BLUEBERRY GALETTE
i love this because i can use a prepared pie crust and it's quick to throw together. berries are my favorite part of summer.

Steps:
- preheat oven to 425.
- line a baking sheet with foil and spray with non stick spray.
- in a large bowl stir together blueberries, cornstarch, lemon zest and juice, 1/2 c sugar, cinammon and salt until combined.
- unwrap the pie dough and unfold onto a baking sheet.
- spoon the berry mixture into the center of the dough, leaving a 1 inch border.
- fold the edge of dough over the berries, pleating.
- dot butter over top of blueberries, brush the pastry with beaten egg.
- sprinkle pastry edge with remaining sugar.
- bake for 25-30 minutes until bubbling.
- garnish with grated zest, if desired.

- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Combine apples, sugar, cornstarch, cinnamon, and vanilla extract together in a bowl. Place pie crust on the prepared baking sheet. Spoon apple mixture into the center of crust, leaving a 2-inch border. Fold crust over the edges of the apple mixture.
- Bake in the preheated oven until apples are tender and crust is golden, about 30 minutes.

BERRY GALETTE WITH REFRIGERATED PIE CRUST
This is a modified Diane Morrisey recipe. The quickest way to homemade pie taste. I can have this in the oven in the time it takes for the oven to pre-heat if I use raspberries, blueberries and/or blackberries..

Steps:
- Preheat oven to 400 or 375 convection.
- In bowl, combine berries, zest, juice, sugar and flour. Let sit about 10 minutes or until the berries macerate and absorb flour and sugar.
- Line baking sheet with parchment. Put crust onto parchment. Using slotted spoon, add the berries to the center of crust, leaving 2 inch border. Fold the edges up and over the berries.
- Make egg wash by mixing egg with water. Brush dough edges with egg wash. Sprinkle with turbinado sugar.
- Bake for about 25-30 minutes or until berries are bubbling and crust is golden.
- Chill until juice is set before cutting .

- Place the berries into a large mixing bowl. Then in a smaller bowl use a whisk or a fork to combine together t tablespoons of the sugar with the cornstarch and lemon zest. Gently toss the ingredients from the small bowl with the fruit in the large bowl.
- Unroll the pie crusts on to a lightly floured cutting board or work surface. Then use a four inch cookie cutter to cut out the circles. Place the cut out circles on to the lined cookie sheet.
- Use a tablespoon to fill the center of each cut out circle with the berry mixture from the large bowl. Be sure to leave a half inch from the edges of each circle free of added ingredients.

- In a large bowl, mix together the berries, sugar, cornstarch, and lemon juice. Cover and set aside for 10-15 minutes.
- Preheat oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone mat. Roll pie crust into a large circle, gently press together any tears or cracks, and place on the parchment.
- Use a slotted spoon to transfer the berries onto the pie crust. Leave all of the juices behind in the bowl, and leave a 2-3 inch border around the berries.
- Gently fold the border up and over the fruit, overlapping the edges every few inches into a sort of pleat. Gently press the seams to seal.
