Forget about deep frying, and give your hush puppies a light update using an air fryer. They're just a bit denser in texture than deep frying, and look for a subtle hint of heat. They're the perfect sidekick to fried fish or shrimp, but they're equally good with a drizzle of honey.

nonfat cooking spray
1 cup yellow cornmeal
¾ cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon cayenne pepper, or more to taste
¼ teaspoon garlic powder
2 tablespoons minced onion
2 tablespoons minced green bell pepper
¾ cup low-fat buttermilk
1 large egg

Steps:

  • Preheat an air fryer to 390 degrees F (198 degrees C) according to manufacturer's instructions. Line the bottom of the air fryer basket with aluminum foil and spray with nonfat cooking spray.
  • Stir cornmeal, flour, baking powder, salt, cayenne, and garlic powder together in a large bowl. Mix in onion and bell pepper.
  • Whisk buttermilk and egg together in a separate bowl. Stir into cornmeal mixture. Let mixture rest for 5 minutes.
  • Drop cornmeal mixture into the foil-lined basket using a 2-tablespoon cookie scoop, making sure not to have them touching each other. Coat with nonfat cooking spray.
  • Cook in the preheated air fryer until golden brown, crispy, and cooked through, 9 to 10 minutes. Serve hot.

3 cups water
1 teaspoon salt
1 cup yellow cornmeal
1 tablespoon butter

Steps:

  • In a medium saucepan, heat water to boiling. Reduce heat to medium; stir in salt and cornmeal. Cook, stirring regularly, until mixture is thick.
  • Spoon cornmeal mixture into a lightly greased 9x5 inch loaf pan. Cover and refrigerate overnight.
  • In the morning, melt butter in a skillet over medium high heat. Slice cornmeal mush into 1 inch wide slices. Cook in melted butter until golden brown on both sides.

What to do with leftover cornmeal mush? Make fried mush, a delicious alternative to pancakes or waffles. Serve with maple syrup for a lightly sweet breakfast treat.

3 cups water
1 cup yellow cornmeal
1 cup milk
1/2 teaspoon salt to taste
3-4 tablespoons butter ((for frying))

Steps:

  • In a large saucepan, bring the water to a boil.
  • In a small bowl, mix together the cornmeal, milk and salt.
  • Slowly pour the cornmeal/milk mixture into the boiling water, stirring constantly.
  • Bring it to a boil again, then reduce heat and stir almost constantly (to avoid clumps) for about 15 minutes or until the mixture is thickened to the consistency you like.
  • Pour this mixture into a lightly greased 9x5 loaf pan and allow it to cool to room temperature.
  • Once the cornmeal has cooled, cover it with plastic wrap and place the pan in the refrigerator overnight or until the mixture has become firm (at least 8 hours).
  • Remove the cornmeal loaf from the pan and slice it into 1/2" to 1" slices. (We usually slice the loaf into 10 slices, then cut those slices in half so they cook more quickly and make smaller pieces.)
  • Heat the butter in a skillet over medium heat.
  • Once the pan is hot, add the slices and fry for 3-4 minutes on each side until they are golden brown and heated through. Watch them closely so they don't burn.
  • Serve immediately with maple syrup or honey if desired.

1 smoked ham hock
4 quarts water
2 teaspoons chicken soup base
3 cups cornmeal
1 ½ teaspoons dried thyme leaves
2 teaspoons rubbed sage
1 teaspoon ground savory
⅛ teaspoon ground allspice
⅛ teaspoon ground nutmeg
⅛ teaspoon ground clove
1 teaspoon ground black pepper
½ teaspoon ground white pepper
1 pinch cayenne pepper
salt and pepper to taste
2 tablespoons butter
1 onion, diced
2 cups shredded sharp Cheddar cheese

Steps:

  • Bring the ham hocks and water to a boil in a large pot over high heat. Reduce heat to meduim-low, cover, and simmer until the pork is very tender, about 2 hours. When done, remove the ham hocks to a plate to cool to room temperature, then shred the meat, discarding the fat, skin, and bones. Strain the cooking liquid and reserve 2 1/2 quarts.
  • Return the 2 1/2 quarts of broth to a boil in a large pot over high heat, and stir in the chicken soup base until dissolved. Place the cornmeal in a bowl, and stir in the thyme, sage, savory, allspice, nutmeg, clove, black pepper, white pepper, cayenne pepper, salt, and pepper. Slowly whisk the cornmeal into the boiling broth, and reduce heat to medium-low. Simmer 15 minutes, stirring frequently.
  • While the cornmeal is cooking, melt the butter in a large skillet over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. After the cornmeal has cooked for 15 minutes, stir in the onion, shredded ham hock, and Cheddar cheese. Cook and stir an additional 15 minutes; the mixture will be thick enough that a spoon will stand up in it. Season to taste, scrapple must be well-seasoned or it will taste very bland when fried. Oil the bottom and sides of three 9x5 inch loaf pans, and pour in the scrapple. Cover the pans with plastic wrap, and refrigerate overnight.
  • To serve the scrapple, remove from the loaf pans and cut into 1/4 to 1/2 inch thick slices. Fry in melted butter in a skillet over medium-high heat until brown and crispy on both sides, about 10 minutes.
