Bisquick® Gluten-Free Lemon Squares image

A buttery, crumbly Bisquick® Gluten Free mix shortbread base is topped with a luscious, tangy-sweet lemon filling in this light and refreshing dessert bar.

1 cup Bisquick™ Gluten Free mix
1/2 cup butter, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel
3 tablespoons fresh lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
2 tablespoons butter, melted
Powdered sugar

Steps:

  • Heat oven to 350°F. In medium bowl, mix Bisquick mix, 1/2 cup butter and 1/4 cup powdered sugar until blended. (Mixture will be crumbly.) Press in bottom of ungreased 8-inch square pan. Bake 20 minutes or until lightly browned.
  • In medium bowl, mix granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on medium speed 3 minutes or until light and fluffy. Beat in melted butter. Pour over hot crust.
  • Bake 25 to 26 minutes or until no indentation remains when touched lightly in center. Cool completely in pan on cooling rack, about 1 hour. Refrigerate 2 hours or until well chilled. Sprinkle with powdered sugar. Cut into 4 rows by 4 rows. Store covered in refrigerator.

Lemon Cream Cheese Bars image

Dessert ready in less than an hour! Enjoy this lemon bar recipe made using Bisquick Heart Smart® mix.

1 1/2 cups Bisquick Heart Smart® mix
3/4 cup graham cracker crumbs
1/2 cup packed brown sugar
1/2 cup butter or margarine
1/2 cup lemon curd
6 oz 1/3-less-fat cream cheese (Neufchâtel), softened

Steps:

  • Heat oven to 375°F. Grease 8-inch square (2-quart) glass baking dish. In large bowl, stir Bisquick mix, graham cracker crumbs and brown sugar. Cut in butter using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Set aside.
  • In small bowl, mix lemon curd and cream cheese until blended.
  • In pan, press 2/3 of crumb mixture. Spread cream cheese mixture over crumbs to within 1/4 inch of edge. Top with remaining crumb mixture, pressing gently into filling.
  • Bake 23 to 27 minutes or until edges are light golden brown. Cool completely. For bars, cut into 6 rows by 5 rows. Store in refrigerator.

1 cup Reduced-Fat Bisquick®
2 tablespoons powdered sugar
2 tablespoons firm margarine or butter
3/4 cup granulated sugar
1/2 cup fat free cholesterol free egg substitute , 4 egg whites or 2 eggs
1 tablespoon Reduced-Fat Bisquick®
2 teaspoons grated lemon peels
2 tablespoons lemon juice
Lemon Glaze (below)
Lemon Glaze:
3/4 powdered sugar
1 tablespoon plus 1 1/2 teaspoons lemon juice

Steps:

  • 1. Heat oven to 350°. Mix 1 cup Bisquick and the powdered sugar in small bowl. Cut in margarine, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Press mixture in bottom and 1/2 inch up edges of ungreased square pan, 8 x 8 x 2 inches.2. Bake about 10 minutes or until light brown. Mix remaining ingredients except Lemon Glaze pour over baked layer.3. Bake about 25 minutes or until set and golden brown. While warm, loosen edges from sides of pan. Spread with Lemon Glaze. Cool completely, about 1 hour. 2 1/2 cups Original Bisquick™ mix
2/3 cup granulated sugar
1/4 cup butter or margarine, melted
3 eggs
3/4 cup milk
1 teaspoon vanilla
3 tablespoons grated lemon peel
1/2 cup powdered sugar
1 tablespoon lemon juice

Steps:

  • Heat oven to 325°F. Spray bottom only of 9x5-inch loaf pan with baking spray with flour. In large bowl, beat all cake ingredients except lemon peel with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in lemon peel. Pour into pan.
  • Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of cake from pan with metal spatula. Remove cake from pan to cooling rack. Cool completely, about 1 hour.
  • In small bowl, mix powdered sugar and lemon juice with spoon until smooth. Drizzle glaze over cake.

BISQUICK LEMON COOKIES WITH ALMOND ICING



Bisquick Lemon Cookies with Almond Icing image

I like cooking with bisquick! It makes things easier. Now there is gluten free bisquick that I can use. This is easy and good.

4 cup(s) bisquick
1 cup(s) sugar
6 medium eggs, beaten (save a little to brush on cookies before baking)
- juice from 2 lemons
2 cup(s) confectioners sugar
2 teaspoon(s) butter, softened
- a few drops of almond extract (other)
- a few drops of hot milk

Steps:

  • Cookies: Mix first 4 ingredients. Roll out to 1/4 inch thickness and cut with a biscuit cutter (or your favorite cutter). Bake 400-425 for 8 minutes. When cool, ice with almond icing. Makes approximately 30 to 34 servings
  • Icing: Mix last 4 ingredients, beat thoroughly and spread lightly on cookies. If you don't want to ice cookies be sure to smear on beaten eggs to make it look shiney. Sprinkle with sugar. If you don't like almond extract use vanilla, pepperment etc - your choice.

I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

cooking spray
2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.
