BISTRO STEAK
Like all classic bistro fare, this grilled steak is simplicity itself. Marinate 30 minutes in dressing, brush with BBQ sauce, and voila-simplicity!

Steps:
- Pour dressing over steak in shallow dish; turn to evenly coat both sides of steak. Refrigerate 30 min. to marinate.
- Heat grill to medium heat. Remove steak from marinade. Discard marinade.
- Grill steak 13 to 16 min. or to medium doneness (160°F), turning and brushing occasionally with barbecue sauce for the last few minutes.

- Combine 2 teaspoons oil, 2 teaspoons thyme, 1/4 teaspoon salt, 1/4 teaspoon pepper, and potatoes in a bowl. Spread potato mixture in an even layer on a baking sheet; bake at 400° for 30 minutes or until browned, stirring every 10 minutes.
- Heat a medium ovenproof skillet over medium heat. Add remaining 1 tablespoon oil; swirl. Sprinkle steak with remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper. Add steak to pan; cook 10 minutes, turning to brown all sides. Place pan in oven; bake at 400° for 12 minutes for medium-rare or until desired degree of doneness. Place steak on a cutting board; let stand 5 minutes.
- Wipe out pan with paper towels. Heat pan over medium-high heat. Add remaining 2 teaspoons thyme and shallots to pan; sauté 30 seconds. Add wine; cook until liquid almost evaporates, scraping pan to loosen browned bits. Add stock; cook 4 minutes or until liquid is reduced to 1/3 cup. Remove pan from heat; stir in butter. Cut steak across the grain into thin slices. Divide steak between 2 plates; drizzle with red wine sauce. Serve with potatoes.

- Heat a pan, preferably a cast iron skillet, over high for 5 minutes. Generously season steaks with sea salt and pepper.
- Drizzle a small amount of evoo on steaks and place in the preheated pan. Brown steaks on the first side for 7 minutes. Turn steaks and transfer the pan to 350°F oven. Cook steaks in the oven for 7 to 10 minutes for medium rare. Transfer steaks to prepared baking pan. Lightly cover pan with foil, and let steaks rest for 10 minutes.
- Return hot cast iron pan to a burner. Add shallots and mushrooms to the pan, and sauté for 5 to 7 minutes, or until browned. Add garlic and continue cooking 1 minute more.Add wine and chicken broth; reduce by half. Sauce should coat a the back of a spoon.
