These sandwiches are made with SPAM®, Velveeta®, relish, and mayonnaise. Very simple and easy, but very good.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Stir together the luncheon meat, processed cheese, relish, and salad dressing in a bowl. Spoon the filling into the sandwich buns, and wrap each sandwich individually in aluminum foil. Place the sandwiches onto a baking sheet.
- Bake in the preheated oven until the filling is hot, and the buns have toasted, 10 to 15 minutes.

- Place pineapple slices in a non-stick skillet over low heat; sprinkle with brown sugar. Cook pineapple, shaking the pan every minute, until bottom of pineapple rings turn golden and sugar is caramelized, about 5 minutes; remove slices from pan and set aside.
- Place SPAM® with Bacon slices into the same skillet and pour 1/4 cup of reserved pineapple juice over the SPAM® with Bacon; cook until juice evaporates, about 3 minutes. Flip SPAM® with Bacon; pour remaining pineapple juice in and cook until evaporated, about 3 minutes more.
- Crack eggs into a nonstick skillet over medium-low heat; cook until whites are firm and yolks are done to your liking.
- Toast bagels; spread bagel halves with mashed avocado. Top each bagel half with tomato slices, SPAM® with Bacon slices, an egg, and a pineapple slice; top with just a splash of balsamic vinegar.

WWII SPAM AND EGG SANDWICH
My aunt remembers my grandmother making these for the family during World War II when many food items were rationed. Good at any time of day--breakfast, lunch, dinner, or midnight snack!

- Melt butter in a small skillet over medium-high heat. Saute the onion in butter until soft. Mash up the slice of luncheon meat with a fork, and add it to the skillet. Cook for 2 or 3 minutes, until browned. Pour the egg into the skillet so that it covers all of the meat and onion. Cook until firm, then flip to brown the other side.
- Place the egg and meat onto one slice of the bread and top with cheese and tomato if desired. Place the other piece of bread on top. Bread can also be toasted first.

SPAM SANDWICH

- In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
- Toast bread, either on the grill top or toaster.
- In a pan with butter, cook SPAM until browned, about 5 minutes per side.
- Spread your favorite sandwich spread (mustard or mayo) on your toast; I prefer a nice spicy brown mustard. Add SPAM, grilled onions and pickle slices. Add lettuce and tomato or pickled jalapenos if it floats your boat. Sometimes you can switch it up and use RAW ONION, instead of grilled. Go crazy! It's your SPAM; do what you want.
- Serve with American fries and a cold PBR. YES! AMERICA!
SPAM AND ONION SANDWICHES
Made this for lunch on our packpacking trip. None of the ingredients need refridgerated, so it is easy to take backpacking and camping, etc. I usually horde the little mustard and margarine packets from fast food restaurants if we are hiking in.

- Fry the slices of Spam in a pan over medium heat, until you’ve achieved the desired level of crispness. Two to three minutes per side is usually sufficient.
- Remove Spam slices from pan and let cool on paper towels. Slice the bolillo roll in half and butter the cut sides.
- Place cut sides down in the pan, still on medium heat, and lightly toast. You want it to get a little color, but not be super crisp like toast.
- Remove from heat. Slather some refried beans (either cool or heated) on one side of the roll. Slather some crema on the other half.
