This delicious pasta salad has all the familiar flavors of chicken, bacon and ranch. Yoghurt is substituted for the traditional mayonnaise in this recipe.

2 1/2 cups uncooked rotini pasta (8 oz)
1 1/2 cups chopped deli rotisserie chicken
1/2 cup chopped cooked bacon
1 1/2 cups chopped plum (Roma) tomatoes
1/2 cup sliced green onions
1 1/4 cups Mountain High™ whole milk plain yoghurt
1/4 cup lowfat (1%) milk
1 package (1 oz) ranch salad dressing & seasoning mix
1/4 teaspoon black pepper

Steps:

  • Cook and drain pasta as directed on package; rinse with cold water. In large bowl, mix pasta, chicken, bacon, tomatoes and green onions.
  • In small bowl, using whisk, beat yoghurt, milk, ranch dressing mix and black pepper. Add to pasta mixture; stir until mixture is incorporated.
  • Cover and refrigerate 1 hour before serving.

8 slices bacon, diced
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 package (1 lb) cavatappi pasta
1 cup frozen sweet peas (from 12-oz bag)
1 cup chopped carrots
6 green onions, sliced
1 cup ranch dressing
1 large tomato, diced

Steps:

  • In large skillet, cook bacon until crisp; drain on paper towels. In bacon drippings, cook chicken over medium-high heat about 5 minutes, stirring occasionally, until no longer pink in center. Remove from heat; cool.
  • Meanwhile, cook pasta as directed on package, adding peas and carrots during last 3 minutes of cooking time. Drain; rinse with cold water to cool.
  • In large bowl, toss bacon, chicken and onions. Add pasta, peas and carrots. Add dressing; toss to combine. Garnish with tomato. Serve immediately or cover and refrigerate until serving time.

1/2 pound macaroni pasta (250g) - use gluten free if needed
1 bottle ranch dressing
1 teaspoon seeded mustard
2 celery stalks, finely diced
1 large carrot, finely diced
1/2 cup frozen peas
1/2 cup frozen or fresh corn kernals
1/4 cup chopped parsley
2 Tbsp mayonnaise (whole egg)
2 Tbsp milk (double this if you are making this for the following day)
1/2 rotisserie chicken, shredded (about 2 cups in total)

Steps:

  • 1. Cook the pasta as per the directions in salted boiling water. Strain well and cool by running cold water of them. Pour into a large salad style bowl
  • 2. While the pasta is cooking, chop the veggies and place into the bowl along with the shredded chicken, chopped parsley, seeded mustard (don't leave it out - this is what gives is that something extra) mayonnaise, ranch dressing and poor the milk into the empty ranch bottle to get all the "bits from the bottom out", and pour into the bowl. Stir.
  • 3. Pour in the cooked and cooled pasta. This is best if left to rest an hour or two in the fridge, but can be enjoyed straight away. This is great the next day and perfect for BBQ's, potlucks etc.

1 box Betty Crocker™ Suddenly Salad® ranch & bacon pasta salad mix
1/2 cup ranch dressing
1/2 teaspoon dried dill weed
1 1/2 cups small broccoli florets
1/2 cup thinly sliced red bell pepper, cut into bite-size strips
1/2 cup cucumber slices, halved
4 medium green onions, sliced (1/4 cup)

Steps:

  • Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • In medium bowl, mix seasoning mix, dressing and dill weed. Stir in pasta and remaining ingredients. Store any remaining salad covered in refrigerator.

1/3 cup mayonnaise
3 tablespoons sugar
3 tablespoons white wine vinegar
2 teaspoons poppy seed
1/2 teaspoon salt
1/2 teaspoon celery salt
1/2 teaspoon dry mustard
1 box (16 oz) gemelli pasta
2 cups diced cooked chicken
1 cup sweetened dried cherries
1/2 cup sliced celery
1/2 cup slivered almonds, toasted

Steps:

  • In small bowl, mix dressing ingredients with wire whisk until well blended. Cover; refrigerate until ready to use.
  • Cook and drain pasta as directed on package. Rinse with cold water to cool; drain well.
  • In large bowl, mix cooked pasta, chicken, cherries and celery. Mix dressing mixture again with wire whisk to recombine; pour over salad and toss gently to coat. Refrigerate 1 to 2 hours before serving to chill salad and blend flavors. Stir in almonds.

1/3 cup sour cream
3 tablespoons water
1/2 teaspoon chili powder
1 cup cherry tomato halves
1/2 cup julienne strips green bell pepper
2 green onions, chopped
1 cup cubed cooked chicken or roast beef
Tortilla chips
1/2 cup shredded Cheddar cheese (2 ounces)
Old El Paso™ salsa (any variety)

Steps:

  • Empty pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil about 12 minutes, stirring occasionally.
  • Drain pasta; rinse in cold water. Shake to drain.

1 package (5 ounces) dried cranberries
1 cup ranch salad dressing
