DREAMY ORANGE CUPCAKES
These cupcakes blend two of my favorite flavors: orange and vanilla! Reminiscent of a childhood ice cream pop treat, these cupcakes will make you feel like a kid again!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
- Beat together the orange cake mix, creamy salad dressing, whipped topping mix, 3/4 cup orange juice, eggs, and 2 tablespoons orange zest in a large bowl with an electric mixer on low speed until mixture is moist, about 1 minute. Scrape down the sides of the bowl with a spatula, then increase speed to medium and continue beating until well blended, about 2 minutes more. Fill the prepared cupcake cups about 2/3 full of batter.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, about 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack before frosting.
- To make cream topping: Beat the marshmallow creme, 1/2 cup unsalted butter, and 1/2 cup shortening in a bowl with an electric mixer until smooth and creamy. Top each cooled cupcake with a 1/2-inch thick layer of the cream topping, using a knife to spread the the topping flat. Allow about 1/2 inch of the orange cupcake to show below the white layer.
- To make orange butter cream: Beat 1/2 cup unsalted butter and 1/2 cup shortening together in a bowl until light and fluffy. Mix in 1/4 cup orange juice, zest of 1 orange, vanilla extract, and food coloring until well combined. Gradually beat in the confectioners' sugar until smooth.
- Transfer the frosting to a piping bag fitted with a large star tip, and pipe a decorative layer of orange butter cream, ending in a peak, over the cream topping on the cupcakes.

ORANGE DREAM CAKE
A fluffy cloud of pudding, whipped topping and oranges makes a melt-in-your-mouth topper for a homemade orange cake.

- In medium bowl, beat pudding mix and 1 cup milk with wire whisk or electric mixer on low speed about 2 minutes or until well blended. Fold in whipped topping. Reserve about 8 orange segments for garnish; stir remaining orange segments into pudding mixture. Cover; refrigerate 1 hour.
- Meanwhile, heat oven to 350°F. Grease bottom and side of 9-inch round cake pan with shortening or cooking spray; lightly flour.
- In medium bowl, beat cake ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Stir in grated baking bars. Pour into pan.
- Bake about 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour.
- Place cake on serving plate. Spoon topping onto cake. Garnish with reserved orange segments, the almonds and chocolate curls. Store covered in refrigerator.

- To prepare cake, cream butter and sugar.
- Add eggs on at a time and beat well.
- Add sifted flour, salt and baking soda alternating with sour cream.
- Add vanilla, almond extract, and cinnamon.
- Place in greased and floured pan.
- Bake at 325°F for at least 1 hour or until done.
- To prepare topping, bring all wet ingredients and mixed berries to a simmer.
- When bubbles start to form, turn down heat.
- Gradually add cornstarch while stirring until cornstarch is completely dissolved.

BERRY-ORANGE DREAMY
This is your basic smoothie recipe, jazzed a little with the addition of a whole orange instead of merely juice. The almonds are delicious but you can omit them if desired. Chilling time is essential if you want a real ice cream-like thicky.

- Break or cut the banana into smaller chunks. Put it with the berries and orange into the FOOD PROCESSOR. Smoothies take forever in a blender!
- Blend for 1-2 minutes, till very creamy. Add the milk, more or less if you want, and blend until well combined.
- Pour into a big mug, scraping down the food processor with one of those great silicon spatulas :-) Transfer to the freezer for 15-30 minutes. Or, if you like your smoothies a bit meltier, eat now! It's already very thick.
- Before eating, sprinkle with almond slivers or slices. This is a flavorsome, crunchy touch that to me really makes this special. Enjoy!
