WILD BILL'S HOT DOG CHILI

2 tablespoons olive oil
1/2 yellow onion, chopped
4 pounds ground grass-fed beef
8 teaspoons chili powder
4 teaspoons ground cumin
1 1/2 teaspoons salt
Pinch saffron
20 cooked hot dogs in buns

Steps:

  • Heat a large pot over medium-high heat and add the olive oil and onions, stirring often until softened. Add the beef and brown, pouring off the excess fat if desired. Stir in 1 cup water, the chili powder, cumin and salt. Add another cup water and mix thoroughly. Cook on medium-high for 30 minutes, then add the saffron.
  • Simmer uncovered, stirring occasionally, until the meat is tender and the sauce is reduced and thickened, 1 1/2 to 2 hours. Cover and let cool to room temperature and then blend thoroughly in a food processor. Top the hot dogs with the chili and serve.

2 tbsp paprika
2 tbsp cumin
2 tsp garlic powder
1/2 tsp allspice
2 tsp cinnamon
2 tsp dry mustard

Steps:

  • Add ground meat and 2 cups water bring to a boil turn heat down to a simmer stir until meat is broke down and cooked. Add seasonings and beef broth (or water) to desired consistency summer for 2 hours add more broth or water if it get two thick.

BILL'S CROCK POT CHILI

This recipe uses the spicy flavor of green chili pepper, without the sharp heat of chili powder. The Chuck Blade Steak has enough marbling to remain soft and moist after 8 hours in the crock pot. If you like a little sweeter taste, use canned Stewed Tomatoes. There is nothing quite like chili to prove that Cooking is a Creative Sport.

1 lb beef (I like the chuck blade steak cut into thumb nail size pieces)
1 (16 ounce) can tomato sauce
1 (16 ounce) can red kidney beans (with the liquid)
1 (16 ounce) can pinto beans (with the liquid)
1 cup onion (diced)
1 cup celery (diced)
1 (14 ounce) can diced tomatoes
1 cup jalapeno pepper (remove the seeds and dice)
2 teaspoons cumin powder
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons olive oil
1 tablespoon butter
1 tablespoon flour

Steps:

  • In a large skillet, heat the olive oil and start to brown the meat.
  • When the meat starts to lose it's pink color, push to one side of the pan and add the onions in the fat.
  • Saute the onions until nearly transparent, stir the meat and onions together and pour into a crock pot.
  • Add the rest of the ingredients, except the flour and butter, and cook on the low setting for 8 hours. Or if you are in a hurry, 4 hours will be enough on the crock pot's high setting.
  • Stirring occasionally About an hour prior to serving, melt the butter in a small frying pan, add the flour and stir until a brown paste has formed.
  • Add to the crock pot and stir.
  • Recipe # 85268 is a Vegetarian version of this chili, using rice.

2 lbs beef tenderloin
1/2 onion
2 ounces garlic, from a jar
12 ounces minced tomatoes
6 ounces tomatoes, paste
12 ounces black beans
1 (10 1/2 fluid ounce) can campbells chunky chili (seems like cheating but is not)
24 ounces water
chili powder, on table individually one adds to taste

Steps:

  • Brown tenderloin and onions in large skillet with lots of butter.
  • Add everything else with meat and onions to crock pot . Cook on low for two hours. Serve straight not stired.

Using buffalo meat in chili reminds us that this is the quintessential food of the American West. Leaner than beef, buffalo provides a robust flavor that stands up well to the spices and chilies in this rustic chili. It is widely available now in grocery stores, and only a bit higher in cost, In Houston it is about $4.50 lb. vs $3.99 lb for its lean and naturally raised beef equivalent. If you're like me, you look for meat from animals that are free roaming, fed veggie diets, and are NEVER treated with hormones of any kind. This recipe is for those that like their chili HOT, but you can cut the heat by using either/or for the peppers. Also to cut prep time, I used a presliced tri color pepper and onion medley intended for fajitas found in my convenience/produce case. I also had the meat already cooked and thawed from my freezer.

1 tablespoon vegetable oil
1 lb ground buffalo meat
1/2 medium onion, chopped
1 red bell pepper, seeded and chopped
1 anaheim chili, seeded and chopped (could also use poblano)
1 jalapeno pepper, seeded and chopped
2 garlic cloves, minced
1/4 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon ground coriander (dried ciliantro)
1 tablespoon chili powder (I used ancho)
1 dash sea salt, to taste
1 dash ground pepper, to taste
14 1/2 ounces crushed tomatoes (I used a fire roasted variety)
2/3 cup low sodium beef broth
1/2 tablespoon brown sugar
1 tablespoon Worcestershire sauce
2 tablespoons adobo sauce, from a can of chipotles in adobo
1 bay leaf
15 ounces black beans, drained and rinsed
15 ounces red kidney beans, drained and rinsed
1/3 bunch spring onion, green parts only, minced for garnish
3 tablespoons cilantro, chopped for garnish

Steps:

  • In a large dutch oven with a lid, heat the oil over medium heat and add ground buffalo to brown, breaking large chunks into smaller ones. Cook for about 5 minutes or until all meat is browned. Remove meat and drain excess fat if any, but leave about 1 tablespoon of fat in the pot.
  • Bring back to medium heat, add onions, red bell pepper, green bell pepper, and Anaheim and cook over medium heat for about 5 minutes, scraping bottom from time to time to get all the browned bits of meat folded in with the vegetables. Add the jalapeno pepper, cook for another 3 minutes stirring from time to time. Add garlic, cook for another minute and then add cumin, oregano, coriander, 1/2 teaspoon salt and pepper to taste. Let spices cook for another minute, stirring.
  • Return the cooked meat. Stir in the tomatoes and beef broth, brown sugar, Worcestershire sauce, adobo sauce and bay leaf, stir and raise heat and bring to a boil. Once boiling, taste sauce and adjust salt and pepper to taste. Lower heat to a slow simmer, cover with a lid and cook for about 30 mintues. Add beans, continue simmering, covered, for another 10 minutes or until the beans are warmed through. Serve in bowls and garnish with chopped cilantro and green onions.
  • Recipe Variation: To add a smoky depth of flavor, you can roast the peppers before adding. Also, you can mix and match your favorite beans to enhance the appearance, or add another layer of flavor by substituting dark Mexican beer, such as Negra Modelo, for the beef stock.
  • Ingredient Note: The canned chipotle peppers in adobo sauce called for in this recipe is my latest grocery store gem! The smoky and almost sweet barbeque flavor compliments just about any dish. Let me know what you think as well!

2 oz dried ancho chiles (4 large), stemmed and seeded
6 large garlic cloves, 3 of them finely chopped
1 tablespoon salt, or to taste
1 1/2 tablespoons ground cumin
1 1/2 tablespoons chili powder (not pure chile)
4 lb well-marbled beef brisket or boneless chuck, trimmed and cut into 1 1/2- to 2-inch pieces
3 to 4 tablespoons vegetable oil
1 (28- to 32-oz) can whole tomatoes in juice
1/4 cup canned chipotle chiles in adobo
1/2 cup coarsely chopped fresh cilantro
1 1/2 lb white onions, chopped (4 cups)
1 tablespoon dried oregano (preferably Mexican), crumbled
1 to 4 fresh serrano or other small green chiles, finely chopped, including seeds (1 is fine for most tastes; 4 is the eight-alarm version)
1 (12-oz) bottle beer (not dark)
2 cups water
2 1/2 cups cooked pinto beans (optional; 30 oz), rinsed if canned
Accompaniments: cubed avocado; chopped white onion; shredded Cheddar; chopped fresh cilantro; sour cream

Steps:

  • Soak ancho chiles in hot water to cover until softened, about 30 minutes. Drain well.
  • While chiles soak, mince 1 whole garlic clove and mash to a paste with 1/2 tablespoon salt, 1/2 tablespoon cumin, and 1/2 tablespoon chili powder. Pat beef dry and toss with spice mixture in a large bowl until coated.
  • Heat 2 tablespoons oil in a wide 6- to 7-quart heavy pot over moderately high heat until hot but not smoking, then brown beef in 3 or 4 batches, without crowding, turning occasionally, about 5 minutes per batch (lower heat as needed; spice mixture burns easily). Transfer beef as browned to another bowl. (Do not clean pot.)
  • Purée anchos in a blender along with tomatoes (including juice), chipotles in adobo, cilantro, remaining 2 whole garlic cloves, and remaining 1/2 tablespoon salt until smooth.
  • Add enough oil to fat in pot to total 3 tablespoons, then cook onions and chopped garlic over moderate heat, stirring and scraping up brown bits from beef, until softened, 8 to 10 minutes. Add oregano, remaining tablespoon cumin, and remaining tablespoon chili powder and cook, stirring, 2 minutes. Add chile purée and 1 chopped serrano and simmer, stirring, 5 minutes. Stir in beer, water, and beef along with any juices accumulated in bowl and gently simmer, partially covered, stirring occasionally and checking often to make sure chili is not scorching, 2 hours.
  • Taste sauce, then add more serrano if desired and continue to simmer, partially covered, until beef is very tender and sauce is slightly thickened, 1 to 2 hours more. (If chili becomes very thick before meat is tender, thin with water as needed.)
  • Coarsely shred meat (still in pot) with 2 forks and cool chili completely, uncovered, then chill, covered, 1 to 2 days to allow flavors to develop.
  • Reheat over low heat, partially covered, stirring occasionally, until hot, about 30 minutes. Add beans (if using) and simmer, stirring, 5 minutes.
