BIRDIE BARS (GLUTEN-FREE)

Birdie Bars (Gluten-Free) image

Diabetic-friendly, gluten-free snack that is transportable. You can use a combination of any nuts and seeds you like. For a liquid sweetener, I used coconut palm syrup, but you could also use other low-GI sweeteners, such as Jerusalem artichoke syrup or yacon syrup.

CRANBERRY TIRAMISU (GLUTEN-FREE, DIABETIC-FRIENDLY)

Cranberry Tiramisu (Gluten-Free, Diabetic-Friendly) image

Instead of making the sponge from scratch, you can also use 1 1/2 packages of commercial gluten-free lady fingers, although the glycemic index would be higher. For more healthy, gluten-free, low-GI, pesco-vegetarialn recipes, please visit my blog, www.InnerHarmonyNutrition.com.

1 teaspoon baking powder
1/2 cup erythritol, xylitol (I used erythritol) or 1/2 cup coconut sugar (I used erythritol)
2 eggs, beaten
1/3 cup milk (I used almond milk) or 1/3 cup non-dairy milk (I used almond milk)
100 ml water
1 cranberry tea bag (I used Lipton cranberry pomegranate green tea)
1 teaspoon erythritol, xylitol or 1 teaspoon coconut sugar
2 cups cranberries
3/4 cup water
1/2 cup erythritol, xylitol or 1/2 cup coconut sugar
1 pinch salt
1 lime, juiced
2 teaspoons potato starch
2 egg yolks (optional)
8 ounces mascarpone cheese
3 tablespoons and 1 tsp rum
1 teaspoon vanilla extract
1/4 cup erythritol, xylitol or 1/4 cup coconut sugar
300 ml whipping cream

Steps:

  • Preheat the oven to 350ºF/180ºC degrees. Line an 8 x 8 inch (20 cm x 20 cm) pan with parchment paper.

  • Transfer the batter to the lined pan and bake for 20 minutes.
  • Lift the sponge along with parchment paper from the pan and place it on a rack to cool.

(GLUTEN FREE) MAGIC COOKIE BARS

(Gluten Free) Magic Cookie Bars image

I did a combination of two recipes, peanut butter cookies with three ingredients and magic cookie bars. My brother-in-law loves magic cookie bars but is now gluten-free. I have been trying to come up with desserts for him so he doesn't feel left out. This is an amazing dessert and will stay fresh for days...if they last that long in your house! Perfect for Passover - no flour!

STARBUCK'S COPYCAT OAT BARS (GLUTEN FREE)

Starbuck's Copycat Oat Bars (Gluten Free) image

I love Starbuck's oat bars and wanted to make them myself. I found this recipe and while not quite the same as theirs, it's very good. (Update. I just bought a Starbuck's oat bar to compare side by side and think these actually taste better and the nutritional information for the homemade ones is much better!) Time to prepare includes 1/2 hour chilling time.

Time 1h3m

Yield 16 bars, 16 serving(s)

Number Of Ingredients 8

4 cups oats
1/2 teaspoon salt
1 teaspoon cinnamon
120 g butter (1/2 cup)
60 g brown sugar (1/2 cup)
80 g honey (1/4 cup)
1/4 cup water
1 teaspoon vanilla

Steps:

  • Grind 1/2 of the oats in a blender to a fine grind. Grind the other half of the oats to a coarse grind. I use large flake oats. Use certified gluten free if gluten is an issue.
  • Add salt and cinnamon. Combine well and set aside.
  • In a pot, place the remaining ingredients except the vanilla. Use coconut oil if you need to make this vegan friendly.
  • Bring to a boil and then simmer for 2 1/2 minutes.
  • Remove from heat and stir in vanilla.
  • Add the warm mixture to the dry and mix well.
  • Firmly press the mixture into a 7x13 pan sprayed with cooking spray.
  • Cool in the fridge for 1/2 hour or more.
  • Cut into 16 squares.
  • Store in the freezer for several weeks (if you manage to not eat them all)!

CHICKEN DIVAN GLUTEN FREE

Chicken Divan Gluten Free image

Courtesy of the Hillbilly Housewife. We used arrowroot starch instead of flour to make it gluten friendly. I also added some sage and rosemary and it was quite good. Adapted slightly.

Provided by WI Cheesehead

Categories     Chicken

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 15

1/8 cup butter
1/8 cup coconut oil (or all butter)
1 onion, chopped
1 garlic clove, minced
1/3 cup arrowroot or 1/3 cup flour
1 1/2 cups chicken broth
1 1/2 cups milk
2 -3 cups leftover cooked chicken, chopped
1 teaspoon salt
1/4 teaspoon pepper
sage, to taste
rosemary, to taste
1/8 cup white wine
1 lb cooked broccoli
1/2-1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 400°.
  • Melt the butter and coconut oil in a large saucepan and add onion and garlic; saute until the onions are tender and fragrant.
  • Stir in arrowroot powder (or flour) until it is absorbed by the fat and clinging to the vegetables.
  • Gradually add the chicken broth and milk. Cook and stir until the mixture boils, boiling for another minute.
  • Stir in the white wine, chicken and seasonings; cook and stir for a few more minutes to thoroughly heat the chicken and to blend the flavors.
  • Arrange the broccoli in a well oiled 9x13-inch baking pan. Pour the chicken mixture over the broccoli.
  • Sprinkle the cheese over the mixture and bake for about 20 minutes.
  • Serve with gluten free bread or noodles.
