- Preheat the oven to 425°F and prepare a large, rimmed baking sheet with parchment paper to make cleanup easier.
- Green beans should be washed and the rough ends trimmed. Using clean tea towels, pat them dry thoroughly (wet green beans turn soggy in the oven).
- Place the green beans on a baking sheet that has been sprayed with cooking spray. Drizzle the olive oil over the beans and season with salt to taste. Toss with your hands until all of the beans are lightly coated in oil. Arrange the green beans in a single layer across the pan.
- Unstirred, roast for 14 to 16 minutes, or until crisp-tender with some golden, caramelized areas. (If using skinny haricots verts, they may be ready a few minutes sooner.)
- Transfer to a serving dish and serve with any desired garnishes (see recipe notes for seasoning suggestions). Roasted green beans are best served warm, but they can be stored in the refrigerator, covered, for 4 to 5 days.

- Drain one can of the green beans. Empty both cans in to a medium sauce pan and add onions, bacon bits, salt and pepper. Cover and cook on medium heat for about 10 minutes. The trick is to let it bubble and DO NOT take the lid off. The bacon bits and onions soften and enhance the flavor of the beans.

- Dice bacon. Fry to just crisp (not extra crispy).
- Drain approximately half the liquid out of each can of green beans. Add green beans and their liquid along with the diced onions to sauce pan. Pour bacon and all drippings into sauce pan. Add chicken broth, salt and pepper. Bring to a boil then turn to medium, cover and cook for 45 minutes - 1 hour.

- Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
- Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
- Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
- Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
- Serve and enjoy.
- NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.
