SINCE our children left the nest, lasagna has been relegated to company fare since most recipes make enough for a crowd. But then I saw a recipe that rolled lasagna noodles into individual servings, and I adapted my original recipe to this efficient way of preparing it. Now my husband and I enjoy this entree often. -Virginia Foley, Manchester, New Hampshire

1/3 pound ground beef
2 tablespoons chopped onion
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes
1/2 teaspoon salt
1/2 teaspoon dried oregano
Dash cayenne pepper
1-1/4 cups 4% cottage cheese, drained
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1/4 teaspoon onion powder
6 lasagna noodles, cooked and drained
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add tomatoes, salt, oregano and cayenne; simmer for 10 minutes. , Spoon half of the meat sauce into a greased 9-in. square baking dish. Combine cottage cheese, Parmesan cheese, egg, parsley and onion powder; spread 1/4 cupful on each noodle. Carefully roll up and place seam side down over meat sauce. Top with remaining meat sauce. Sprinkle with mozzarella cheese. Cover and bake at 375° for 30-35 minutes or until heated through. Let stand 10 minutes before serving.

Make the most of your garden bounty with this irresistible dish of zucchini slices rolled up around a gooey filling of ricotta and mozzarella, baked with a tomato sauce and topped with crispy Italian bread crumbs.

4 medium zucchini, cut lengthwise into 16 (1/4-inch) strips
4 tablespoons olive oil
3/4 teaspoon salt
1 cup Muir Glen™ organic tomato basil pasta sauce (from 25.5-oz jar)
1 cup ricotta cheese (8 oz)
1 cup shredded mozzarella cheese (4 oz)
1/2 cup grated Parmesan cheese
2 cloves garlic, finely chopped
1/4 teaspoon crushed red pepper flakes
1 egg yolk
2/3 cup Progresso™ Italian panko crispy bread crumbs

Steps:

  • Heat oven to 425°F. Spray 8-inch square (2-quart) baking dish with cooking spray.
  • Brush both sides of zucchini slices with 2 tablespoons of the olive oil; season with 1/4 teaspoon of the salt. Place on ungreased large cookie sheet; roast 15 to 18 minutes or until zucchini is pliable enough to roll. Remove from oven; cool 5 minutes.
  • Spread pasta sauce in baking dish; set aside.
  • In medium bowl, mix ricotta, mozzarella, Parmesan, garlic, remaining 1/2 teaspoon salt, the pepper flakes and egg yolk.
  • In small bowl, mix bread crumbs and remaining 2 tablespoons oil.
  • Spread 1 rounded tablespoon ricotta filling evenly over each zucchini strip. Gently roll up, and place rolls on sides (so spiral shows on top) in baking dish in 4 rows by 4 rows, keeping them close together. Top with bread crumb mixture.
  • Bake 15 to 20 minutes or until filling is heated through and crumbs are browned.
  • Let stand 10 minutes before serving.

12 lasagna noodles, uncooked
1-1/2 lb. extra-lean ground beef
4 cloves garlic, minced
2 cans (15 oz. each) tomato sauce
2 tsp. dried Italian seasoning
3/4 cup KRAFT 2% Milk Shredded Mozzarella Cheese
1/3 cup KRAFT Grated Parmesan Cheese
2 eggs, beaten
12 KRAFT 2% Milk Singles, cut in half

Steps:

  • Heat oven to 350ºF.
  • Cook noodles as directed on package, omitting salt. Meanwhile, brown meat with garlic in large skillet; drain. Return to skillet. Mix sauce and seasoning. Add 1 cup to meat mixture along with the mozzarella, Parmesan and eggs; mix well.
  • Drain noodles; rinse. Spread 1/3 cup meat mixture onto each noodle; top with one 2% Milk Singles piece. Roll up. Spread half the remaining sauce mixture onto bottom of 13x9-inch baking dish; top with lasagna rolls, seam sides down, and remaining sauce. Cover.
  • Bake 25 min. or until heated through. Top with remaining Singles pieces; bake 5 min. or until melted.

8 uncooked lasagna noodles
1/2 lb lean ground turkey
2 cloves garlic, minced
1 jar (26 oz) tomato pasta sauce
2 teaspoons Italian seasoning
1/2 teaspoon fennel seed, if desired
1 cup part-skim ricotta or cottage cheese
1/2 cup shredded carrot (1 small)
1 box (9 oz) frozen spinach, thawed, drained and squeezed dry
2 egg whites or 1 egg
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • Heat oven to 350°F. Cook lasagna noodles as directed on package. Drain; rinse with hot water.
  • Meanwhile, in 10-inch skillet, cook ground turkey and garlic over medium-high heat, stirring frequently, until turkey is no longer pink; drain, if necessary. Stir in pasta sauce, Italian seasoning and fennel. Reduce heat to low; simmer uncovered about 15 minutes, stirring occasionally.
  • In small bowl, mix ricotta cheese, carrot, spinach and egg whites. Spread each cooked lasagna noodle with generous 1/4 cup spinach filling to within 1 inch of one short end. Roll up firmly toward unfilled end.
  • Reserve 1 1/2 cups sauce. In ungreased 12x8-inch (2-quart) glass baking dish, pour remaining sauce. Arrange roll-ups, seam side down, in sauce. Pour reserved sauce over roll-ups.
  • Cover tightly with foil; bake 30 to 40 minutes or until hot and bubbly. Sprinkle with mozzarella cheese; bake uncovered 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

16 uncooked lasagna noodles
1 package (8 oz) cream cheese, softened
2 cups shredded sharp Cheddar cheese (8 oz)
1 teaspoon Cajun seasoning
2 eggs, slightly beaten
3 1/2 cups chopped cooked chicken
1 cup finely chopped green onions
2 cups barbecue sauce
2 cups shredded sharp Cheddar cheese (8 oz)
1/4 cup sliced green onion greens
1/4 cup ranch dressing, if desired

Steps:

  • In 5-quart Dutch oven, cook lasagna noodles as directed on package. Drain; rinse with hot water. Drain well.
  • In large bowl, beat cream cheese, 2 cups shredded Cheddar cheese and the Cajun seasoning with electric mixer on medium speed until blended. On low speed, add eggs one at a time, beating after each addition. Stir in chicken and finely chopped green onions. Spread slightly less than 1/3 cup chicken mixture along center of each cooked lasagna noodle to within 1 inch of one short end. Roll up firmly toward unfilled end. Line 15x10x1-inch pan with foil. Place roll-ups seam side down in pan; cover loosely with foil. Freeze about 30 minutes or until firm.
  • Place frozen rolls in two labeled 1-gallon freezer bags. Freeze up to 3 months.
  • To bake 16 lasagna roll-ups, spray two 13x9-inch (3-quart) glass baking dishes with cooking spray. Remove roll-ups from freezer bag; place 8 in each baking dish. Cover with foil; thaw in refrigerator at least 8 hours but no longer than 24 hours.
  • Heat oven to 350°F. Pour 1 cup barbecue sauce over and around roll-ups in each baking dish. Cover tightly with foil; bake 40 to 50 minutes or until hot and bubbly. Remove foil; sprinkle each dish with 1 cup shredded Cheddar cheese. Bake uncovered 3 to 5 minutes longer or until cheese is melted. Sprinkle with green onion greens. Let stand 5 minutes before serving. Drizzle with ranch dressing.
