powder and salt in a medium bowl.
- Beat the butter, granulated sugar and lemon zest in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg and both extracts. Reduce the mixer speed to low and beat in the flour mixture until just combined.
- Fill a cookie press with the dough according to the manufacturer?s directions; press the dough 1 1/2 inches apart onto unlined baking sheets. Decorate with sanding sugar and/or nonpareils.
- Bake, switching the pans halfway through, until the cookies are golden around the edges, 14 to 17 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.
BITTER LEMON SPRITZ
This recipe makes a single cocktail, but the proportions are easily multiplied for those celebrating with a crowd, so keep it in mind for the holidays. You can certainly sub gin for the vodka which is what I do

- Add the vodka, lemonade and several ice cubes to the shaker and shake vigorously until chilled and frothy.
- Transfer the contents of the shaker to a rocks glass, add the club soda. (Add a few extra ice cubes if needed.).
- Shake on drops of bitters to top.
- Serve with a rosemary sprig "swizzle stick.

LEMON SPRITZ
A lemon spritz is a classic Italian cocktail that is popular along the Amalfi Coast. It is similar to an Aperol Spritz, but is made with limoncello instead of Aperol. You just need three ingredients (plus ice) and 5 minutes to prepare this cocktail.

- Fill a pitcher with 4 cups of ice. Slowly pour the prosecco over. Add the limoncello and the soda water. Gently stir. Garnish with lemon slices and serve. Or to make Lemon Spritzes individually, pour half a glass of prosecco, add a shot of limoncello, a splash of soda water, and some ice cubes.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, lemon zest, lemon juice and vanilla. Combine flour and salt; gradually add to creamed mixture and mix well. , Using a cookie press fitted with the disk of your choice, press dough 1 in. apart onto ungreased baking sheets. - Cut the lemons into pieces, put in a saucepan with the water and bring to the boil.
- Reduce the heat and simmer gently for 10-15 minutes, until the fruit is soft.
- Add the sugar and stir until dissolved.
- Remove from the heat, cover and cool.
- Strain before using.
