BEV'S CHICKEN NOODLE CASSEROLE
This dish was served to me at a friend's house. I loved it so she gave me her recipe. This can be made a day ahead, refrigerated and then baked right before serving. The preparation time on this could be cut by using canned chicken, (or cooking boneless pieces), and using canned chicken broth.

Steps:
- Boil (stew) the chicken, covered, in water to cover (about 2 quarts) for about 2 1/2 hours.
- Remove from water (reserve), debone and tear chicken meat into bite size pieces.
- Saute in the melted butter the bell pepper, celery and onion.
- Stir in the cheese.
- Add the olives, mushrooms and chicken.
- Boil in 3 cups of the stock water the pkg.
- of spinach noodles, until the water is absorbed.
- Add the noodles and can of mushroom soup to the chicken mixture and mix, (adding more stock[i cup] if needed for moistness), pour mixture into a large, greased casserole dish.
- Bake at 300 degrees F for 45 minutes (right before serving).

Easy to make and delicious. Serve with a salad and garlic bread. Reheats well. Another recipe from my Aunt Sylvia, the best cook.

Steps:
- Mix onions with noodles. Add chicken and seasonings.
- Add soup and mix well.
- Put mixture in greased 2 quart casserole dish.
- Sprinkle buttered bread crumbs or corn flake crumbs over top.
- Cover and bake at 325 degrees for 1 hour. Uncover 10 minutes before done and let brown.

This is a wonderful casserole to make on a cold winter day. Some homemade bread and a side salad and you have a full meal!

Steps:
- Mix soups, butter, milk and cheese in a 9 x 13 casserole dish, add noodles and chicken mixing well.
- Top with Shredded Cheese; Bake 350 degrees for 1 hour.
- If I have them I also like to crush cornflakes and add to the top, then sprinkle cheese and butter over them.

CREAMY CHICKEN NOODLE CASSEROLE
This is a "kid pleasing" recipe that will help them eat their veggies! This recipe comes from a resource at my local grocery store.

Steps:
- Cook egg noodles according to package directions. Drain and set aside.
- Heat butter in medium saucepan. Saute onions until transparent, approximately 4-5 minutes.
- Add chicken, vegetables, soups, milk, and seasonings. Cook over medium heat until broccoli is tender.
- Add cooked egg noodles and mix until thoroughly blended.
- Spread into a greased 9 x 12 baking dish. Cover.
- Bake at 350 degrees F for 20 minutes.
- Top with cheese and bake an additional 10 minutes.

Steps:
- Preheat oven to 350°.
- Cook noodles according to package directions, draining noodles 1 minute before fully cooked.
- In a large bowl, combine chicken, both cans of soup, cheese, soy sauce, milk (or stock or water), garlic and onion powder and season with salt and pepper as desired.
- Carefully fold in noodles.
- Grease a 9x13-inch baking dish and pour noodle mixture into dish.
- Mix melted butter and cracker crumbs and sprinkle over noodle mixture.
