BEEF MACHACA (TACO FILLING)

This came off a Texas website. Really flavorful. Overnight marinating is needed. You can also crock it after the browning process. Freezes well.

1/4 cup Worcestershire sauce
juice of two lime
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup vegetable oil or 1/2 cup olive oil
2 -3 lbs chuck roast or 2 -3 lbs skirt steaks, trimmed and cut into 1/4 lb portions
1 large texas sweet onion, diced (yellow onion)
1/2 green bell pepper, diced
4 garlic cloves, pressed
1 fresh jalapeno pepper, minced
1 (14 ounce) can diced tomatoes or 1 (14 ounce) can tomatoes and green chilies
1/4 cup beef broth
1 tablespoon dried oregano
1 tablespoon ground cumin
1 teaspoon hot pepper sauce such as Tabasco sauce
salt and pepper
vegetable oil for searing the beef

Steps:

  • For the marinade, combine all the ingredients in a bowl then whisk them to form an emulsion. Add the beef making sure every piece is evenly coated. Cover and refrigerate.
  • Marinate the beef overnight in a bowl in the refrigerator. Before preparing, drain thoroughly and allow meat to come up to room temperature for about 30 minutes.
  • In a large soup pot, heat a few tablespoons of oil over medium-high heat until very hot. Sear the beef a few pieces at a time to develop a rich brown color on all sides as well as on the bottom of the pan. Do this in several batches if the pot is too crowded.
  • When all the beef is browned nicely and removed from the pan, add the onions, peppers, and garlic to the hot pan. Sauté for a few minutes then add the remaining ingredients to the pan along with the beef. Bring to a boil, scraping the browned bits off the bottom of the pan. Reduce heat to low, cover and simmer slowly for about 2 hours. The meat should be very tender and should easily fall apart when pricked with a fork.
  • Remove from heat, remove meat to a cutting board and shred with a pair of forks. Return to the pot and bring to a simmer, uncovered. Reduce the liquid until very thick, almost dry. At this point, adjust the seasoning with salt, pepper, and whatever additional heat you want to add if any.
  • Serve with tortillas, cheese, salsa, lettuce and guacamole for a great beef taco. Portion and freeze the remaining machaca in zip lock bags for later use.

1 tablespoon vegetable oil
3 cups finely chopped onions (about 3 medium onions)
6 garlic cloves, minced
1 jalapeno chile, minced (seeds and ribs removed for less heat, if desired)
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon ground coriander
2 pounds lean ground beef
1 can (28 ounces) crushed tomatoes
Coarse salt

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onions; cook until softened, about 5 minutes. Add garlic, jalapeno, chili powder, cumin, and coriander; cook, stirring, 1 minute.
  • Add beef; cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes. Stir in tomatoes; cook, stirring occasionally, until liquid has evaporated, 15 to 20 minutes. Season generously with salt.

I have found a lot of taco seasonings that use most of these ingredients, but by experimentation I like this recipe myself. However, try it first making a very small batch first. You may or may not agree with the proportions or ratio of spices in this. I like it this way, but you need to try a small bit first to see if you do before possibly ruining a whole dish if you don't.

6 tablespoons chili powder
3 -4 tablespoons cumin (less if desired)
2 tablespoons onion powder (or to taste) or 2 tablespoons garlic powder (or to taste)
1 tablespoon Mexican oregano
1/2 tablespoon coriander powder (not dried cilantro)
1 -2 teaspoon cayenne pepper (more or less to taste)
1 1/2 tablespoons granulated sugar (optional)

Steps:

  • Combine ingredients in a container with lid.
  • Shake vigorously.
  • Store in freezer until ready to use.

I have a recipe posted for taco seasoning and it's my go-to recipe anytime I need a package of taco seasoning mix - tastes so much better than the packaged stuff. For the last several years, I've written down the following recipe for every bridal shower I've attended where I was asked to bring a recipe. I finally decided that I should post it here. Serve with your favorite taco topping or as a salad or nachos. This recipe may also be used with ground turkey.

1 lb ground beef
1 garlic clove, minced
2 tablespoons dried onion, minced
2 teaspoons chili powder
2 teaspoons oregano
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon ground red pepper
3 tablespoons tomato paste
1 cup beef broth

Steps:

  • Coat a large skillet with spray oil.
  • Add ground beef to skillet along with garlic.
  • Cook over medium heat until browned - about 10 minutes.
  • Add dried onion, chili powder, oregano, cumin, salt, cinnamon and red pepper and stir well.
  • Add tomato paste and beef broth.
  • Bring to a boil and reduce heat, simmering until the liquid is reduced - about 15-20 minutes.
  • Serve with your favorite taco toppings.

1/4 cup instant minced onion or 2 tablespoons onion powder
1/4 cup paprika
2 tablespoons chili powder
1 tablespoon garlic powder
1 tablespoon season salt
2 teaspoons oregano
1 teaspoon ground black pepper
1 teaspoon cumin
1 teaspoon marjoram
1/2 teaspoon ground cinnamon
2 tablespoons cornstarch, mixed with
1/4 cup cold water (omit water if making dry mix)
5 lbs ground meat
4 cups water

Steps:

  • Brown ground meat and drain well.
  • In a large sauce pan, combine browned meat, 4 cups water and spices.
  • Bring to a boil, reduce heat and simmer 10 minutes.
  • Combine cornstarch and cold water and add to meat mixture.
  • Simmer a few minutes longer, until mixture has thickened.
  • If making a dry mix, combine cornstarch with spices and divide into 5 or 6 packets (foil or small plastic bags work well).
  • To use dry mix, brown 1lb of ground meat, combine with 3/4 cup water plus mix packet and simmer for 10 minutes.
