1 beef roast (3-4lbs)
1 envelope onion soup mix (I use Lipton)
1 packet au jus gravy mix
4 cups beef broth
8 sub buns
8 slices provolone cheese

Steps:

  • Season your roast with salt and pepper.
  • Place roast in bottom of slow cooker.
  • In a small bowl, combine the onion soup mix, Au Jus gravy mix, and beef broth.
  • Pour mixture evenly over roast.
  • Place lid on slow cooker and allow to cook on low for 6-8 hours, or high for about 4 hours.
  • Shred meat using two forks.
  • Cut buns in half lengthwise and scoop meat onto bottom slice.
  • Place one piece of provolone cheese on top (I tore the cheese in half and placed the two halves on the bread to cover sandwich better).
  • Turn on your broiler and place sandwiches under broiler for about 2-3 minutes, or until cheese has melted.
  • Place top slice of bread on top to create sandwich.
  • Ladle liquid from slow cooker into small bowls and serve aside sandwiches for dipping.

1 beef rump or bottom round roast (3 pounds)
1-1/2 teaspoons onion powder
1-1/2 teaspoons garlic powder
1/2 teaspoon Creole seasoning
1 carton (26 ounces) beef stock
12 whole wheat hoagie buns, split
6 ounces Havarti cheese, cut into 12 slices

Steps:

  • Cut roast in half. Mix onion powder, garlic powder and Creole seasoning; rub onto beef. Place in a 5-qt. slow cooker; add stock. Cook, covered, on low 8-10 hours or until meat is tender., Remove beef; cool slightly. Skim fat from cooking juices. When cool enough to handle, shred beef with 2 forks and return to slow cooker., Place buns on ungreased baking sheets, cut side up. Using tongs, place beef on bun bottoms. Place cheese on bun tops. Broil 3-4 in. from heat 1-2 minutes or until cheese is melted. Close sandwiches; serve with cooking juices.

4-5 pounds chuck roast
2 tablespoons canola oil
1 teaspoon Kosher salt
1/2 teaspoon coarse ground black pepper
1 cup beef broth
1 tablespoon Worcestershire Sauce
1 can beer (I like a dark beer)
1 yellow onion (diced)
6 hoagie rolls
2 tablespoons butter
12 slices Provolone Cheese

Steps:

  • In a large dutch oven, or if you have an aluminum insert for your slow cooker add the canola oil and heat on high.
  • Add the Kosher salt and pepper to your chuck roast.
  • Brown on both sides aggressively (3-5 minutes on each side).
  • Don't move the beef before flipping (this lets the meat get a deep crust).
  • In a slow cooker add the meat, any meat juices from the pan, beef broth, Worcestershire sauce, beer and onions.
  • Cook on low for 6 hours.
  • Remove the meat and slice thickly.
  • To assemble, butter your hoagie rolls and toast.
  • Top with provolone cheese.
  • In a small bowl add a cup of the liquid from the slow cooker and dip the sandwich in the bowl.

2 Tablespoons olive oil
1 can beef consommé
1 can beef broth
1 onion (sliced)
1 Tablespoon soy sauce
2 Tablespoons Worcestershire Sauce
4-5 hoagie rolls
8 slices mozzarella cheese

Steps:

  • Generously season each side of the roast with salt and pepper. In a large skillet add the olive oil and turn to medium high heat. Sear each side of the roast for 3-4 minutes until it gets a golden brown crust.
  • Place the roast into the slow cooker. Add the beef consommé, beef broth, onion, soy sauce, And Worcestershire sauce.
  • Cook on low heat for 8-10 hours or on high for 5-7 hours. Remove the roast from the slow cooker and shred with a fork and place on hoagies with a slice of cheese. Broil the tops in the oven to melt the cheese and serve.

3 lb beef chuck roast (trimmed of excess fat*)
1 tablespoon vegetable oil
6 French rolls or hoagie buns
12 slices provolone cheese
1/3 cup reduced sodium soy sauce
1 cup Coke (NOT diet)
2 10.5 oz. cans beef consommé **
1/4 cup dried minced onions
1 tablespoon beef bouillon
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
1 bay leaf

Steps:

  • Heat vegetable oil over medium high heat in a cast iron skillet. Using two forks or tongs to hold roast, sear on all sides until lightly browned. Add to slow cooker and top with all remaining Slow Cooker ingredients.
  • Cook on LOW for 4 hours then remove roast to a cutting board. Thinly slice roast across the grain. Place sliced meat back in slow cooker and continue to cook on LOW for 1-2 additional hours.
  • When ready to serve, remove roast and strain fat from broth for dipping.
  • Split rolls and line the bottoms on a baking tray. Top each half with beef followed by 2 slices cheese. Bake at 350 degrees F or until cheese is melted. Serve with reserved au jus.
