Not sure if this is authentic as a Mojo or not- has cilantro. Sounds good for pork and other things too!

1/2 cup olive oil
6 garlic cloves, thinly sliced crosswise
1/2 cup fresh lime juice
4 tablespoons fresh orange juice
1/8-1/4 cup water
1 teaspoon ground cumin
1/2 teaspoon oregano
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup fresh cilantro, chopped

Steps:

  • Heat oil in saucepan over medium heat.
  • Add garlic and cook until fragrant and pale golden brown., 2-3 minutes.
  • Stir in juices, a bit less than 1/4 cup water, cumin, oregano, salt and pepper.
  • Bring to a rolling boil.
  • Adjust seasoning.
  • Cool to room temperature, then stir in cilantro.
  • Stir well before serving.

A great marinade, dip for chips or veggies, & a sauce for meats. I would eat this stuff on just about anything. I usually dump everything into the blender and puree it until it is smooth.

8 garlic cloves
1 teaspoon salt
1 medium onion, thinly sliced
1/2 cup extra virgin olive oil
1/2 cup sour orange juice (SEE NOTE)

Steps:

  • NOTE: If you can't find sour orange juice, use 1/2 cup orange juice combined with 1/2 cup lemon juice.
  • Crush garlic and salt in a mortar and pestle or in a food processor until it forms a smooth paste. Combine garlic, onion, and orange juice in a bowl.
  • Heat oil in a skillet, add mixture, and stir for 3 minutes.
  • This sauce can be used immediately or stored in refrigerator and reheated.

Mojo de ajo is a garlic and cilantro sauce with delicious citrus notes that is very popular in Cuba.

10 cloves garlic (, chopped or crushed, to taste)
1 bunch fresh cilantro (, finely chopped)
1 small white onion (, finely grated)
½ cup lemon juice (, freshly squeezed)
2 oranges (, freshly squeezed)
3 tablespoons white vinegar
¾ cup extra virgin olive oil
Salt
Black pepper (, freshly ground)
2 glass jars of 10 oz / 300 ml (, sterilized)

Steps:

  • Heat the olive oil in a small saucepan, removing it from the heat just before reaching its smoke point.
  • In a bowl, combine all the ingredients and add the hot oil.
  • Divide the resulting sauce into previously sterilized glass jars and wait for the mixture to cool before closing the jars tightly and storing in the refrigerator.
  • Mojo de ajo is served, for example, with steamed or fried yuca. It is also used as a marinade or garnish for many dishes, especially for fish and seafood.

1/2 cup olive oil
8 large cloves garlic, thinly sliced crosswise
2/3 cup fresh sour orange juice (or 1/2 cup fresh lime juice and 3 tablespoons fresh grapefruit juice)
1/3 cup water
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 1/2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped fresh cilantro or flat-leaf parsley

Steps:

  • Heat olive oil in deep saucepan over medium heat. Add garlic, and cook until fragrant and pale golden brown. Do not let brown too much, or else garlic will become bitter.
  • Stir in sour orange juice (or lime juice and grapefruit juice), water, cumin, oregano, salt and pepper. Stand back, because the sauce may spatter. Bring to rolling boil. Correct the seasoning, adding more salt and pepper, if needed. Let cool to room temperature, and then stir in cilantro or parsley. Store in bottle or jar with tight-fitting lid; shake well before serving. Serve with grilled pork, chicken, seafood and vegetables.

6 garlic cloves (minced)
1 cup large onion (sliced thin)
2/3 cup sour orange juice or 2/3 cup lime juice
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • For the mojo, you will need a large bowl. In a large bowl, pour the sour orange juice or lime juice, oregano, salt, pepper, garlic and sliced onion into the bowl and stir.
  • Heat the olive oil over medium-high for 2 minutes, then when hot, pour olive oil into bowl. Be careful not to get burned, since some of it might splatter out.
  • Mix the mojo ingredients, then let sit for 30 minutes.

1 teaspoon salt
1/4 cup fresh bitter orange juice or 4 tablespoons fresh lime juice

1/4 teaspoon ground cumin
1 pinch dried oregano, crushed
salt and pepper, to taste

Steps:

  • Crush together garlic cloves and salt with a mortar and pestle, put into a medium bowl.
  • Stir in bitter fresh orange juice, or lime juice, and fresh orange juice, olive oil, chopped fresh oregano, cumin, crushed dried oregano, and salt to taste.

1 cup Fiber One™ original bran cereal
1 tablespoon finely chopped fresh cilantro
1 teaspoon finely chopped garlic
2 teaspoons grated orange peel
1 teaspoon onion powder
1 teaspoon dried oregano leaves
1 teaspoon ground cumin
1/4 teaspoon pepper
4 pork loin chops, 1/2 inch thick (4 oz each)
1/2 cup buttermilk
2 teaspoons olive oil
1 tablespoon finely chopped garlic
1/4 cup lime juice
2 tablespoons orange juice
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  • In shallow dish, mix cereal, 1 tablespoon cilantro, 1 teaspoon garlic, the orange peel, onion powder, oregano, cumin and pepper. Dip pork chops into buttermilk; coat completely with cereal mixture. Place on cookie sheet.
  • Bake 25 to 30 minutes or until pork is no longer pink in center.
  • Meanwhile, in 1-quart saucepan, heat oil over medium heat. Cook 1 tablespoon garlic in oil about 1 minute, stirring occasionally, until golden. Stir in lime and orange juices. Heat to boiling, stirring occasionally. Remove from heat; stir in 2 tablespoons cilantro. Cover; refrigerate until serving time. Serve with pork chops.

3 Tbsp fresh grapefruit juice
1/3 c water
1 tsp ground cumin
1/2 tsp ground oregano
1 tsp salt, or to taste
1/2 tsp black pepper
3 Tbsp chopped fresh cilantro or flat-leaf parsley

Steps:

  • 1. Heat oil in medium sized saucepan over medium heat. Add garlic and cook until fragrant and golden. Do not overcook garlic will become bitter.
  • 2. Stir in juice, water, cumin, oregano, and salt and pepper.
  • 3. Bring to a full boil. Check for seasoning and let cool until reaches room temperature.
  • 4. Store in refrigerator tightly closed.

This is a tangy garlic garlic-citrus sauce that is as beautiful to serve as it is to eat. I serve this along side sweet potato empanadas and carnitas. The recipe is from Sara Perry's "Everything Tastes Better with Garlic" by way of the Best American Recipe series. All of the ingredients should be fresh.

6 medium garlic cloves
1/2 teaspoon lime zest
3 tablespoons fresh lime juice
1/4 teaspoon orange zest
2 tablespoons fresh orange juice
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 cup extra virgin olive oil
fresh ground black pepper
1 tablespoon cilantro, minced (I omit)

Steps:

  • Blend the garlic, zest, juice, cumin and salt in a blender until the garlic is finely chopped.
  • With the machine running, slowly add the oil in a thin stream until emulsified.
  • Transfer to a small bowl and season to taste with pepper.
  • Stir in the cilantro.
  • The mojo can be made up to four days ahead, covered and refrigerated. Bring to room temperature before serving.

  • Heat oil in a small saucepan over medium. Stir in garlic, cumin, and oregano, then immediately remove from heat. Let cool 10-15 minutes. Stir in chile, lime juice, orange juice, and salt.
