PORK, APPLE AND SAGE MEATLOAF
Ground pork sweet apples and fresh sage are baked topped with ketchup.

Steps:
- Preheat oven to 400°F/200°C.
- Wrap the grated apples in a clean towel and squeeze out as much moisture as you can. THIS IS AN IMPORTANT STEP SO YOU DON'T GET SOGGY MEATLOAF.
- To a large bowl add the ground pork, apples, onion, oregano, sage, egg, breadcrumbs, milk, salt and pepper. Mix until everything is well combined.
- Add the meat mix to a 9 x 13. inch (23 x 33 cm) casserole dish and mold into a meatloaf shape, 10 inches long and 5 inches wideT (25 x 13 cm). Top with ketchup and pour beef broth to the bottom of the pan.
- Cover with foil and bake for 30 minutes. Remove the foil and contine to bake for 30 more minutes, or until a thermometer when inserted into the center reaches 165°F/74°F.
- Remove from the oven and allow to rest for 10 minutes before slicing and serving.
- To make the gravy using cornstarch, strain through a sieve and add to a saucepan. Mix a little cornstarch with water and stir into the gravy, simmer until thickened. Using flour, mix a little flour in a bowl with a little of the warm gravy, pour into the pan and whisk bringing to a simmer until thickened.

MOIST APPLESAUCE MEATLOAF
Steps:
- Preheat oven to 350 F.
- Lightly grease a 9 x 5 x 3-inch loaf pan.
- In a large bowl, combine the 2 kinds of ground meat with the chopped onion, egg, applesauce, breadcrumbs, 3 tablespoons of ketchup, salt, and pepper; mix thoroughly with your hands.
- Pat the meatloaf mixture into the prepared loaf pan.
- Bake the meatloaf in the preheated oven for 1 1/2 hours.
- If using the optional topping, take the meatloaf out of the oven about 10 to 15 minutes before it's done. Carefully pour off excess grease and spread the 4 tablespoons of ketchup or barbecue sauce over the top. Return the loaf to the oven and continue baking until it's done.
- The minimum safe temperature for ground beef and ground pork is 160 F (71.1 C). If in doubt, check the temperature by inserting an instant-read thermometer into the center of the loaf.
- Let the meatloaf cool for 10 minutes and then remove it to a platter. Slice and serve.

BILLS APPLE SAUSAGE MEATLOAF
There is a man that works in the meat department of the store where my DD works that can always be depended on for the most wonderful recipes he has developed. The other day Bill shared a taste of this meatloaf with me, and after the teaser I simply had to have the recipe. I made this up last night, but doubled the recipe and had two loaves, one for dinner and the other to freeze for later. If you find you are texture challenged, you may find that you will want to mix a half sausage and half ground beef for the meat. This Loaf an appetizing blend of sweet and spicy, and will be something you'll be proud to serve your family as well as important company.

Steps:
- Mix first seven ingredients and 1/2 of the jar of Apple Butter together in large bowl until well blended. (Be sure to wash your hands well before starting).
- Put meat into loaf pan and form a loaf (or divide into muffin tins for individual servings that can be frozen for later). Spread remainder of Apple butter over loaf.
- Bake at 350 degrees for 30- 45 minutes until done.
- To make the gravy simply pour pan drippings into sauce pan. Mix 1 tablespoon flour with 3/4 cup water and pour into drippings slowly over low heat, stirring often until thickened to your liking. You may need to add more water if you want.
- Serve with mashed potatoes, and a nice crisp green salad.

HOMESTYLE SAUSAGE/GROUND BEEF MEATLOAF
This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
- Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
- Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.

BILL BLASS'S MEATLOAF
This homespun, bacon-wrapped version of the American classic is attributed to Bill Blass, the world-famous clothing designer of the 60s, 70s and 80s, who is perhaps best known for dressing First Lady Nancy Reagan and the upper echelons of New York society. While he became hugely successful - he reportedly sold his business for $50 million in 1999 - his culinary tastes remained firmly Midwestern. From his 2002 obituary in The Times: "A man of robust but simple tastes who would go out of his way for a hamburger, Mr. Blass would serve guests his own meatloaf recipe, followed perhaps by lemon meringue pie. He always maintained, only partly in jest, 'My claim to immortality will be my meatloaf.'" This is his recipe.

- Preheat the oven to 350 degrees. Oil an 8-by-4-inch loaf pan. In a heavy skillet over medium heat, saute the celery and onion in the butter until soft, about 5 minutes. Scrape into a large mixing bowl and cool.
- When the onions are cool enough to handle, add the meats, parsley, sour cream, bread crumbs, thyme, marjoram and salt and pepper to the bowl. - Preheat oven to 350F degrees; oil a 8x4 loaf pan and set aside.
- In a large, heavy skillet over medium heat, saute the celery and onion in the butter until soft; remove from heat and set aside to cool for 5 minutes.

- Preheat the oven to 400 degrees. If using a broiler pan to bake your meatloaf, line the bottom of the pan with foil and spray the boiler rack with non-stick spray for easy clean-up.
