2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

While futzing and fiddling with some extra collards I had languishing in the refrigerator, and thinking of some recent recipes I made, I tried this. Whoa! Yum! So, here it is; there is a sort of a sweet-and-sour thing going on.

1 bunch collard greens, fresh
1 tablespoon oil, mild, of choice
1 large onion
16 ounces canned mandarin oranges
1/4 cup red wine vinegar (or cider vinegar)
salt

Steps:

  • Trim the center ribs from the collards; wash well.
  • Halve, stack, halve again, and cut into approximately 1/2" shreds.
  • Peel, halve, and slice onion thinly.
  • In very large pot, heat oil.
  • Saute onion until caramelized.
  • Add greens with their water; toss and cook until wilted.
  • Strain mandarin oranges, reserving juice.
  • Add orange juice to collards in pot.
  • Lower heat and cover.
  • Cook for 5 to 10 minutes until tender.
  • Add vinegar and season with salt to taste.
  • Cook just a few minutes more.
  • Add mandarin oranges and toss until heated through.

This is my own recipe for collard greens. Once I made them this way my husband won't let me cook them any other way. People who don't typically like greens like these. It is also good with turnips and mustards. I add some of the turnip root if I use turnips.

2 quarts chicken broth
2 bay leaves
1 diced onion
2 smoked ham hocks (or shanks)
4 -6 bunches collard greens (or other greens)
salt & pepper

Steps:

  • Heat broth.
  • Add remaining ingredients.
  • If there is not enough broth to cover greens, add more.
  • Bring to a boil, then reduce heat& simmer for about 3 hours.
  • Remove bay leaves.

I wrote down this recipe from a Chef on television. I made my own slight changes. I have made this dozens of times and we lick the plate! I never liked collards until I discovered this recipe. I hope you enjoy it as much as we do :-)

1/2 lb smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)
1 tablespoon seasoning salt
1 tablespoon hot red pepper sauce
2 bunches collard greens
1 tablespoon butter
white vinegar
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • In a large pot, bring 3-4 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for at least 1 hour.
  • Step 2:.
  • Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don't need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for an hour to two hours.stirring occasionally, I have found the longer you cook it the better it is! When done taste and adjust seasoning.
  • When I eat my collards I enjoy pouring some white vinegar over them with a pinch of salt and pepper.

5 bundles collard greens
4 cups salted water
3 large smoked ham hocks
1 cup sugar
Salt
1 teaspoon crushed red pepper flakes

Steps:

  • Thoroughly wash collard greens. Be sure to pull leaves apart and remove any sand. Chop collard greens.
  • In a medium saucepan, bring 4 cups of salted water to a simmer. Place smoked ham hocks in salted water and cover for about 90 minutes. Cook ham hocks until slightly tender. In the same saucepan, add remaining ingredients and collard greens.
  • Cover and cook greens for 1 to 1 1/2 hours.

How to make the best Southern Collard Greens! Full of flavorful ingredients and easy to make

1/2 cup white distilled vinegar
3 tablespoons salt
2 bunches fresh collard greens ( (see note))
1 tablespoon extra virgin olive oil
½ cup finely diced onions
1 tablespoon minced garlic
½ teaspoon red pepper flakes
4-5 cups chicken broth ((can replace 1 cup with water if desired))
1 fully-cooked smoked turkey leg or wing ((about 13 oz))
1 tablespoon white distilled vinegar
Applewood smoked salt & black pepper, to season

Steps:

  • Prepare the collard greens bath by filling your kitchen sink with cool water and adding vinegar and salt.
  • Remove the collard greens from the steams by folding them in half lengthwise and pulling the leaf away from the stem. (discard the stem or see note below on how to cook them)
  • Place the collard greens into the prepared water bath and swish them around several times, scrubbing them to help loosen up any dirt.
  • Let the collard greens soak for 15-20 minutes, giving them a scrub midway. Drain the water and refill with plain water and allow the greens to soak again if needed. Repeat as many times as needed until the water is free from any dirt or grit. After the final soak, drain the water. Next, rinse and scrub each leaf front and back with cool water to ensure they are squeaky clean.
  • Tear the greens into bite-sized pieces and set them aside.
  • In a large pot, heat olive oil. Add onions and saute until tender.
  • Add garlic and red pepper flakes and cook until garlic is fragrant.
  • Pour in the broth and add the turkey leg. Bring to a boil.
  • Add collard greens and reduce heat to a simmer.
  • Cover and cook collard for 1 hour (or longer depending on your desired tenderness), stirring regularly.
  • Once done, stir and then taste the broth and the greens. (add a little water if the broth is too bold for your liking)
  • Stir in vinegar and smoked salt, and black pepper if desired.
  • Serve collard greens with pieces of the smoked turkey leg and hot sauce if desired.

3 slices bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt

1 pinch red pepper flakes
1 pound fresh collard greens, cut into 2-inch pieces

Steps:

  • Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan. Add onion, and cook until tender, about 5 minutes. Add garlic, and cook until just fragrant. Add collard greens, and fry until they start to wilt.
  • Pour in chicken broth, and season with salt, pepper, and red pepper flakes. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.

3 tablespoons lard or shortening, divided
1 large onion, chopped
6 garlic cloves, minced
1-1/2 pounds smoked ham hocks
6 cups water
2 teaspoons seasoned salt
1 to 3 teaspoons crushed red pepper flakes
1/4 teaspoon sugar
1 large bunch collard greens (about 2 pounds), coarsely chopped
1-1/2 cups white wine

Steps:

  • In a 6-qt. stockpot, heat 1 tablespoon lard over medium heat. Add onion and garlic; cook and stir until tender. Add ham hocks, water, seasoned salt, pepper flakes, and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until meat is tender, 55-60 minutes., Add collard greens, wine, and remaining 1 Tbsp. lard. Return to a boil. Reduce heat; simmer, uncovered, until greens are very tender, 55-60 minutes. Remove meat from bones; finely chop and return to pan. Discard bones. Serve with a slotted spoon.
