Steps:
- In a small bowl, combine flour, salt, baking powder and baking soda. Whisk to combine and set aside.
- In a separate medium bowl, cream together butter, sugar and brown sugar until light and fluffy. This should take about 2-4 minutes. Add in egg and vanilla and beat to incorporate fully.
- Slowly add in the dry ingredients into the wet ingredients and beat just to incorporate (do not over mix!) Gently fold in sprinkles. Chill for at least 1 hour for best results. Roll the dough into balls before chilling to make it easy to pop them on the pan.
- While cookie dough is chilling, preheat oven to 350°F.
- Place cookie dough balls/scoops two inches apart on parchment lined cookie sheet. Bake 9-11 minutes, cookies will be puffed up and may not look 100% done, but pull them just before you think they are done. Allow to cool completely and enjoy. Store in an airtight container for about 3-5 days.

BIRTHDAY COOKIE
I got this out of my JC Penny/United Way Cookbook 1996. I've made this several times when the boys were younger - they loved it and they loved helping decorate them.

BIRTHDAY COOKIE CAKE
I came up with this recipe when my son requested an Oreo® cookie cake on his birthday. After looking online, the recipes listed seemed, well... lacking. This cake is relatively simple to make and looks beautiful.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round baking pans.
- Stir together sugar, flour, cocoa, baking powder, baking soda, and salt for cake in a large bowl. Add milk, oil, eggs, and vanilla; beat with an electric mixer on medium speed for 2 minutes. Stir in boiling water; batter will be thin. Pour batter into the prepared pans.
- Bake in the preheated oven until a toothpick inserted in the middles comes out clean, 30 to 35 minutes. Remove from the oven and cool for 10 minutes in the pans. Invert carefully onto wire racks and let cool completely, about 30 minutes.
- Prepare whipped cream by beating cream, sugar, and vanilla in a large mixing bowl on high speed until soft peaks form in the mixture. Stir in crushed cookies.
- Frost the cooled cake cake with whipped cream, adding some in between layers. Place cake on a paper-lined surface. Chill any unused whipped cream.
- Bring cream for glaze to a boil in a small saucepan over medium-low heat. Remove from the heat and add chocolate chips; stir until melted.
- Spread glaze over the cake, allowing some to flow down over the sides. Decorate the top of the cake with remaining crushed cookies. Pipe any remaining whipped cream on the top and around the edges of the cake.
