The best gluten-free brownie recipe from scratch! These brownies are soft, chewy and perfectly chocolatey. Plus they're easy-to-make! I tested this recipe dozens of times to get it just right so you'll get shiny-topped, fudgy brownies. UPDATE 7/2022! I've adjusted the recipe slightly and these brownies are better than ever. I now recommend making them in a 9x9 pan!

12 tablespoons salted butter (170 grams (1 1/2 sticks))
1/2 cup high quality semi-sweet chocolate chips (100 grams (I use Guittard chocolate chips))
3/4 cup brown sugar (150 grams)
3/4 cup granulated sugar (150 grams)
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
1/2 teaspoon instant coffee grounds ((optional))
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder (50 grams)
3/4 cup gluten-free 1:1 baking flour (125 grams)
1/2 cup chocolate chips ((for mixing in!))

Steps:

  • Preheat the oven to 350F. Grease a 9x9 baking dish with cooking spray and set aside. (I like this light metal pan.)
  • Cut the butter into tablespoon-sized pieces. Add the butter and chocolate chips to a large microwave-safe bowl. Microwave for 30 seconds. Stir well, microwave for another 15 seconds and then stir well again. Repeat for 15 seconds until chocolate and butter are completely melted and well-combined.
  • Add the granulated sugar and brown sugar and stir to combine. Stir in the eggs one at a time, whisking very well after each addition. Whisk in the vanilla extract and salt.
  • Mix in the cocoa powder and gluten-free flour until fully combined. Stir in the chocolate chips.
  • Pour the batter into the prepared baking pan. Smooth into an even layer. Bake for 30-35 minutes until set and a toothpick inserted into the center of the brownies comes out clean.
  • Cool the brownies to room temperature before cutting. Lift from the pan, place on a cutting board, and slice. Enjoy!

For the cream cheese swirl:
8 ounces cream cheese, room temperature
1/4 cup sugar
1 large egg, room temperature
1/4 teaspoon vanilla extract
For the brownies:
6 tablespoons unsalted butter, plus more for pan
1/4 cup cornstarch
1/4 cup unsweetened cocoa powder
1 tablespoon instant coffee or espresso powder
1/2 teaspoon kosher salt
9 ounces semisweet chocolate, coarsely chopped
1 cup sugar
1 teaspoon vanilla extract
3 large eggs, room temperature
Special Equipment
An 8x8x2" baking pan

Steps:

  • Make the cream cheese swirl:
  • Using an electric mixer on high speed, beat cream cheese and sugar in a large bowl until smooth. Add egg and vanilla and beat until smooth.
  • Make the brownies:
  • Preheat oven to 350°F. Butter baking pan and line with 2 overlapping layers of parchment, leaving a 2" overhang on all sides. Butter parchment.
  • Whisk cornstarch, cocoa powder, coffee, and salt in a small bowl.
  • Combine chocolate and 6 Tbsp. butter in a large heatproof bowl set over a pot of barely simmering water, stirring occasionally, until butter and chocolate are melted and smooth. Remove from heat, then stir in sugar and vanilla. Whisk in eggs, one at a time, then whisk in cornstarch mixture until smooth, about 1 minute.
  • Transfer batter to prepared pan. Dollop cream cheese mixture over batter, then swirl into batter with a knife or spatula.
  • Bake brownies until a toothpick inserted into the center comes out with a few moist crumbs attached, about 30 minutes. Transfer pan to a wire rack and let cool completely. Using parchment overhang, transfer brownies to a cutting board. Cut into 4 pieces lengthwise, then 4 pieces crosswise to make 16 bars.

  • Brownies can be made 3 days ahead. Store in an airtight container at room temperature.

½ (12 ounce) bag semisweet chocolate chips
1 teaspoon unsweetened cocoa powder
¼ cup tapioca flour
¼ cup sorghum flour
¼ cup teff flour
⅓ cup unsweetened cocoa powder
1 teaspoon xanthan gum
1 pinch salt
½ cup butter, room temperature
1 cup white sugar
2 eggs, beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking pan.
  • Toss walnuts and chocolate chips with 1 teaspoon cocoa powder in a bowl until well coated; set aside. Mix tapioca flour, sorghum flour, teff flour, 1/3 cup cocoa powder, xanthan gum, and salt together in a separate bowl.
  • Beat butter and sugar together in a separate large bowl until creamy. Stir in eggs and vanilla extract. Gradually add flour mixture to butter mixture until fully incorporated. Fold in nuts and chocolate chips. Spread batter into the prepared baking pan.
  • Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 25 minutes.

These rich, fudgy chocolate brownies are gluten free. Serve with a scoop of vanilla ice cream for dessert, or leave to cool before storing in an airtight container for an afternoon treat

250g unsalted butter, cubed, plus extra for the tin
250g dark chocolate, roughly chopped
4 large eggs
300g golden caster sugar
½ tsp vanilla extract or paste
100g gluten-free plain flour, sieved
60g cocoa powder
½ tsp fine sea salt
150g milk chocolate, roughly cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter a 30 x 20cm non-stick tin with butter and line the base with non-stick baking parchment.
  • Fill a small saucepan a third full with water, bring to a simmer and put a snug-fitting heatproof bowl on top of it. Add the butter and chocolate and gently melt over a low heat, stirring occasionally. Be careful not to let it catch and burn on the bottom. Remove from the heat and leave to cool a little.
  • Beat the eggs and sugar together using an electric whisk for 8-10 mins or until thick enough to leave a trail. Gently fold through the cooled melted chocolate and vanilla, followed by the flour, cocoa and salt. Finally, fold through the chocolate chunks. Pour the brownie batter into the lined tin, place in the centre of the oven and bake for 30-35 mins.
  • Leave to cool a little in the tin before cutting into 12 squares.
