SEVEN-MINUTE FROSTING



Seven-Minute Frosting image

This traditional frosting is fluffy, white and almost meringue-like in texture. It's easy to make, and takes 7 minutes to cook.

Yield 5 cups

Number Of Ingredients 7

1 1/2 cups sugar
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/3 cup water
2 teaspoons light corn syrup
2 large Land O Lakes® Eggs (whites only)
1 teaspoon vanilla extract

Steps:

  • Combine all ingredients except vanilla in top of double boiler.
  • Place water in bottom pan of double boiler. Cook over high heat 3-4 minutes or until water boils. Place egg white mixture in top of double boiler over rapidly boiling water (water should not touch bottom of pan); beat at highest speed with hand mixer 7 minutes or until mixture forms stiff peaks. (Do not overcook.) Remove from heat; add vanilla.
  • Continue beating 2 minutes or until frosting holds deep swirls.

This recipe is a fond favorite from my chilhood. I don't think that my mother ever used a different frosting on our birthday cakes. The recipe is from my mother's personal hand-made recipe book. The prep and cook times here, I have estimated.

2 egg whites (unbeaten)
1 1/2 cups sugar
5 tablespoons cold water
1 1/2 teaspoons cornstarch
1 teaspoon vanilla

Steps:

  • Combine all ingredients except vanilla in upper part of a double boiler, beating constantly with an egg beater until frosting stands in peaks.
  • Remove from heat.
  • Add vanilla.
  • Beat until frosting will spread easily on a 2 layer 8 inch cake.

3/4 cup sugar
1/2 teaspoon cream of tartar
1 pinch salt
2 egg whites
1/4 cup cold water
2 teaspoons vanilla extract

Steps:

  • Combine the sugar, cream of tartar, salt, egg whites, and water in a large mixing bowl or double boiler of at least a 2-quart capacity.
  • Set over simmering, not boiling, water over moderate heat.
  • Beat with a hand electric mixer at high speed for about 5 to 7 minutes, until the frosting stands in definite peaks when the beater is lifted.
  • Remove from the water and continue beating for several minutes, until the frosting has cooled and no longer feels hot to your finger, and stands in soft, smooth, billowy peaks.
  • Beat in the vanilla.
  • You will have enough to generously fill and frost an 8 or 9 inch two-layer cake or a 9 or 10 inch tube cake.

1 1/2 cups plus 2 tablespoons sugar
2/3 cup water
2 tablespoons light corn syrup
6 large egg whites

Steps:

  • Mix 1 1/2 cups sugar, the water, and corn syrup in a small saucepan over medium heat. Cook, stirring occasionally, until sugar dissolves. Bring to a boil, and cook until mixture registers 230 degrees on a candy thermometer.
  • Meanwhile, whisk whites with a mixer on medium speed until soft peaks form. With mixer running, add remaining sugar. With mixer on medium-low, pour sugar syrup in a slow, steady stream down side of bowl. Increase speed to medium-high, and whisk until stiff peaks form and mixture is cool, about 7 minutes. Use immediately.
