OLD TIME KENTUCKY BACON MILK GRAVY FOR BISCUITS
I grew up with this gravy! Everyone has heard of sausage gravy. Well, it don't compare to this! After frying your bacon for breakfast, use the bacon dripping to make true Kentucky biscuit gravy. Fattening? Oh yeah, you better believe it! Worth it? Yes! Pour over biscuits and serve with crispy bacon and eggs in any style.

Steps:
- Heat bacon drippings in a skillet over medium heat; whisk flour into drippings until smooth. Reduce heat to low and cook the flour mixture until it turns a caramel brown color, stirring constantly, about 15 minutes. Be careful, the roux burns easily. Stir in salt and black pepper.
- Whisk 1/2 cup milk into the roux until thoroughly blended. Continue whisking milk into the gravy, 1/2 cup at a time, whisking in each amount of milk completely before adding more. Bring gravy to a simmer and whisk constantly until thick, smooth, and bubbling.

CREAMY BISCUITS AND GRAVY

- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Whisk 2 cups flour, baking powder, sugar, and salt together in a bowl; cut shortening into flour mixture with a pastry cutter until mixture is crumbly. Mix in egg and milk until incorporated. Turn dough out onto a well-floured work surface and knead for 1 minute.
- Roll dough out to a thickness of 3/4 to 1-inch thick, cut with a biscuit cutter, and place biscuits onto prepared baking sheet. Brush tops of biscuits with melted butter.
- Bake in the preheated oven until biscuits are golden brown, 8 to 10 minutes.
- Cook and stir sausage in a large skillet over medium heat until browned and crumbly, about 10 minutes. Drain excess grease. Stir 1/4 cup butter into sausage until butter has melted and mix in 1/4 cup flour until thoroughly combined. Pour evaporated milk and water into sausage mixture, bring gravy to a simmer, and reduce heat to low; simmer gravy until thickened, about 5 minutes. Season gravy with salt and black pepper to taste.
- Serve biscuits with sausage gravy.

MY BUTTERMILK BISCUITS WITH MILK GRAVY
When I first got married I wanted to find a good recipe for Buttermilk Biscuits. I knew how to make my Mom's Cat Head biscuits but wanted something different. I found this recipe in an old mountain recipe book up in Missouri and adapted it to fit my family. If you don't have a biscuit cutter, use a small juice glass (about 2 1/2" round) dipped in flour.

- FOR BISCUITS: Preheat oven to 425 degrees. In a large bowl, stir together flour, sugar, baking powder, and salt. Using a fork or pastry blender, cut in butter until mixture resembles coarse crumbs with some pea-size pieces of butter remaining. Add buttermilk, stirring until combined and dough pulls away from sides of bowl.
- Turn dough out onto a well-floured surface. Shape into a flat log, and fold into thirds. Roll into a 10x9" rectangle, approximately 1/2" thick. Using a 2 1/2" round cutter dipped in flour, cut dough, without twisting cutter. Re-roll scraps as needed.
- Place biscuits on pan, spacing 2 inches apart. Brush tops with egg. Bake until golden brown and cooked through, 12 to 15 minutes.
- FOR GRAVY: In a large skillet, cook sausage over medium-high heat, stirring until browned and crumbly, approximately 10 minutes. Sprinkle flour over sausage, stirring to coat. Slowly whisk in milk. Bring to a simmer, whisking constantly until thickened, approximately 10 minutes. Stir in salt, pepper, and garlic powder. Makes about 3 cups.
