Whole fish is great on the grill but can come together quickly in the oven, too. Fresh and bright from lemons and kumquats, gochugaru Korean chile flakes give a bit of smokiness reminiscent of the grill. When you buy whole fish from our Seafood department, it will already be cleaned, but our fishmongers will happily scale it for you, too.

Number Of Ingredients 9

1 (2- to 3-pound) sustainable wild-caught whole red snapper, cleaned and scaled
2 tablespoons extra-virgin olive oil
2 lemons (1 zested and 1 thinly sliced)
1/2 bunch thyme (1 teaspoon chopped and remaining left whole), divided
2 cloves garlic, finely chopped
2 teaspoons gochugaru Korean chile flake
2 teaspoons kosher salt
1/2 cup kumquats (or clementines), thinly sliced
Flaky sea salt, for garnish

Steps:

  • Preheat oven to 450°F. Line a large baking dish or a baking sheet with parchment paper and top with a rack.
  • In a small bowl, mix together olive oil, lemon zest, chopped thyme, garlic, chile flakes and kosher salt.
  • Cut 3 diagonal slashes down to the bone on each side of the fish. Season fish all over, including inside the slashes and cavity, with mixture.
  • Lay on the rack and stuff each slash and cavity with the thyme stems, sliced lemons and kumquats.
  • Cook, without turning, until fish flakes with a fork and flesh is opaque in the center, about 20 minutes.
  • Carve fish into four portions and transfer to plates. Drizzle with juices from the baking dish and garnish with flaky salt before serving.

2½ lbs red snapper (whole (scaled and cleaned))
4 cloves garlic (minced)
2 lemons ((fresh) 1 thinly sliced lemon & 1 for garnish)
4 sprigs fresh dill
1 1/2 tsp kosher salt
1 tsp black pepper (fresh ground)
1/3 cup parsley (fresh, finely chopped )
1/4 cup white wine vinegar
1/4 cup extra virgin olive oil (divided (1 tablespoon for the baking pan))

Steps:

  • Pre-heat the oven to 425 ºF.nLine a baking sheet with aluminum foil and parchment paper. Brush 1 tbs of olive oil on the parchment paper.
  • Pat the fish dry with paper towels. Place the fish on the baking sheet. Sprinkle the salt and pepper evenly on the outside of the fish and inside the cavity.
  • In a small bowl whisk together the vinegar, olive oil, garlic, and parsley. Spoon 1/2 of the oil and vinegar mixture into the fish cavities.
  • Lay the lemon slices and fresh dill sprigs along the inside of the cavities. Pour the remaining oil and vinegar mixture over both fish evenly.
  • Place the fish in the oven and bake for 25-30 minutes or until it reaches an internal temperature of 145°F and flakes easily with a fork. Cooking time can vary according to the size of each fish.
  • Squeezing the remaining lemon juice over the fish ( if desired) and serve.

2 tablespoons grapeseed oil
1 teaspoon Cajun seasoning, or to taste
2 cloves chopped garlic
1 slice orange
1 slice lime
1 slice lemon
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Clean red snapper inside and out under cold running water. Pat dry with paper towels.
  • Brush grapeseed oil all over the inside and outside of the fish, and sprinkle with Cajun seasoning on all sides. Insert garlic cloves, citrus slices, and thyme sprigs into the cavity of the fish. Set on a baking sheet.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes, depending on size of the fish.

ROASTED SARANDEADO-STYLE WHOLE SNAPPER

8 tablespoons (1 stick) cold unsalted butter, cubed, divided
1 1/2 to 2 pounds whole Thai snapper, cleaned, head and tail intact
Salt and freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon tomato bouillon
1 teaspoon bottled hot sauce (recommended: Huichol)
2 limes, halved, plus additional for serving
1 orange
6 (6-inch) corn tortillas

Steps:

  • Preheat the oven to 350 degrees F. Line a large baking sheet with foil and dot with 2 tablespoons butter.
  • Butterfly the fish by cutting almost in half horizontally and opening like a book. Carefully cut and remove the spine. Place the fish, skin-side down, on the foil. Roll up the edges of the foil to come close to the edge of the fish to prevent the juices from spilling onto the baking sheet. Sprinkle the fish with salt and pepper. Sprinkle the fish with the garlic powder and then with the tomato bouillon. Drizzle the fish with the hot sauce and then squeeze the limes over. Cut and squeeze the orange juice all over the fish. Then, using the flesh side of the orange, brush the fish all over to form a wet paste on top of the fish. Dot the fish with the remaining butter.
  • Bake the fish until just cooked through, about 15 minutes. Turn on the broiler and broil until browned, 8 to 10 minutes. Serve with warm tortillas to make tacos and lime wedges for squeezing over the fish.

CRISPY RED SNAPPER "CHINESE STYLE"

1/2 cup soy sauce
1/4 cup fish sauce
1/2 cup plum wine
1 tablespoon sugar
2 garlic cloves, minced
2 jalapeno peppers, seeded and minced
2 tablespoons minced fresh ginger
2 tablespoons crushed and minced lemongrass
1 cup water
2 tablespoons canola oil
2 tablespoons matchstick-thin slices fresh ginger
2 Chinese sausages, 1 to 2 ounces each, sliced into thin rounds (available from Chinese markets; dry chorizo can be substituted)
10 shiitake mushrooms, stems removed, caps thinly sliced
3 plum tomatoes, seeded and finely diced
2 scallions, white part only, sliced into thin rings
1 carrot, peeled and julienned
1 leek, white and light green parts, well washed and julienned
1 slice Thai bird chile (available in Chinese markets; other chili pepper can be substituted)
Vegetable oil, for frying, at least 1 quart
1 whole red snapper, 4 pounds, scaled and gutted (or substitute two (2-pound) snappers and shorten the cooking time)
1/2 cup instant flour (recommended: Wondra)
Fresh pea shoots, for garnish

Steps:

  • Make the sauce: Put the soy sauce, fish sauce, plum wine, sugar, garlic, jalapeno, ginger, lemongrass, and water in a bowl and stir together; set aside.
  • While you make the vegetables, pour enough oil to submerge the snapper into a wide, deep, heavy-bottomed pot. You will need at least a quart, depending on the width of the pot and the thickness of the fish. Heat the pot over medium-high heat to 370 degrees F.
  • Make the vegetables: Heat 2 tablespoons canola oil in a skillet over medium-high heat. Add the sliced ginger and sausage and cook until the sausage begins to give off its fat, about 5 minutes. Add the mushrooms and cook until they begin to give off their liquid, adding more oil if necessary. Add the tomatoes, scallions, carrot, leek, and chile, and cook until just soft, about 2 to 3 minutes. Remove the pan from the heat, cover, and keep the vegetables warm.
  • Fry the fish: Score the snapper 4 times from top to belly, starting about 3 inches behind the head and making the last slash about 2 inches from the tail; take care not to cut into the flesh. When the oil is almost hot enough, dredge the snapper in the flour, shaking off any excess. Skewer the fish from head to tail with a metal skewer, curving the fish as needed. Slowly carefully add the fish to the pot and fry until cooked through and moist at the bone on the head end, approximately 10 to 15 minutes.
  • To serve: Spread some sauce onto a fish platter and place the fish on top; spoon the vegetables over the fish. Present at the table, cutting individual portions there, and garnishing with pea sprouts. Serve the extra sauce on the side.

WHOLE RED SNAPPER BAKED IN SALT

1 (4 pound) red snapper, scaled, gutted, and gills removed
4 or more egg whites
1/2 cup cold water
6 to 7 pounds coarse sea salt or kosher salt

Steps:

  • Preheat oven to 400 degrees.
  • Rinse and dry the fish thoroughly. Whisk together the egg whites and water and combine with the salt in a large mixing bowl. Work the mixture with your hands to distribute the water and egg whites in the salt. The salt mixture should hold together when you press a mound of it together between the palms of your hands. If it doesn't, work in another egg white.
  • Fill a baking dish that is 2 inches longer than the fish about 1/3 full of the salt mixture. Place the fish on top. Cover the fish with the rest of the salt mixture and smooth the salt over with a spatula. Place the fish in the oven for about 40 minutes. The only way to know whether the fish is done is by inserting an instant-read thermometer through the layer of salt and measuring the temperature of the fish. When it reaches 135 degrees F, take it out, and serve immediately.
  • Bring the fish to the table on a baking sheet or on a large platter and crack it with a mallet or even a hammer. Pull back the salt layer, then peel off the skin with a fork. Serve on hot plates.

  • Begin with the yellow tail snapper; take all the bones out inside leaving the head and the tail. Then slit down the center of the fish with a sharp knife. And then inside, put shredded fennel, salt and pepper. Heat the olive oil and sear the snapper. Precook the vegetables. While the fish is searing, add an array of vegetables, the veal glaze and lemon juice. Sear one side, then flip the fish to the other side. Then take the whole pan into a preheated 350 degree oven for about 10 minutes. It should come out nice and brown. Garnish with chives and parsley.
