NEW ORLEANS-INSPIRED BBQ SHRIMP



New Orleans-Inspired BBQ Shrimp image

This sautéed barbecue shrimp in a Worcestershire-spiked butter sauce is one of those dishes you can throw together at a moment's notice.

Number Of Ingredients 12

1 teaspoon paprika
1 teaspoon ancho chili powder
1 teaspoon ground cumin
1 teaspoon sugar
¾ teaspoon salt
2 pounds extra large or jumbo shrimp, peeled and deveined, thawed if frozen
6 tablespoons unsalted butter
3 large cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice, from 1 lemon
2 tablespoons water
3 scallions, dark green parts, thinly sliced

Steps:

  • Mix the paprika, ancho chili powder, cumin, sugar and salt together in a large bowl. Add the shrimp to the spices and toss to coat evenly. Set aside.
  • Melt the butter over medium heat in a 12-inch skillet. Add the garlic and cook, stirring with a wooden spoon, for one minute. Do not brown. Add the shrimp and continue cooking over medium heat, stirring frequently, until the shrimp are almost cooked but still opaque in spots, 3 to 4 minutes. Add the Worcestershire sauce, lemon juice and water and cook until shrimp are done, 1 to 2 minutes more. Scatter the scallions over top and serve.

Billy Tauzin, a former Louisiana congressman and author of "Cook and Tell," shares his recipe for barbecue shrimp, his Cajun specialty. This lunch or dinner recipe is easy to prepare, requiring only a handful of spices.

1 cup (2 sticks) unsalted butter
1/2 cup olive oil
2 teaspoons finely minced garlic
4 whole bay leaves, finely crushed
2 teaspoons finely crushed dried rosemary leaves
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon coarse salt
Cayenne pepper, to taste
1 tablespoon paprika
1/2 teaspoon freshly ground black pepper
1 teaspoon freshly squeezed lemon juice
2 pounds large shrimp, in the shell and preferably with heads
Crusty baguette, for serving

Steps:

  • Preheat oven to 450 degrees. In a heavy-bottomed ovenproof saucepan, melt butter; add oil, stirring to combine. Add garlic, bay leaves, rosemary, basil, oregano, salt, cayenne pepper, paprika, black pepper, and lemon juice. Cook over medium heat, stirring constantly, until the sauce begins to boil. Reduce heat to low, and simmer, stirring frequently, 7 to 8 minutes. Remove from heat, and let stand at room temperature for at least 30 minutes.
  • Add shrimp, and stir to combine. Return to heat, and cook shrimp over medium heat until the shrimp turn pink, 6 to 8 minutes. Transfer saucepan to oven, and bake for 8 minutes. Remove from oven, and serve immediately with crusty baguette.

This simple marinade for shrimp is guaranteed to please. Passed down by my mother-in-law, it's without a doubt one of her greatest contributions to humankind. Serve over rice.

1 cup canola oil
¾ teaspoon hot pepper sauce (such as Tabasco®)
2 cloves garlic, crushed
¼ cup tomato-based chili sauce
1 lemon, juiced
1 teaspoon dried oregano
2 pounds peeled and deveined medium shrimp
16 skewers

Steps:

  • Whisk together the canola oil, hot pepper sauce, garlic, chili sauce, lemon juice, and oregano in a large glass or ceramic bowl. Add the shrimp and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the shrimp from the marinade, and shake off excess. Discard the remaining marinade. Thread about 4 shrimp onto each skewer.
  • Cook on the preheated grill until pink on the outside and no longer translucent in the center, about 3 minutes per side.

1/2 cup butter, cubed
1 medium onion, chopped
1 bottle (18 ounces) barbecue sauce
1 bottle (12 ounces) pale ale beer or nonalcoholic beer
2 pounds uncooked shell-on shrimp (31-40 per pound), deveined
French bread baguette, sliced

Steps:

  • Preheat oven to 350°. In a large saucepan, melt butter over medium-high heat. Add onion; cook and stir until tender, 8-10 minutes. Stir in barbecue sauce and beer., Place shrimp in a 13x9-in. baking dish. Pour barbecue mixture over top. Bake, uncovered, until shrimp turn pink, 20-25 minutes, stirring halfway through cooking. Serve with baguette slices.
